Steps:

  • Cut each pear lengthwise into 10 (1/8- to 1/4-inch-thick) slices (5 from one side, then 5 more from the opposite side), avoiding core and discarding rounded outermost slices.
  • Layer 4 pear slices with cheese and fig on each of 4 plates, beginning with largest pear slices, and ending with smallest.
  • Sprinkle any remaining cheese and fig around napoleons.

1 cup apple juice
1/4 teaspoon cinnamon
1 lemon, juiced
4 ounces sugar substitute
Clear glaze, as needed (available at commercial pastry supply stores)
3 cups sliced pears
1 pint mixed blueberries, blackberries and raspberries
2 quarts skim milk
4 ounces margarine
1 vanilla bean, split
8 egg substitutes
1 1/2 ounce sugar substitute
3 1/2 ounces cornstarch
1 cup light whipping cream, whipped
Phyllo sheets
Vegetable spray
Sugar substitute

Steps:

  • For the Pears: Put wine, juice, cinnamon, lemon juice, and sugar substitute in a pot, and bring to a boil. Take off the heat and add some clear glaze to slightly thicken the mixture. Add the sliced pears to the mixture and cool.
  • Pastry Cream: Bring to a boil the milk, margarine, and split vanilla bean. Combine eggbeaters, sugar, and cornstarch and add to boiled milk. Cook until thick. Fold pastry cream with some whipped cream.
  • Napoleon Sheets: Cut phyllo into rectangle shape. Spray each layer with vegetable spray (4 layers total). Sprinkle top with sugar substitute and bake until golden brown. Each set of Napoleon requires 3 rectangles per order.
  • Pear and Berry Napoleon Assembly: In the center of a plate, layer a dollop of pastry cream, a phyllo square, a dollop of cream and berries. Repeat with another phyllo square, pastry cream, and berries. Top with phyllo square and a light sprinkle of powdered sugar. Spoon pears around. Repeat with remaining ingredients.

1/2 cup pecans
1 tablespoon melted butter
1 tablespoon granulated sugar
1 tablespoon dark brown sugar
1/2 teaspoon ground cinnamon
1 sheet store bought puff pastry, thawed (recommended: Pillsbury)
3 tablespoons unsalted butter, melted
2 tablespoons granulated sugar
2 tablespoons dark brown sugar
1 1/2 pounds Bosc pears, cut into 1/2-inch slices (about 6 large or 8 small)
1 cup heavy cream
2 tablespoons granulated sugar
1 1/2 teaspoons pure vanilla extract

Steps:

  • Preheat 400 degrees F.
  • Chop the pecans to the consistency of rough crumbs. Toss with the butter, sugars and cinnamon in a small bowl. Spread the mixture out onto a baking sheet and cook in the oven 7 to 10 minutes, until darkened and lightly caramelized. Set aside to cool.
  • Roll out the puff pastry on a floured surface to 1/16-inch thickness. Cut the puff pastry sheet into 12 squares, approximately 3 by 3 inches. Lay out on a baking sheet and bake 15 to 20 minutes, until puffed and golden brown. Remove from the oven and set aside to cool.
  • Melt the butter with both the sugars in a skillet over medium heat. Add the pears. Cook until pears are just tender and juices thicken to a syrup consistency, about 6 to 8 minutes.
  • Whip the cream, granulated sugar and vanilla in a mixing bowl until it forms soft peaks.
  • Place a puff pastry square in the center of a serving bowl or plate. Top with a few pears, whipped cream and pecan pieces. Repeat this process 2 more times ending with a sprinkle of nuts.

Freshly squeezed lemon juice (3 lemons)
3 ounces coarsely crumbled sharp blue cheese such as Stilton
1/4 cup dried cranberries
1/4 cup walnut halves, toasted and chopped
1/2 cup apple cider
3 tablespoons port
1/3 cup light brown sugar, lightly packed
1/4 cup good olive oil
6 ounces baby arugula
Kosher salt

Steps:

  • Preheat the oven to 375 degrees F.
  • Peel the pears and slice them lengthwise into halves. With a small sharp paring knife and a melon baller, remove the core and seeds from each pear, leaving a round well for the filling. Trim a small slice away from the rounded sides of each pear half so that they will sit in the baking dish without wobbling. Toss the pears with some lemon juice to prevent them from turning brown. Arrange them, core side up, in a baking dish large enough to hold the pears snugly.
  • Gently toss the crumbled blue cheese, dried cranberries, and walnuts together in a small bowl. Divide the mixture among the pears, mounding it on top of the indentation.
  • In the same small bowl, combine the apple cider, port, and brown sugar, stirring to dissolve the sugar. Pour the mixture over and around the pears. Bake the pears, basting occasionally with the cider mixture, for 30 minutes, or until tender. Set aside until warm or at room temperature.
  • Just before serving, whisk together the olive oil, 1/4 cup of lemon juice, and 1/4 cup of the basting liquid in a large bowl. Divide the arugula among 6 plates and top each with a pear half. Drizzle each pear with some of the basting liquid, sprinkle with salt, and serve warm.

3 ounces Stilton cheese (or other good quality sharp blue cheese) or 3 ounces Roquefort cheese, coarsely crumbled (or other good quality sharp blue cheese)
1/4 cup dried cranberries
1/4 cup walnuts or 1/4 cup pecans, toasted and chopped
4 pears (Anjou or Bartlett, ripe but still firm)
juice of one lemon
1/2 cup apple cider (or apple juice)
3 tablespoons port wine
1 tablespoon pear, liquor such as poire williams
1/3 cup light brown sugar

Steps:

  • Preheat the oven to 375 degrees F.
  • Toss the crumbled blue cheese, dried cranberries, and walnuts together in a small bowl. Set aside.
  • Chop off the top of one pear to remove the stem. Peel and slice it lengthwise into halves. With a small sharp paring knife and a melon baler or small cookie scooper, remove the core and seeds leaving a round well. Remove a bit more from the center so you have a nice hole in each pear half. Trim a small slice away from the bottom rounded side of each pear half so that they will sit upright without wobbling. Place the pear halves in a baking dish core sides up and brush them all over with lemon juice using a pastry brush. Repeat with all the pear halves. Use a 2 to 2 1/2 quart shallow casserole dish so that the pear halves all fit snuggly in the dish.
  • Stuff each pear hole with some of the cheese mixture, mounding it on top of the holes and packing it slightly.
  • Combine the apple cider, port, pear liquor and brown sugar in a small bowl. Stir well to dissolve the sugar. Pour the mixture by tablespoons over each pear half letting the excess run over in to the dish.
  • Bake the pears, basting each half every 10 minutes with the cider mixture, for 30 minutes, or until the pairs are tender. Set aside to cool. Serve warm or at room temperature.

1 tablespoon olive oil
4 sweet onions, thinly sliced
salt and pepper to taste
1 (17.5 ounce) package frozen puff pastry, thawed
2 firm pears, peeled, quartered, and sliced
¾ cup crumbled blue cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line two baking sheets with parchment paper.
  • Melt the butter and olive oil in a large skillet over medium heat. Stir the onions into the butter, and cook until the onions have softened and caramelized to a deep, golden brown, 30 to 40 minutes. Stir frequently as the onions cook to keep them from burning. Once done, season with salt and pepper, and set aside to cool.

  • 1. Heat the oven to 350°F. Line a baking sheet with parchment paper.
  • 2. Place the flour, butter, blue cheese, and a few grinds of black pepper in the bowl of a food processor and process until the dough just comes together and starts to form a ball.
  • 3. Dump the dough out onto a lightly floured surface and knead a few times to pull it together. Then roll out to a 1/8-inch-thick circle with a floured rolling pin. Cut rounds out of the dough with a floured 1-inch round cutter and transfer to the parchment-lined baking sheet. Reroll the scraps (no more than once) and cut more rounds.
  • 4. Using the back of a rounded 1/2-teaspoon measure or your knuckle, make an indentation in the center of each dough round. Spoon about 1/4 teaspoon of the fig preserves into each indentation, using your finger to push the preserves as best as possible into the indentation.
  • 5. Bake the savouries until the preserves are bubbling and the pastry is light golden on the bottom, 10 to 12 minutes. Let cool on the baking sheet for at least 10 minutes, then remove to a wire rack to finish cooling.

We're taking the highway to French elegance with these stacked desserts. Unsweetened whipped cream is a wonderful foil for gooey caramelized pears and flaky puff pastry.

1/2 package (1 pound) frozen all-butter puff pastry in 1 piece, thawed
1/2 cup chilled heavy cream
1/2 cup sour cream
1 cup sugar
2 (14-ounce) cans pear halves in light syrup, drained, reserving syrup
2 tablespoon unsalted butter
Garnish: confectioners sugar for dusting

Steps:

  • Preheat oven to 400°F with rack in upper third.
  • Roll out pastry with a floured rolling pin on a lightly floured surface into about a 16-inch square. Trim edges. Transfer to a parchment-lined baking sheet and place another baking sheet on top. Bake until golden and cooked through, 15 to 18 minutes. Remove top baking sheet from pastry and transfer pastry to a rack to cool completely.
  • While pastry cools, beat heavy cream with an electric mixer until it just holds soft peaks. Fold in sour cream gently but thoroughly.
  • Meanwhile, cook sugar in a dry large heavy skillet over medium heat until it begins to melt, then continue to cook, stirring with a fork, until it is completely melted and golden. Stir in reserved pear syrup and boil, stirring, until thickened, 3 to 5 minutes. Stir in pears. Remove from heat and swirl in butter until combined.
  • Cut pastry into 8 rectangles with a large knife. Place half of rectangles on 4 serving plates. Spread cream mixture over pastry, then spoon pears with caramel over top. Place remaining pastry rectangles on top.
