3 tablespoons unsalted butter, divided
1 tablespoon olive oil
4 skinless, boneless chicken breast halves - pounded thin
salt and pepper to taste
2 shallots, chopped
1 clove garlic, minced
⅓ cup dry white wine
½ cup chicken broth

Steps:

  • Melt 1 tablespoon butter and heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, and brown on both sides in the skillet. Cover, and continue cooking 10 minutes, or until chicken juices run clear. Set aside, and keep warm.
  • Mix shallots and garlic into skillet over medium heat, and cook until tender. Stir in wine, and cook until heated through. Stir in broth, and continue cooking 5 minutes, or until reduced and slightly thickened. Mix in the remaining butter until melted. Serve the sauce over the chicken.

1 tablespoon olive oil
2 large shallots, thinly sliced
1 pint cherry tomatoes
1/8 teaspoon salt (to taste)
1/8 teaspoon pepper
1 pinch crushed red pepper flakes
2 tablespoons pine nuts
1/2 tablespoon balsamic vinegar, preferably white
2 tablespoons thinly shredded fresh basil
1 tablespoon olive oil
2 small chicken breast halves
salt and pepper
1/4 cup Chardonnay wine
1/2 cup low sodium chicken broth

Steps:

  • To prepare sauteed tomatoes and shallots:.
  • Heat oil in heavy-bottomed medium skillet over medium-high heat. Add shallots and cherry tomatoes, and cook for 1 minute. Add 1/8 teaspoon salt, pepper, red pepper flakes, pine nuts and vinegar.
  • Reduce heat to medium, and cook for 4 minutes, until tomatoes are soft and slightly wrinkled.
  • Remove from heat, and cool to room temperature, until ready to serve with chicken. Stir in basil.
  • To prepare dish:.
  • Heat oil in heavy-bottomed medium skillet over medium-high heat. Season chicken lightly with salt and pepper. Add to skillet, skin side down. Cook 5 minutes. Turn skin-side up, and cook another 5 minutes. Remove chicken from skillet.
  • Add wine to skillet, and scrape up browned bits with wooden spoon. Add broth, and bring to a simmer. Return chicken to skillet. Cover and cook chicken for 13 to 15 minutes on one side; turn over and cook another 13 minutes on second side.
  • Remove chicken from skillet. Turn heat to high, and reduce pan juices slightly, about 1 minute.
  • To serve, arrange chicken on plates. Spoon skillet juices over chicken and pass Tomatoes and Shallots separately.

Salt and freshly ground black pepper
4 to 6 shallots, cut into 1-inch pieces
2 cups grape or cherry tomatoes, halved
Olive oil
1 (15-ounce) can white beans, drained
1 1/4 cups reduced-sodium chicken broth, divided
1 teaspoon dried thyme
1 teaspoon dried oregano
2 tablespoons freshly chopped parsley leaves

Steps:

  • Preheat oven to 400 degrees F. Coat a shallow roasting pan with cooking spray.
  • Season both sides of chicken with salt and black pepper and place in prepared pan. Arrange shallots and tomatoes around chicken (or on a second baking sheet that's been coated with nonstick cooking spray). Toss with olive oil and season with salt and black pepper. Roast 30 minutes, until chicken is golden brown and cooked through and vegetables are tender.

2 bone-in chicken breasts, skin on, halved (about 10 ounces each)
Kosher salt and freshly ground black pepper
3 tablespoons unsalted butter
4 medium shallots, peeled and quartered lengthwise through the root (about 8 ounces)

Steps:

  • Preheat the oven to 425 degrees F. Sprinkle both sides of the chicken breasts with salt and pepper.
  • Preheat a large skillet over medium-high heat for 2 minutes. Working quickly, melt 1 tablespoon of the butter, swirling it around the pan. Add the chicken, skin side down. Add the shallots, cut side down and not overlapping. Cook until the chicken and shallots are browned on the bottom, 2 to 3 minutes. Flip the shallots and chicken, nestle in the rosemary sprigs, then carefully pour in the chicken stock.
  • Transfer the skillet to the oven and roast until the chicken is cooked through and the shallots are tender, 12 to 14 minutes, removing the smaller pieces of chicken first as they become cooked. Transfer the chicken to a serving plate.
  • Check the skillet with the shallots to make sure the stock has not evaporated; if less than a few tablespoons remain, add 1/2 cup more stock or water. Reduce the pan juices over medium heat until about 1/2 cup of liquid remains, about 2 minutes. Remove the skillet from the heat and stir in the remaining 2 tablespoons of butter with a wooden spoon to thicken the pan sauce until it coats the spoon. It came to The Times in 2014 via the Twitter account of Andrew Zimmern, the chef and globe-trotting television personality who thrills to home cooking when he's not at work, which is not often. His then wife, Rishia Zimmern, adapted it from Martha Stewart, and he put it on the social network: "Brown 8 thighs, 3 C shallots. Add wine, tarragon, Dijon, sim 30 min covered. Remove lid, reduce. 3 teaspoons sea salt, more for seasoning
1 4-pound chicken, cut into 6 pieces
3/4 cup flour, for dusting
Freshly ground black pepper
1 tablespoon olive oil
1 tablespoon butter
3 sprigs thyme
1 shallot, finely chopped
1/2 cup fino sherry
3 very ripe tomatoes (from a farmstand, if possible), coarsely chopped
1 teaspoon aged sherry wine vinegar

Steps:

  • In the morning, pour salt into a bowl large enough to fit chicken. Add a cup of tepid water and dissolve salt. Add chicken pieces, then cover with water. Refrigerate 8 to 12 hours, until ready to cook.
  • Preheat oven to 375 degrees. Remove chicken from water and pat it dry. Place flour and more salt and pepper in a plastic bag. Add chicken pieces, two at a time, and shake to lightly coat them. Vigorously shake off excess flour and repeat with remaining chicken.
  • Place a deep, ovenproof sauté pan over medium-high heat. Add oil and butter. When foam subsides, add chicken pieces, skin side down. Brown well, adjusting heat as needed, then turn and cook for 3 minutes. Add thyme sprigs and transfer pan to oven. Roast chicken, basting every few minutes.
  • When chicken is cooked (20 to 30 minutes), transfer it to a platter and keep warm. Place pan back on stove, over medium heat. Add shallot and sauté one minute. Pour in sherry and boil, scraping up any pan drippings. Reduce until pan is almost dry, then add tomatoes and increase heat to high. Cook until tomatoes have broken down and juices have condensed, 10 minutes. It should be pulpy, not drippy. Taste and adjust seasoning, sprinkle with vinegar, then spoon sauce over chicken. Serve.

2 garlic cloves , shredded

generous handful basil leaves

Steps:

  • Heat the oil in a large non-stick frying pan, then season the chicken and fry, flattest-side down, for 4-5 mins. Turn the chicken over, add the onion and cook 4-5 mins more. Lift the chicken from the pan and set aside. Add the garlic to the pan, then continue cooking until the onions are soft.
  • Tip in the tomatoes with the balsamic vinegar, olives, stock, half the basil and seasoning, then simmer, stirring frequently, for 7-8 mins until pulpy. Return the chicken and any juices to the pan and gently simmer, covered, for 5 mins more, to cook the chicken through. Serve scattered with the rest of the basil.

3 tablespoons extra virgin olive oil
1 1/2 lbs boneless skinless chicken breasts (or boneless, skinless thighs)
4 garlic cloves, peeled, smashed with flat side of a knife, and chopped coarsely
6 shallots, peeled and chopped coarsely
3/4 lb cherry tomatoes (1 pints) or 3/4 lb grape tomatoes, rinsed and drained (1 pints)
1 1/2 tablespoons dried oregano
3/4 cup dry white wine
1 teaspoon salt
1/4 teaspoon fresh ground black pepper

Steps:

  • Heat 12 inch skillet, Dutch oven or casserole with lid. Pour in oil and heat until quite hot. Line pan with a batch of chicken breasts and fry over high heat until golden brown on one side, about 2 1/2 to 3 minutes. Turn over and brown other side. Remove with tongs and continue browning remaining pieces. Set chicken aside.
  • Reduce heat to medium, put garlic and shallots in pan, and saute until fragrant, about 15 seconds. Add oregano, white wine, salt and pepper and saute uncovered about 4 to 4 1/2 minutes, shaking pan from time to time.Add tomatoes and return chicken to pan, cover and cook about 10 to 15 minutes, or until chicken is done.
