TOMATO-CAPER SAUCE

Move over, jarred pasta sauce. In only 10 minutes, this combo of canned tomatoes, red wine, herbs, and capers simmers to a rich-bodied sauce for all kinds of culinary uses.

1 cup chopped onion
4 cloves garlic, minced
2 tablespoon olive oil
2 28 ounce cans or four 14.5-ounce cans diced tomatoes with Italian herbs, undrained
0.333 cup dry red wine, dry vermouth, or reduced-sodium chicken broth
0.25 - 0.5 teaspoon crushed red pepper
0.333 cup chopped fresh basil or flat-leaf parsley
0.25 cup capers, drained
0.25 cup finely chopped oil-packed dried tomatoes (optional)

Steps:

  • In an extra-large skillet cook onion and garlic in 2 tablespoons hot olive oil over medium 4 to 5 minutes or until tender. Add tomatoes, wine, and crushed red pepper. Bring to boiling; reduce heat. Simmer, uncovered, 10 minutes, stirring occasionally. Stir in basil, capers, and, if desired, dried tomatoes. Let cool 1 hour.
  • Divide sauce into three 2-cup freezer containers (or 1-quart resealable freezer bags). Cover; freeze up to 6 months. Use sauce portion(s) in Sicilian Cod with Tomato-Caper Sauce and/or Tortellini & Smoked Sausage in Tomato-Caper Sauce. Makes three 2-cup portions.

If you're looking for extreme flavor then this is one you will have to try! --- spread on toasts and use as a quick d'oeuvre or use as a condiment --- plan ahead this needs to be refrigerated for a minimum of 4 hours before serving the flavors intensify with chilling --- this makes about 1-1/2 cups if you want to double the recipe make in two separate batches and keep in two glass containers don't store the two batches together as the flavors tend to become too overpowering.

1 cup pimento stuffed olive, rinsed well
2/3 cup pitted kalamata olive, rinsed well
3 tablespoons bottled capers, drained and rinsed well
1 1/2 tablespoons olive oil
1 large clove garlic clove, minced
1 teaspoon red wine vinegar or 1 teaspoon fresh lemon juice
1/8 teaspoon dried oregano or 1/8 teaspoon thyme, crumbled
1/8 teaspoon hot red pepper flakes (can use more for extra heat)

Steps:

  • In a food processor, pulse all ingredients with on/off turns until coarsely chopped.
  • Cover and refrigerate for 4 hours before serving.

4 teaspoons olive oil, divided
4 (5-ounce) sea bass fillets (or other white fish)
1 small onion, diced
1/2 cup white wine
1 cup canned low-sodium diced tomatoes, with juice
1/2 cup chopped pitted black olives
2 tablespoons capers
1/4 teaspoon dried crushed red pepper, optional
2 cups packed fresh baby spinach leaves
Salt and pepper

Steps:

  • In a large nonstick skillet, heat 2 teaspoons of oil over a medium-high heat. Add fish and cook until opaque in the center, about 2 1/2 minutes per side. Transfer the fish to a platter and tent with foil to keep the fish warm.
  • Heat the remaining 2 teaspoons of oil in the same skillet; add onion and saute for 2 minutes. Add the wine and cook until reduced by half, about 2 minutes. Add the tomatoes, olives and capers and crushed red pepper, if using, and cook for 3 minutes more. Stir in the spinach and cook until it is wilted, about 3 minutes. Season with salt and pepper. Spoon the sauce over the fish and serve.

2 lemons
1 tablespoon minced shallots
2 tablespoons white-wine vinegar
1 teaspoon honey
1/2 cup mixed olives, pitted and chopped
1 teaspoon capers, chopped
1 tablespoon chopped chives
1 tablespoon chopped flat-leaf parsley
Coarse salt and freshly ground pepper

Steps:

  • Slice the top and bottom of both lemons with a paring knife. Set one of the flat sides on your work surface. From top to bottom, following the curve of the fruit, cut away peel and white pith. Trim off any remaining pith. Holding the lemon over a bowl, cut along both sides of each segment, staying close to the membrane, to release.
  • Whisk together shallots, vinegar, and honey in a medium bowl. Coarsely chop lemon segments and add to the bowl with the shallot mixture, along with any lemon juice that has accumulated in the bowl. Stir in olives, capers, chives, and parsley; season with salt and pepper.
