Ham and Brie Melts image

Melty cheese, ham and apricot preserves offer a special change of pace from the classic grilled cheese. These quick, crispy sandwiches remind me of baked brie. -Bonnie Bahler, Ellington, Connecticut

8 slices multigrain bread
1/4 cup apricot preserves
1/2 pound sliced deli ham
1 round (8 ounces) Brie cheese, rind removed, sliced
3 tablespoons butter, softened

Steps:

  • Spread 4 bread slices with half of the preserves. Layer with ham and cheese. Spread remaining bread with remaining preserves; place over cheese, preserves side down. Spread outsides of sandwiches with butter., In a large cast-iron or other heavy skillet, toast sandwiches over medium heat until golden brown and cheese is melted, 2-3 minutes on each side.

Elegant Baked Brie image

This is an elegant twist to an already elegant dish. This baked brie combines the strong but coordinating flavors of brie cheese with pesto sauce and pine nuts. It has a sweet taste and can be eaten alone or served with crackers or baked French bread.

1 (8 ounce) round Brie cheese
2 tablespoons pesto sauce
¼ cup toasted pine nuts
2 teaspoons brown sugar
1 (8 ounce) package refrigerated crescent rolls

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Cut Brie cheese horizontally in half, creating two equal rounds similar to a layered cake. Spread pesto sauce on the cut surface of 1 half; sprinkle pine nuts and brown sugar over pesto layer. Place the other Brie half on top of pesto mixture.
  • Separate crescent rolls and cover entire Brie round with crescent roll dough, sealing all the gaps. Place covered Brie on a baking sheet.
  • Bake in the preheated oven until Brie cheese is softened and crescent rolls are lightly browned, about 20 minutes.

1 large French baguette (bread)

Steps:

  • Preheat oven to 350 degrees.
  • Cut the brie into 1" x 1" chunks (easier when cheese is chilled).
  • In a casserole dish, stir together the brie chunks, pesto, and garlic.
  • Bake at 350 degrees for about 20 minutes or until the cheese is nice and bubbly.
  • Serve with slices of good French baguette as a hot spread.
