1 portobello mushroom
Salt and pepper
1 cup of olive oil
2 tomatoes, peeled, seeled and raosted
4 baby artichokes
1 whole lemon, cut in half
1/4 cup seasoned rice wine vinegar
1 sheet of herb pasta
1 small bunch of basil

Steps:

  • Preheat oven to 400 degrees.
  • In a bowl, season portobello mushroom with salt and pepper, and 2 tablespoons of olive oil. Place it on a baking sheet and roast for 10 to 15 minutes or until tender. In the same bowl, repeat the same process with the tomatoes. Clean and peel the baby artichokes. Place the peeled artichokes in a bowl of ice water, juice from a lemon, and the lemon itself. Roast the artichokes the same way you did the mushroom and tomatoes. To make the vinaigrette, take half of the roasted tomatoes and place them in a blender with the rice wine vinegar, 1/2 cup olive oil, and salt and pepper. Blend until smooth. In a saucepan, boil 2 quarts of water. Season the water with 1/4 cup olive oil, salt and pepper. Place pasta sheet in the boiling water for 30 seconds to a minute, until tender or al dente. Remove the pasta and lay it on a platter, garnish with fresh basil and additional roasted vegetables. Serve with vinaigrette.

  • Put a strainer over a large bowl and line it with 2 layers of cheesecloth (don't let the strainer touch the bottom of the bowl). Spoon yogurt into strainer and let stand for 1 hour.
  • Mix yogurt, the 2 pressed cloves of garlic and lemon juice in a small bowl. Set aside.
  • Put the lamb pieces into a skillet or pan on medium to high heat on stove top, add coriander cumin and chopped garlic.
  • Keep on heat until lamb is fully cooked, stirring often. Dispense onto serving dish.
  • Cut open pita pockets, spoon the lamb into each pita. Add the yogurt and/or chutney and enjoy!

1 cup plain full-fat or low-fat yogurt
2 tablespoons fresh lemon juice
2 tablespoons finely chopped herbs, such as mint, dill or cilantro, plus herb sprigs, for serving
Kosher salt
Patties and pita:
1 1/2 pounds ground lamb or beef
1 tablespoon minced garlic (about 1 large clove)
1 tablespoon coriander
2 teaspoons ground cumin
1 1/2 teaspoons hot paprika
11/2 teaspoons kosher salt
1 1/2 tablespoons extra-virgin olive oil
4 to 6 pita bread rounds

Steps:

  • For the sauce:
  • In a small bow, whisk the yogurt with the lemon juice. Stir in the chopped herbs, season with salt and refrigerate until ready to use.
  • For the patties and pita:
  • In a bowl, use your hands to mix together all of the ingredients, except for the pita. Form the mixture into twelve 3-inch oval patties (about 1 inch thick). Arrange the patties on a plate and refrigerate for at least 30 minutes, until firm
  • Preheat a grill for at least 10 minutes and prepare it for grilling over moderately high heat. If you are using a charcoal grill, leave one area where you can grill the pita indirectly.
  • Oil the grill grates and grill the patties until dark brown grill marks form on the bottom, 5 to 6 minutes. Flip the patties and grill for 4 to 6 minutes longer, until just cooked through.
  • Meanwhile, wrap the pita in foil and set the package on the top shelf of a gas grill or in the cooler spot of a charcoal grill and allow them to warm through, 8 to 10 minutes.
  • Wrap 2 or 3 patties in each pita, spoon some of the yogurt sauce alongside and serve with herb sprigs, passing the remaining yogurt sauce at the table.

1 large onion, chopped
1 garlic clove, minced
1/3 cup tomato paste
1/2 cup dry red wine

1/2 teaspoon dried basil
1 medium cucumber
1 cup plain yogurt
16 pita pocket halves, warmed
4 plum tomatoes, sliced

  • In a large skillet, heat oil over medium-high heat; brown lamb in batches. Transfer lamb to a 3- or 4-qt. slow cooker, reserving drippings in skillet., In drippings, saute onion over medium heat until tender, 4-6 minutes. Add garlic and tomato paste; cook and stir 2 minutes. Stir in wine, 1 teaspoon salt, oregano and basil. Add to lamb. I love Greek style roasted meat, and I think lamb is the perfect roasting meat. I combined the two styles and came up with this recipe. It's juicy, flavorful, succulent, and unlike anything I've seen anywhere else. It goes especially good with a savory risotto and a dry red wine.

4 lbs boneless leg of lamb
1/4 cup good quality extra virgin olive oil
1/2 cup cavender all purpose Greek seasoning
6 sprigs fresh rosemary
1 cup crumbled feta cheese, prefereby mixed with garlic and herbs
3 garlic cloves, minced
lemon juice

Steps:

  • Open leg of lamb to expose the"boned" side.
  • Dry leg with paper towel.
  • Brush entire leg with olive oil.
  • Rub Cavender's® into entire surface of leg.
  • Rub garlic into the exposed surface of the boneless leg.
  • Strip rosemary sprigs and spread leaves along exposed surface of boneless leg.
  • Layer exposed half with feta cheese.
  • Pat cheese into surface of the leg.
  • Sprinkle with lemon juice.
  • Roll leg like a jelly roll and tie with cooking string.
  • Sprinkle any remaining Cavender's over the leg.
  • Put on a rotisserie and cook until meat reaches 135 degrees, or about 75 minutes. (Or roast at 350 degrees until temp is 135 and let rest 15 minutes.).
  • Let rest for 15 minutes.
  • Serve with whatever you like. A nice risotto works well, as well as fresh steamed veggies.
  • Juices make a wonderful gravy.

1 cup torn lettuce leaf
1/2 cup diced tomato
