2 whole wheat English muffins, split
2 teaspoons Dijon mustard
4 slices deli ham
1/2 medium apple, thinly sliced
2 slices reduced-fat Swiss cheese, halved

Steps:

  • Place English muffin halves cut side up on a baking sheet. Broil 4-6 in. from the heat for 2-3 minutes or until golden brown., Spread with mustard. Top with ham, apple slices and cheese. Broil 3-4 minutes longer or until cheese is melted.

This is another one of my little sandwich favorites. I haven't made it for a long time and its making me hungry!

1 baguette, split in half lengthwise with some of the bread removed
1/4 cup blackberry preserves
1 lb black forest ham, sliced thinly
1/2 lb brie cheese, rind removed and cut into strips
salt
pepper

Steps:

  • Spread Blackberry Preserves in each of the bread pieces. Layer ham and Brie on top. Season lightly with some salt and pepper.
  • Broil for about 4-5 minutes until cheese is melted.
  • Cut into pieces and serve.

4 thick country rolls, cut in half length wise or 4 hoagie rolls
6 tablespoons apple butter
4 tablespoons Dijon mustard
1 lb deli thin honey-roasted ham
8 slices havarti cheese or 8 slices cheese, of choice
1 bunch fresh chives, chopped

Steps:

  • Spread apple butter and mustard on each roll.
  • Top with ham.
  • Top with cheese.
  • Broil until cheese melts and begins to brown a little.
  • Sprinkle with chives and serve.

3 ciabatta rolls, halved horizontally, or 6 1/2-inch-thick slices country-style bread
2 tablespoons olive oil
6 tablespoons apple butter
4 tablespoons Dijon mustard
1 1/4 pounds Black Forest ham, thinly sliced
12 ounces extra-sharp white cheddar cheese, sliced
1 bunch fresh chives, chopped

Steps:

  • Brush cut side of ciabatta rolls with oil. Place rolls, cut side up, on baking sheet. Broil until rolls begin to brown around edges, about 2 minutes. Spread apple butter and mustard on each roll half. Top with ham, then cheese. Broil until cheese melts and begins to brown in spots, about 2 minutes. Sprinkle with chives and serve.

8 ounces ham
6 units sweet gherkins pickles
0.25 cups mayonnaise
0.5 teaspoons garlic powder
23 tablespoons pickle juice
4 slices rye bread
1 teaspoons paprika
4 slices swiss cheese

Steps:

  • Preheat your broiler. In a food processor pulse the ham cubes 5 times. Then add the pickles and pulse until they are the consistency of coarse meal (about 5 more times).
  • In a medium sized bowl combine the ham/pickle mixture, mayonnaise, garlic powder, and pickle juice.
  • Place bread slices on a baking sheet. Divide the ham mixture equally between the four slices of bread. Place a slice of Swiss cheese on each slice of bread and sprinkle with paprika if desired.
  • Broil on the top rack for 5 minutes (checking after 3 minutes) or until cheese is melted and bubbling. Serve immediately.
