Creamy Herbed Three Bean Pasta Salad image

Pasta shells join forces with chickpeas, green beans and kidney beans for a hearty salad in a creamy dressing.

Kosher salt and freshly ground black pepper
1/3 cup mayonnaise
1/4 cup chopped fresh basil
1/4 cup chopped fresh flat-leaf parsley
3 tablespoons sour cream
1 1/2 tablespoons fresh lemon juice
1 cup trimmed chopped green beans
8 ounces pasta shells
1 cup canned chickpeas, rinsed and drained
1 cup canned kidney beans, rinsed and drained
1/4 cup finely chopped shallots

Steps:

  • Bring a large pot of salted water to a boil.
  • Whisk together the mayonnaise, basil, parsley, sour cream, lemon juice, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
  • Cook the green beans in the boiling water until crisp-tender, 3 to 4 minutes. Transfer the beans to a colander with a slotted spoon and run under cold water to stop the cooking process. Add them to the bowl with the dressing.
  • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool; add to the bowl.
  • Add the chickpeas, kidney beans and shallots to the mixing bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

Steps:

2 tablespoons sunflower oil
1 leek, sliced
1 red bell pepper, seeded and diced
1 cup fresh spinach, finely shredded
5 ounces button mushrooms, halved
1 (10 ounce) can red kidney beans, rinsed and drained
1 (10 ounce) can cannellini beans, rinsed and drained
2 tablespoons chives, snipped
1/2 teaspoon fresh ground black pepper
2 ounces sunflower seeds, toasted
2 garlic cloves, crushed

2 tablespoons cider vinegar

Steps:

  • Cook pasta in large pot of rapidly boiling salted water until al dente. Drain well.
  • In a large pan, heat the oil. Add the leek and bell pepper and stir-fry over medium heat for 2-3 minutes. Add spinach and mushrooms and toss together for about 1 minute, or until spinach just begins to wilt. Set aside.
  • Make the dressing: mix garlic, cumin, coriander, and vinegar together in a bowl. Gardually whisk in the olive oil.
  • In a salad bowl, toss the pasta, vegetables, beans, chives, and black pepper. Add the dressing and toss. Sprinkle sunflower seeds over the top and serve.

If I could only eat one thing for the rest of my life, this would be it! It's so good, i make it whenever i go to barbeques or dinners and it's always popular (i'm usually first in line!). This recipe does make a lot (as a side), so if you're just making it for your family feel free to reduce it by a half or two-thirds, otherwise you may be eating it for the next week!

500 g spiral pasta
1/2 cup sliced sun-dried tomato
6 large mushrooms, sliced
4 spring onions, chopped
1/2-1 red capsicum, diced
1/4 cup pine nuts
1/4 cup pine nuts, extra
1/2 cup grated parmesan cheese
1 garlic cloves, peeled or 1 teaspoon crushed garlic
pepper, to taste
2 xbunches fresh coriander, washed, roots discarded, roughly chopped (≈, 2 cups)
1 -1 1/2 cup mayonnaise, approximately

Steps:

  • Bring a large pot of salted water to the boil and cook pasta according to the packet directions. Drain and allow to cool.
  • When the pasta has cooled, place into a large bowl and add the sundried tomatoes, mushrooms, spring onions, capsicum and pine nuts. Mix well to combine.
  • To make the dressing, place the extra pine nuts, parmesan, garlic and pepper to taste into the bowl of a food processor. Blend until it forms a paste.
  • Add the coriander to the food processor and blend until all the ingredients form a pesto.
  • Add the mayonnaise to the food processor and blend until combined, forming a creamy, pale green dressing (try to avoid blending the mayonnaise for too long as it may cause it to separate).
  • Add the dressing to the pasta salad (you may not need all of it as it does make a fair bit, adjust as necessary to suit your tastes) and mix thoroughly.

1 can (15-1/2 ounces) hominy, rinsed and drained

This is a colorful variation of the black-eyed peas salad I always serve at my New Year's Day open house. You can cook the black beans and red beans together or separately. The black-eyed peas cook more quickly so should be cooked separately.

3/4 cup dried black beans, washed, picked over and soaked for 6 hours or overnight in 3 cups water
3/4 cup dried red beans or kidney beans, washed, picked over and soaked for 6 hours or overnight in 3 cups water
2 onions, halved
4 garlic cloves, minced
Salt to taste
3/4 cup black-eyed peas, washed and picked over
1 bay leaf
1/4 cup red wine vinegar or sherry vinegar
1 garlic clove, minced
Salt and freshly ground pepper to taste
2 teaspoons lightly toasted cumin, ground
1 teaspoon Dijon mustard
1/2 cup broth from the beans
1/3 cup extra virgin olive oil
1 red bell pepper, diced
1/2 cup chopped cilantro

Steps:

  • Place a strainer over a bowl and drain the black beans. Add enough water to the soaking water to measure 6 cups. Drain the red beans and discard the soaking water. Combine the black and red beans, water, all but 1/2 onion, and 3 of the garlic cloves in a large, heavy pot and bring to a gentle boil. Reduce the heat, cover and simmer 1 hour. Add salt to taste (beans take a lot of salt) and continue to simmer for another 30 minutes, or until the beans are tender but intact. Remove and discard the onions. Set a strainer over a bowl and drain. Measure out 1/4 cup of the broth.
  • Meanwhile in a separate pot combine the black-eyed peas, remaining 1/2 onion and garlic clove, the bay leaf and 3 cups water. Bring to a boil, add salt to taste, cover, reduce the heat and simmer 45 minutes, or until the beans are tender but intact. Remove and discard the bay leaf and onion. Set a strainer over a bowl and drain. Measure out 1/4 cup of the broth and add to the black and red bean broth.
  • In a bowl or measuring cup, whisk together the dressing ingredients. Combine all of the beans in a large bowl and toss with the dressing. Taste and adjust salt. At this point the mixture can be refrigerated, or the salad can be served warm or at room temperature.
  • Stir the peppers and cilantro into the beans and serve.

3/4 pound green beans, trimmed and cut into thirds
2 tablespoons Dijon mustard
1/3 cup red-wine vinegar

1 can (15.5 ounces) chickpeas, rinsed and drained
4 scallions (white parts only), thinly sliced

  • In a large pot of boiling salted water, cook pasta 3 minutes less than package instructions. Add green beans and cook 3 minutes more. Drain and rinse with cold water.

Three-Bean Salad with Coriander Chili Dressing image

1 pound dried black beans, picked over
1 pound dried white beans, picked over
2 garlic cloves
2 bottled pickled jalapeño chilies, seeded if desired (wear rubber gloves)
2 cups loosely packed fresh coriander, rinsed and spun dry
1/3 cup plus 2 tablespoons fresh lemon juice
1 cup vegetable oil
1 pound green beans, trimmed and cut into 1-inch pieces
Note: It is important to soak and cook the black beans and the white beans separately because one bean variety can become mushy in the few minutes it takes another to become tender.

Steps:

  • In a large saucepan combine the black beans with triple their volume of cold water and in another large saucepan combine the white beans with the same proportion of cold water. Bring the water to a boil and simmer the beans, uncovered, for 2 minutes. Remove the pans from the heat and let the beans soak for 1 hour. Drain each pan of beans separately in a colander. In each pan put 2 1/2 quarts water and stir the black beans into the water in one pan, the white beans into the water in the other. Cook the beans at a bare simmer, testing for doneness every 5 minutes, for 15 to 40 minutes, or until they are just tender but still hold their shape. Drain the beans and let them cool to warm.
  • In a blender purée 1 of the garlic cloves, the jalapeños, and 1 cup of the coriander with 1/3 cup of the lemon juice, 2/3 cup of the oil, and salt to taste, scraping down the side of the blender, until the dressing is smooth. In a very large bowl toss the beans with the dressing and let them marinate, covered and chilled, stirring occasionally, overnight. The salad may be prepared up to this point 1 day in advance and kept covered and chilled.
  • In a saucepan of boiling salted water boil the green beans for 5 minutes, or until they are crisp-tender, and drain them in a colander. Refresh the beans under cold water and pat them dry. In the blender purée the remaining garlic clove and the remaining 1 cup coriander with the remaining 2 tablespoons lemon juice, the remaining 1/3 cup oil, and salt to taste, scraping down the side of the blender, until the dressing is smooth. Add the green beans and the dressing to the bowl of dressed beans, toss the salad well, and serve at room temperature.
