1/2 cup oatmeal
1/2 cup whole wheat flour
1 cup water (boiling)
1 tablespoon honey
Optional: 1 tablespoon molasses
1 tablespoon oil
1 teaspoon salt
1/4 cup water (warm, about 110 F)
2 teaspoons yeast
Pinch of sugar
1 1/2 to 2 cups all-purpose flour or bread flour
Optional: oatmeal for sprinkling on top

Steps:

  • Gather the ingredients.
  • Mix the oats and whole wheat flour in a bowl.
  • Add the boiling water and stir.
  • Stir in the honey, molasses, if using, oil, and salt and let cool, about 1/2 hour.
  • In a small bowl, mix the warm water with the yeast and a pinch of sugar, stirring to dissolve yeast. Place in a warm spot for about 10 minutes until foam forms on the top of the mixture.
  • Add the yeast to the oat mixture and mix well.
  • Start adding the all-purpose flour 1/2 cup at a time until a firm dough forms.
  • Turn out on a lightly floured board and knead 4 to 5 minutes, until the dough is elastic and somewhat smooth.
  • Form the dough into a ball and place in a clean, oiled bowl, turning once to coat.
  • Cover the bowl with plastic wrap and place in a warm spot (70 to 85 F) until doubled in bulk, about 1 hour.
  • Shape the bread into a sandwich loaf and place it in the pan.
  • Spray the top of the loaf with water and sprinkle oatmeal or other desired topping on the bread.
  • Cover with a towel and let rise until almost double. (If steaming your bread, skip to the steaming instructions.)
  • Meanwhile, heat your oven to 450 F for 1/2 hour; if using a baking stone, heat for 1 hour.
  • Slash the top of the loaf with a sharp razor blade.
  • Place the loaf pan in the oven and turn down to 400 F. Bake for 30 to 40 minutes, or until the bread's internal temperature reaches 190 F.
  • Let the bread cool for about 1 hour or so before serving.
  • Place an old roasting pan on the rack below the baking stone (if using) or the rack below where the loaf pan will go. After you put the bread in the oven, fill the roasting pan with 2 cups of boiling water.
  • Using a squirt bottle, spray water on the sides of the oven two or three times within the first 5 minutes of baking.
  • Turn the oven down to 400 F and bake for 30 minutes or more, until the internal temperature of the bread reaches 190 F.
  • Bread steams itself dry, so let the loaf cool for at least 2 hours before slicing or it may seem gummy inside.

2 cups buttermilk
3 tablespoons dark molasses
3 cups whole wheat flour
1 cup all-purpose flour, plus extra for dusting
1 ½ teaspoons salt
1 ½ teaspoons baking soda
1 teaspoon cream of tartar

Steps:

  • Mix rolled oats, buttermilk, and molasses in a large bowl until thoroughly combined.
  • Whisk together whole wheat flour, all-purpose flour, salt, baking soda, and cream of tartar until combined; pour flour mixture into buttermilk mixture and stir just until moistened.
  • Turn dough out onto a lightly-floured work surface and knead 3 or 4 times until dough holds its shape.
  • Cut dough in half; pat each half into a 6-inch round loaf.
  • Use a sharp knife to deeply score each loaf in quarters, cutting 1-inch deep.
  • Wrap each loaf in plastic wrap and allow to stand at least 12 hours at room temperature to ferment. (Loaves can be refrigerated up to 2 more days after this, if desired.)

2 tablespoons active dry yeast (from 3 packages)

1/2 stick (1/4 cup) unsalted butter, melted and cooled, plus additional for buttering pans
3 cups stone-ground whole-wheat flour
About 2 cups unbleached all-purpose flour
1 tablespoon salt

Steps:

  • Heat milk in a 1 1/2- to 2-quart saucepan over low heat until hot but not boiling, then remove pan from heat and stir in oats. Let stand, uncovered, stirring occasionally, until cooled to warm.
  • Stir together water, yeast, and 1 teaspoon honey in a small bowl; let stand until foamy, 5 minutes. (If mixture doesn't foam, discard and start over with new yeast.) Stir yeast mixture, melted butter, and remaining honey into cooled oatmeal.
  • Stir together whole-wheat flour, 1 1/2 cups unbleached flour, and salt in a large bowl. Add oat mixture, stirring with a wooden spoon until a soft dough forms. Turn out onto a well-floured surface and knead with floured hands, adding just enough of remaining unbleached flour to keep from sticking, until dough is smooth, soft, and elastic, about 10 minutes (dough will be slightly sticky). Form dough into a ball and transfer to an oiled large bowl, turning to coat. Cover bowl loosely with plastic wrap and a kitchen towel; let rise at warm room temperature until doubled in bulk, 1 to 1 1/2 hours.
  • Lightly butter loaf pans. Turn out dough onto a lightly floured surface and knead several times to remove air. Divide dough in half and shape each half into a loaf, then place 1 loaf in each buttered pan, seam side down, tucking ends gently to fit. Cover loaf pans loosely with a kitchen towel and let dough rise in a draft-free place at warm room temperature until doubled in bulk, about 1 hour.
  • Put oven rack in middle position and preheat oven to 375°F. Lightly brush tops of loaves with some of egg wash and sprinkle with oats, then bake until bread is golden and loaves sound hollow when tapped on bottom, 35 to 40 minutes. (Remove 1 loaf from pan to test for doneness. Run a knife around edge of pan to loosen.)
  • Remove bread from pans and transfer to a rack to cool completely, about 1 1/2 hours.

NATURALLY LEAVENED RYE AND OAT BREAD

With a smooth texture and earthy-fruity flavors, this bread is fantastic for simple toast or for smørrebrød: small open-faced sandwiches that are topped with smoked fish, cheese, vegetables, or in this photo: cream cheese, salmon roe, and tarragon.

360g home-milled rye berries or whole grain rye flour (2 ¾ cups flour)
100g home-milled oat groats or oat flour (1 heaping cup flour)
200g ripe sourdough starter (2/3 cup)
300g water (1 ¼ cups)
90g plain yogurt (⅓ cup)
22g honey (1 Tbsp)
10g salt (1 ¾ tsp)

Steps:

  • Starter/Levain
  • I made 200g of almost all-rye sourdough starter by feeding 40g starter with 80g water and 80g whole grain rye flour, and I used it when it was a little more than doubled in size. Other ways of building up this large amount of ripe starter are fine too.
  • Mixing and Bulk Fermentation
  • Combine all the ingredients in a large bowl and mix well. If possible, scrape the batter into a straight-walled dough bucket or separate out a tiny amount of dough to put in an aliquot jar to help track fermentation (explanation above, photo in the gallery below).
  • Cover and let the batter rise until it has expanded by about 75%. In my ~80°F lit oven, this was about five hours.
  • Shaping and Final Proof
  • Grease a non-stick loaf pan or line a regular loaf pan with parchment paper. I used a medium USA pan, which is 9 x 5 x 2.75 inches.
  • Scrape the batter out of your bowl or bucket directly into the loaf pan.
  • Repeatedly wet a spatula with water to smooth out the surface of the batter, dipping between the edges of the batter and the pan to create the curved edges of a loaf shape.
  • Sprinkle with rye flour if desired, cover, and let the batter rise about 2 centimeters. (See the gallery below for a sense of the expansion.)
  • Baking
  • Preheat your oven to 450°F for about 20 minutes with a pan on the bottom shelf. You'll pour boiling water into the hot pan when you load the bread into the oven. An alternate option for steam is to make a tight foil tent around the loaf pan and leave it on for the first 15-20 minutes of the bake.
  • Boil a cup of water.
  • Place the loaf pan in the oven and pour the boiled water on the hot pan below it, then quickly close the oven door.
  • Bake for 20 minutes, then lower the oven temperature to 390°F, and bake another 25-30 minutes. Rotate the pan if needed for even browning. The internal temperature of the bread should be over 208°F when it's done.
  • If possible, wait 24 hours before cutting the bread to let the inside set. You might want to rotate the loaf onto one long side and then the other during this setting period, so it doesn't get dense at the base. If you can't wait for the loaf to set, toast each slice to solidify the crumb.

70 grams (1/2 cup plus 1 tablespoon) whole wheat pastry flour

1 gram (1/4 teaspoon) freshly ground pepper
150 grams (1/2 cup plus 1 tablespoon) milk
110 grams (2 extra large) egg
1/2 cup fresh herbs, such as parsley leaves, sage, marjoram, thyme, dill, chopped (1/3 cup chopped)
50 grams (3 tablespoons) grated onion
4 tablespoons extra virgin olive oil

Steps:

  • Preheat the oven to 400 degrees.
  • Place the oats in the bowl of a stand mixer or into the bowl of a food processor fitted with the steel blade. Sift together the flour, baking powder, salt, and ground pepper and add to the oats. Add the remaining ingredients except 2 tablespoons of the olive oil and mix at medium speed or pulse together until well blended. Scrape down the sides of the bowl and the beater and mix again for about 30 seconds.
  • Add 2 tablespoons of the oil to a 9-inch cast iron skillet and place in the oven for 5 minutes. Remove from the oven and spread the batter in the pan.
  • Place in the oven and bake 30 minutes, until the top is nicely browned and a tester comes out clean when inserted in the middle. Remove from the heat and serve hot, or allow to cool on a rack.
