1/2 cup pistachios
1/3 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
2/3 cup confectioners' sugar, plus more for dusting
2 large eggs
6 tablespoons unsalted butter, melted
12 to 24 medium cherries with stems

Steps:

  • Preheat the oven to 350 degrees F. Line a 12-cup muffin tin with paper liners.
  • Pulse the pistachios, flour, baking powder and salt in a food processor until finely ground.
  • Whisk the confectioners' sugar and eggs in a large bowl, then whisk in the pistachio mixture until just combined. Stir in the melted butter until just incorporated.
  • Spoon 2 tablespoons batter into each muffin cup. Bake until slightly puffed and just beginning to set, about 8 minutes. Place 1 or 2 cherries in the center of each cake and continue baking until the cakes feel springy and the edges are lightly browned, 10 to 12 more minutes. Transfer to a rack and let cool 10 minutes in the pan, then remove from the pan to cool completely. Dust with confectioners' sugar.

1 cup vegetable oil
1 cup club soda
3 eggs
1 (3 ounce) package instant pistachio pudding mix
1 ½ cups milk
1 (3 ounce) package instant pistachio pudding mix
1 (1.3 ounce) envelope dry whipped topping mix (such as Dream Whip®)

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a fluted tube pan (such as Bundt®).
  • Beat cake mix, vegetable oil, club soda, eggs, and 1 package pistachio pudding mix together in a bowl until blended; pour into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted in the cake comes out clean, 30 to 40 minutes. Turn cake onto a cooling rack and cool completely.
  • Beat milk, 1 package pistachio pudding mix, and whipped topping mix together in a bowl using an electric mixer on high until frosting forms stiff peaks. Spread frosting on cake.

150g shelled pistachios
275g golden caster sugar
250g butter, softened
3 eggs
275g self-raising flour
75g Greek yogurt
a little milk, if needed
sugar flowers, pearl sugar or sprinkles, to decorate (optional)
150g raspberries
300g icing sugar

Steps:

  • Heat the oven to 180C/160C fan/gas 4 and line a 15 x 25cm cake tin. Put the pistachios in a food processor with half the sugar and blitz until the nuts are finely chopped. Tip into a bowl, add the remaining sugar and the butter and beat with an electric whisk until creamy. Add the eggs one at a time, then beat in the flour and yogurt until smooth, adding some milk if it's too thick.
  • Spoon the batter into the tin, level and bake for 50-55 mins, or until a skewer inserted into the middle comes out clean. Leave to cool in the tin for 15 mins, then turn the cake out onto a board. Remove and discard the baking parchment, then leave to cool completely. Cut into neat squares.
  • To make the icing, put the raspberries in a pan with 2 tbsp water and cook briefly until soft and juicy. Push the mixture through a sieve and discard any pips. Whisk in the sugar until you have a smooth pink icing.
  • Pour the icing over the cooled cake, then decorate with the sugar flowers, pearl sugar or sprinkles, if you like. Leave to set before serving.

This one I received from a friend long ago and it has been part of my St. Paddy's Day table ever since.

1 (18 ounce) box yellow cake mix
1 (3 ounce) box instant pistachio pudding mix
4 eggs
8 ounces sour cream
1/2 cup vegetable oil
3 -4 drops green food coloring
1 cup chopped pistachio nut
6 tablespoons sugar
2 tablespoons cinnamon

Steps:

  • Mix together the first 5 ingredients in a large bowl and beat well.
  • In a small bowl mix the nuts, sugar and cinnamon.
  • In a lightly greased bundt pan, pour 1/3 batter and 1/2 nut mixture. Repeat ending with the last of the batter. You should have batter, nuts, batter, nuts, batter. And don't worry if layers are not even, it will all work out in the end.
  • Bake for 50 minutes to 1 hour in a 350° oven. Cool completely before removing from pan.
  • Serve as is or simply dust with confectioners' sugar.

Unsalted butter or nonstick cooking spray, for the pans and cooling rack
1 cup roasted unsalted pistachios
2 1/4 cups all-purpose flour
1 3/4 cups granulated sugar
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1 teaspoon kosher salt
2 large eggs
1 cup buttermilk
1/2 cup vegetable or canola oil
1 teaspoon almond extract
1 tablespoon vanilla extract
Frosting, recipe follows
Donut Bagels, recipe follows
Sprinkles, for garnish
1/2 cup (1 stick) unsalted butter, at room temperature
8 ounces (1 cup) cream cheese, at room temperature
2 1/2 cups powdered sugar
Big pinch kosher salt
2 drops pink gel food coloring, with a spot of brown, preferably AmeriColor Deep Pink and Chocolate Brown
Marzipan, kneaded with food coloring to make lox, tomatoes, capers and onions
Powdered sugar, for dusting
Mixture of poppy seeds, sesame seeds, a pinch of kosher salt and turbinado sugar, for seeded topping
6 mini store-bought plain or lightly-glazed cake donuts, preferably Hostess Donettes
Simple syrup, for adhering toppings
Plain cream cheese, at room temperature, for schmearing on the donut "bagel"

Steps:

  • Position an oven rack in the middle position. Preheat the oven to 350 degrees F. Grease two 8-inch round cake pans and line the bottoms with parchment paper.
  • Place the pistachios in a food processor fitted with the blade attachment and grind them until you have small crumbs. Measure out 1/4 cup of the crumbs and set them aside for the filling.
  • Pour the remaining crumbs into a large mixing bowl. Add the flour, granulated sugar, baking powder, baking soda and salt. Whisk to combine. In a medium mixing bowl, whisk together the eggs, buttermilk, oil, extracts and 3/4 cup water. Whisk the wet ingredients into the dry ingredients, then pour into the cake pans and bake until a toothpick inserted in the center comes out clean, begin checking for doneness at 28 minutes. Let the cakes cool in the pans for 10 minutes, then turn them onto a greased cooling rack and cool completely.
  • Level the cake rounds and spread the top of one cake with a layer of Frosting. Sprinkle on the reserved ground pistachios. Place the other cake round on top, cut-side down, then frost all over with the remaining Frosting.
  • Place the Donut Bagels on the top of the cake. Decorate the top and sides of the cake with the sprinkles.
  • In the bowl of a stand mixer fitted with the whisk attachment, or in a large mixing bowl using a hand mixer, beat together the butter, cream cheese, powdered sugar and salt until smooth. Add the food coloring and whisk until fully combined.
  • Color and shape the marzipan on a powdered sugar dusted surface. Cut into circles for tomatoes. Smash into oblong shapes for salmon. Roll into little balls for capers. And to make the onions, just brush a bit of food coloring on the edges of slivered marzipan.
  • Put the seeded topping mixture in a small bowl. Using a pastry brush, brush the tops of the donuts with simple syrup, then dip into the seeded topping, pressing down slightly so everything adheres. Cut the donuts in half and spread a thin layer of cream cheese on the cut sides of the top and bottom pieces. To the bottom halves, add the marzipan salmon, tomato, onions and capers. Top with the seeded donut halves.

1/2 cup granulated sugar
1/3 cup packed pistachio paste, see note
1/2 teaspoon pure vanilla extract
2 extra-large eggs, at room temperature
1/2 cup all-purpose flour
1/4 teaspoon kosher salt or 1/4 teaspoon fine-grained sea salt
72 shell-less pistachio nuts
2 tablespoons confectioners' sugar

Steps:

  • Preheat oven to 400°F Place a rack in the upper third. Place 2 mini-muffin tins (2" diameter cups, 24 total) on a cookie sheet. If your muffin tins are not non-stick, spray liberally with non-stick spray.
  • NOTE: If you cannot find pistachio paste ready-made, you can make your own; combine 1/4 cup shell-less unsalted pistachios and 1/4 cup powdered sugar in a food processor. Process until nuts are finely ground, then add 1-3 tbsp water, until the desired consistency is achieved. (This will probably make a little more than you need.).
  • Beat the butter with a stand or hand mixer until fluffy, about 2 minutes. Add the sugar and beat until smooth. Scrape the bowl with a rubber spatula, then add pistachio paste and vanilla. Beat until smooth again. Add the eggs one at a time, blending well after each addition and scraping the sides of the bowl often.
  • Sift the flour and salt in a bowl. Add half the dry ingredients to the wet and blend well; add the remaining dry and blend well again. Divide batter evenly amongst the muffin cups. Place 3 pistachios into each muffin cup; do not press down.
  • Bake 13-15 minutes until light golden brown and a toothpick inserted in the center of one cup comes out clean. Place on a rack to cool completely, then remove from pan. Dust tops with confectioner's sugar before serving.
  • Leftovers will last 4 days at room temperature, wrapped airtight in foil. They may also be frozen up to 4 months, wrapped in several layers of plastic wrap and foil. Defrost frozen cakes in refrigerator overnight, then bring up to room temperature before serving.
