1/4 cup red wine vinegar
1 shallot, minced
Salt and freshly ground black pepper
12 large oysters, shucked

Steps:

  • Stir together the vinegar, shallots and 1/4 teaspoon salt and pepper in a small bowl. Let sit for at least 10 minutes to let the flavors combine. Drizzle the sauce over the oysters.

Not named after MingTsai, but in Hong Kong there is a Jerry Tsai, who is reputed to be the "Rockefeller" of Asia. Unfortunately, no relation to Ming.

1 dozen fresh shucked oysters
1 cup spinach leaves
1 cup basil or Thai basil
2 serrano chilies
1 tablespoon chopped garlic
1 tablespoon fish sauce
1 tablespoon lime juice
1/4 cup heavy cream
Salt and black pepper to taste
Japanese bread crumbs called 'panko'
Canola oil to cook

Steps:

  • In a hot pan, saute garlic and chili until caramelized. Deglaze with fish sauce and lime juice. Add spinach and basil and cook until soft. Check for seasoning. Squeeze out excess water and while still hot, puree mixture in food processor and add cream. Top each oyster with the puree and sprinkle with bread crumbs. In an oven set to broil, color oysters brown and serve immediately.

This is concoction was developed by my buddy and I during a block party. We had people standing in line. Be sure to use leather gloves when shucking hot oysters. Sounds like a pain, but well worth the work.

1 cup butter, softened
2 tablespoons chopped fresh cilantro
3 tablespoons minced garlic
2 tablespoons minced shallot
2 tablespoons lime juice
3 tablespoons chile-garlic sauce (such as Sriracha®)
12 fresh oysters in shells
2 tablespoons lime juice

Steps:

  • In a medium bowl, stir together the butter, cilantro, garlic, shallot, 2 tablespoons of lime juice, and sriracha sauce. Spoon onto waxed paper and roll into a log. Place into the freezer until set.
  • Preheat a grill for high heat.
  • Place whole oysters on the hot grill for 3 to 5 minutes, or until almost done. Remove the top shell from the oysters, without spilling any liqueur, and return them to the grill. Slice the butter log into 1/4 inch slices, and place a slice on top of each oyster. Grill until the butter melts, then serve on a bed of rock salt for presentation.

1/4 cup rice vinegar
1 1/2 teaspoons minced peeled fresh ginger
1 green onion (green part only), thinly sliced
1/2 teaspoon grated lemon peel
12 fresh oysters

Steps:

  • Combine first 4 ingredients in small bowl. Let stand 15 minutes.
  • To open oysters: Using towel, hold oyster flat on work surface, flat shell up. Insert tip of oyster knife into hinge and twist to open shell. Slide knife along inside of upper shell to free oyster from shell; discard upper shell. Slide knife under oyster to free from lower shell; leave in shell. Repeat with remaining oysters. Arrange oysters on edge of two plates. Divide sauce between 2 small bowls. Place one bowl in the center of each plate and serve.

1/2 cup chopped cabbage
4 oysters, out of shell
1 tablespoon chopped onion
1 egg
3/4 cup flour
1/2 cup milk

Steps:

  • Mix all ingredients together, then turn onto the greased grill in one heap.
  • Flatten it a little. Fry like an omelet or a pancake, turning several times to brown well on both sides.
  • Serve with sprinkled with Japanese dark red pepper, soy and worchestershire sauces.
  • Cut in half to serve.
