My family started making this before I was born. It is one of the dishes we always make when we get together. I love it!

1 (32 ounce) package frozen hash browns, thawed
1/2 cup margarine, melted
1 teaspoon salt
1 (10 3/4 ounce) can cream of chicken soup
1 cup sour cream
1 medium onion, diced
2 cups cheddar cheese, grated
2 cups corn flakes (topping)
1/4 cup margarine, melted (topping)

Steps:

  • Combine all ingredients, except the corn flakes and 1/4 cup margarine.
  • Put in a 12x9-inch pan.
  • Crush corn flakes and mix with margarine.
  • Sprinkle on top.
  • Bake for 45 minutes at 350°F or until bubbly.

2 lbs frozen hash browns or 2 lbs O'Brien potatoes, with green peppers and onions
1/4 cup melted oleo
1/4 teaspoon pepper
1/2 cup chopped onion
1 (10 1/2 ounce) can cream of celery soup
10 ounces sharp cheddar cheese, grated
1 pint sour cream
1 cup finely crushed corn flakes (finely crushed)
1/2 cup oleo

Steps:

  • Mix first 8 ingredients and put in a 13x9x2-inch cake pan.
  • Make topping from next 2 ingredients.
  • Sprinkle over potatoe mixture.
  • Cover with foil.
  • Bake (covered) for 50 minutes at 350° till last 15 minutes.
  • Remove foil and brown for 15 minutes.
  • Serve hot.

These aren't your ordinary mashed potatoes! You can also make the mashed potatoes the day before, refrigerate overnight, then bake them the next day.

9 large potatoes
8 ounces cream cheese
1 cup sour cream
2 teaspoons onion salt
1 teaspoon salt
¼ teaspoon ground black pepper
2 tablespoons butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish, and set aside.
  • Bring a large pot of lightly salted water to a boil. Cook potatoes in boiling water until tender. Drain, and transfer to a large mixing bowl. Mash until smooth. Stir in cream cheese, sour cream, onion salt, salt, and pepper. Beat until light and fluffy. Transfer to the prepared casserole dish, and dot with pieces of butter.
  • Bake for 30 minutes in the preheated oven, or until heated through.

1 (10 1/2 ounce) can cream of celery soup
1 (8 ounce) carton sour cream or 1 (8 ounce) carton plain yogurt
1 medium onion, chopped
1 green bell pepper
3 tablespoons chopped pimiento
2 teaspoons salt
1/8 teaspoon pepper
1 (32 ounce) bag frozen hash brown potatoes
1/4 cup parmesan cheese, grated (optional)

Steps:

  • Mix all ingredients except potatoes and Parmesan cheese.
  • Stir in potatoes.
  • Spread in ungreased baking dish, 13 x 9 x 2 inches, or 3 quart casserole.
  • Sprinkle with Parmesan cheese if desired. Cover and cook in 325 degree oven 1 hour.
  • Uncover and cook until potatoes are tender, about 30 minutes.
  • Sprinkle with paprika if desired.

2/3 cup sour cream
dill weed, sprigs
chopped fresh chives

Steps:

  • Heat 1 inch water to boiling in 3-quart saucepan. Add potatoes. Cover and heat to boiling; reduce heat. Simmer 20 to 25 minutes or until tender; drain and cool.
  • Cut potatoes in half; place cut sides up on serving tray. (Cut thin slice from bottom of each potato half, if necessary, to help stand upright.) Top each potato half with 1 teaspoon sour cream and dill weed. Cover and refrigerate about 2 hours or until chilled.
