OLD-FASHIONED PEACH PIE
Steps:
- Chill: Chill the assembled pie in the refrigerator for at least 30 minutes.
- Preheat the oven to 400°F: Place an oven rack in the bottom third of the oven. Line a baking sheet with aluminum foil to catch any pie leakage. Whisk the egg and tablespoon of milk together.
- Bake the pie: Remove the chilled pie from the fridge and brush the top with the egg-milk mixture. Sprinkle with sanding sugar. Place the pie on the prepared baking sheet. Bake the pie in the bottom third of the oven for about 1 hour, or until the filling is bubbling in the center of the pie.

Steps:
- Preheat oven to 425°F. Mix together peaches and lemon juice. Stir together sugar, flour and cinnamon. Add to peaches, stir to coat the peaches. Pour into the bottom pie crust, dot with butter. Cover with top crust, seal and flute the edges, cut four slits in the crust for steam to escape. Cover the edges loosely with foil to prevent over browning. Bake 35 to 45 minutes, until the crust is browned and the filling begins to bubble through the crust.
AUNT HELEN'S FRIED PEACH PIES
This is my mother's recipe. Since my cousins remember her for her delicious fried pies at family reunions I named these Aunt Helen's. She also made fried apple pies.

Steps:
- 1. Combine the first four ingredients in 2 qt heavy sauce pan. Bring to boil. Stirring occasionally.
- 2. Boil for about 30 minutes on med/high heat then reduce heat to medium. Stirring occasionally.
- 3. Continue to boil on medium heat, stirring occasionally, for about 30 more minutes. As peaches become tender and syrup begins to thicken, mash and cut peaches with a spoon until they become like pie filling.
- 4. Roll out biscuits on a floured surface to about a 5 inch oval shape (I use parchment because it won't stick).
- 5. Fill the dough with about 1 1/2 tablespoon of cooled filling. Fold over and crimp and seal edges.
- 6. Fry in skillet with about 1/2 inch deep (hot) Crisco. Fry on med/low heat 2-3 minutes on each side until golden brown. Fry 2-3 pies at a time.
- 7. Remove to absorbent paper towels.
- 8. *Note: May use 1/4 cup less sugar if you don't like them as sweet.
BEEF PEACH PIE

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- In a medium bowl, mix together the ground beef, egg, milk, onion, bread crumbs, salt and pepper. Press into a 9 inch pie pan like a crust. Prick meat all over using a fork.
- Bake for 25 to 30 minutes in the preheated oven. Remove from the oven, and pour off any excess fat. Arrange the sliced peaches over the beef. Mix together the vinegar, ketchup and brown sugar, and spoon over the top of the peaches.
- Bake for an additional 20 minutes. Let stand for at least 10 minutes before serving.

- Prepare a large pot of boiling water. Drop 3 peaches into the pot so that the water fully covers it, and boil for 45 seconds. Remove the peaches from the water with a slotted spoon and transfer it to a bowl of ice water. Drop in the next batch and repeat. Once the peaches are cooled, use a sharp knife to puncture the skin of the peach, then peel it off in large sheets with your fingers. Repeat until all peaches are peeled. Cut each peach in half, remove the pit, and then cut it in half again to make quarters (if your peaches seem extra ripe and juicy, cut them only in half to make sure the filling doesn’t get too juicy). Place the peach pieces into the pie shell, using just enough to fill the pie shell.
- In a medium bowl, mix together 1 cup sugar, 3 tablespoons cornstarch, and a pinch of kosher salt. Pour in 1 cup heavy cream and 1 teaspoon vanilla, and mix well until smooth. Pour the custard over the peaches.
