PEA AND FETA SALAD
A lovely light salad for summer that combines peas, mint and salty feta cheese.

Steps:
- Place the oil, white wine vinegar, caster sugar, half the mint and a little salt and pepper to taste, in a pan. Put on a medium hob and heat gently until just simmering, remove straight away and leave to cool.
- Lightly cook the mangetout, peas and edamame beans until al dente (in a steamer or boiling salted water). Remove and rinse in ice cold water before draining.
- Thinly slice the radishes and carrots and place into a bowl along with the remaining finely chopped mint.
- Roughly chop the pea shoots and combine with the carrot and radish mix, then add the mange tout, peas and edamame beans.
- Toast the cashew nuts in a dry frying pan taking care not to burn them; then, when cool, roughly chop them.
- Lightly dress the ingredients and mix together until evenly combined.
- Place the salad mix in a bowl; crumble over the feta cheese and cashew nuts.
- Finish with an extra drizzle of the dressing and serve.
FIELD PEA SALAD WITH TOMATOES AND FETA
In this recipe for Field Pea Salad with Tomatoes and Feta, we call for lady peas. Lady peas are less starchy than other field peas with a mild earthiness that's just delicious.

Steps:
- Melt butter in a large saucepan over medium-high. Add onion; cook, stirring occasionally, 5 minutes. Stir in peas, 2 cups water, bay leaf, ¾ teaspoon of the salt, and ½ teaspoon of the pepper. Bring water to a boil over medium-high. Cover and reduce heat to medium. Cook, stirring occasionally, until peas are tender, about 30 minutes. Remove from heat; let stand 10 minutes. Drain; remove and discard bay leaf.
- Whisk together oil, shallot, mustard, thyme, lemon zest and juice, and remaining ¼ teaspoon each salt and pepper in a large bowl. Add pea mixture, tomatoes, and parsley; toss gently to combine. Sprinkle with cheese. Serve warm or at room temperature.
PEA, FETA AND MINT SALAD
Steps:
- In a medium saucepan, bring salted water to a boil. Blanch the peas in the boiling water until they are just tender and bright green, about 2 minutes. Refresh immediately by plunging them into a bowl of cold water. Drain and reserve the peas.
- In a small pan, heat 1 tablespoon of the oil over medium heat. Add the onion, and cook until soft, stirring occasionally, about 5 minutes.
- Meanwhile, in a small bowl, whisk together the mustard, the remaining 2 tablespoons olive oil, vinegar and honey, and season with salt and black pepper, to taste.
- In a large salad bowl, mix the peas, onions, pistachios, and pour over the dressing. Add the mint and snow pea leaves, and gently toss to coat with dressing. Top the salad with the feta cheese just before serving.
BABY SPINACH, FRESH PEA AND FETA CHEESE SALAD
Steps:
- You need 2 large handfuls of baby spinach -- check for nasty stalky or wilted bits and then give it a really good wash (nobody likes gritty spinach). Spin dry, and add to a salad bowl with 2 smaller handfuls of fresh peas (unless you are lucky enough to get young peas which are sweet and tender, you should blanch the peas in boiling, unsalted water and leave to cool). Dress the salad at the last minute with olive oil and lemon juice dressing and sprinkle crumbled feta cheese over the top.
CHICKPEA, ARTICHOKE, AND FETA SALAD
A fresh-tasting salad from ingredients that last a long time in the pantry and refrigerator, with a pleasing balance of earthy, sharp, salty, and green. Flat or Italian parsley has a much better flavor than curly, but either will do, and I've used a tablespoon of dried in a pinch.

- Heat small skillet over medium heat. Add cumin seeds and toast until aromatic and slightly darker, about 2 minutes. Cool; grind finely in spice mill. Whisk lime juice, honey, and cumin in small bowl. Gradually whisk in oil; stir in dill. Season dressing with salt and pepper. DO AHEAD Can be made 1 day ahead. Cover and chill. Bring to room temperature.
- Cook peas in pot of boiling salted water until almost tender, about 5 minutes for fresh (or about 2 minutes for frozen). Drain; rinse under cold water, then drain well. Transfer to large bowl. Add radishes, feta, and dressing; toss. Season with salt and pepper. If using pea tendrils or sprouts, divide among bowls. Divide salad among bowls. Serve.
BALSAMIC PEA SALAD
I quickly make this the night before I need it as it tastes much better if it sits overnight. My daughter and her friend will not eat peas, but they love this salad.

- Place peas in a colander, and run warm water over them until they are thawed. Place in a large bowl.
- Toast almonds in a skillet over medium heat. Then combine with peas.

- Heat oven to 200C/180C fan/gas 6. Spread the beans onto a baking tray, season and drizzle over 1 tbsp oil. Roast for 10 mins until lightly charred. Tip into a bowl with the chickpeas.
- In a food processor, make a dressing by whizzing together the garlic, sundried tomatoes, peppers, vinegar and the remaining oil. Season, stir into the beans with the feta and serve.
