Topping:
1 cup coarsely chopped walnuts
1/2 cup all-purpose flour
1/2 cup (packed) golden brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon salt
Pinch of ground nutmeg
6 tablespoons chilled unsalted butter, cut into 1/2-inch pieces
1 pint vanilla ice cream
1/4 cup finely chopped crystallized ginger
Fruit:
2 1/2 pounds plums, pitted, quartered
1/2 cup sugar
1 tablespoon cornstarch
1 teaspoon vanilla extract

Steps:

  • For topping:
  • Mix first 7 ingredients in large bowl. Add butter and rub in with fingertips until small moist clumps form. Cover and refrigerate 20 minutes. (Can be made 3 days ahead. Keep refrigerated.)
  • Microwave ice cream in 5-second intervals just until slightly softened. Mix ice cream and ginger in medium bowl to blend. Cover and freeze. (Can be made 1 day ahead. Keep frozen.)
  • For fruit:
  • Preheat oven to 400°F. Toss plums, sugar, cornstarch, and vanilla in bowl. Let stand until sugar dissolves, tossing occasionally, about 5 minutes.
  • Transfer plum mixture to 11x7-inch glass baking dish. Sprinkle topping over. Bake until topping is dark golden brown and fruit is bubbling, about 40 minutes. Transfer crisp to rack and cool slightly, about 30 minutes.
  • Scoop warm crisp into shallow bowls. Top each with scoop of ice cream.

800g ripe cooking plums, such as Victoria or dessert plums, halved and stoned
50g light brown sugar
finely grated zest 1 orange
1 tsp ground cinnamon
1 tsp plain flour
250g plain flour
150g butter
80g caster sugar
80g demerara sugar
50g ground almonds

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Put the plums into the base of a shallow gratin dish about 28cm long. Mix together the sugar, orange zest, cinnamon and flour and sprinkle over the plums. Trickle over 2 tbsp water.
  • Put all the crumble ingredients into a food processor, and using the pulse button, whizz until the mixture just starts to clump together. Take care not to over process at this stage. Alternatively, rub the butter into the flour using your hands and then stir in the other ingredients.
  • Scatter the crumble over the plums and bake in the oven for 30-40 mins until golden brown. Leave for about 15 mins before serving with custard or cream.

125 g (4oz) light soft brown sugar
½ tsp ground cinnamon
75 g (3oz) each plain flour and wholemeal plain flour
125 g (4oz) butter, diced
50 g (2oz) walnuts, roughly chopped
50 g (2oz) jumbo porridge oats

Steps:

  • Preheat the oven to 200ºC (180ºC fan) mark 6. Put the plums into a pan with 2tbsp water, 25g (1oz) sugar and the cinnamon. Simmer gently for 5min until softened. Tip fruit mixture into an ovenproof dish.
  • Sift both flours into a large bowl, adding the bran that's left in the sieve. Rub in the butter. Stir in the remaining sugar, walnuts and porridge oats. 2 sheets thawed phyllo dough
4 tablespoons (1 stick) unsalted butter, melted
4 tablespoons sugar
2 ounces cream cheese, cut into cubes
6 dried plums, halved
2 tablespoons chopped walnuts
12 pieces candied orange peel
Powdered sugar, for garnish

Steps:

  • Preheat the oven to 375 degrees F. Line a large sheet pan with parchment paper.
  • On a work surface carefully brush a sheet of phyllo with melted butter and sprinkle it with 1 to 2 tablespoons sugar. Cut 6 strips from top to bottom 3 inches wide.
  • Place a cube of cream cheese, a piece of dried plum, some chopped walnuts, and a piece of candied orange peel at the end of each strip. Fold them into triangles by folding the dough over itself as if folding a flag. Place them on the sheet pan. Brush the tops of the triangles with butter and a final sprinkling with sugar.
  • Bake for 10 to 12 minutes, until the phyllo is golden brown. Let cool and serve within 6 hours sprinkled with powdered sugar.

1 to 1 1/2 pounds small ripe Italian plums, halved and pitted
2 tablespoons sugar
2 tablespoons plum eau de vie, plain eau de vie or brandy
1/2 cup flour
Large pinch of sea salt
1/3 cup toasted chopped almonds
1/4 cup almond paste
1/4 cup light-brown sugar
Vanilla ice cream, for serving

Steps:

  • Preheat oven to 375 degrees. Butter a 9 or 10-inch shallow round baking dish. Place plums, cut side up, in the dish; they should fit snugly in a single layer. Sprinkle with sugar and brandy.
  • In a food processor, pulse flour, salt, almonds, almond paste and brown sugar until it is like coarse meal. Then add chilled butter cubes and pulse until mixture looks more like peas.
  • Sprinkle almond mixture over plums and bake in oven until bubbling and browned, about 20 to 30 minutes. Let sit for 10 to 20 minutes before serving, to cool and set. Serve with scoops of vanilla ice cream or whipped cream with a little créme fraéche folded in.

7 tablespoons cold unsalted butter, cut into chunks

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Place plums in a baking dish. Add 1/4 cup sugar, orange zest, orange juice, cinnamon, and nutmeg; toss to mix.
  • Bake in the preheated oven for 5 minutes.

1/4 teaspoon salt
1 1/4 cups all-purpose flour
1/2 cup chilled (1 stick) unsalted butter, cut into small pieces
3/4 teaspoon ground cinnamon
1/4 teaspoon baking powder
2 large eggs
1/2 cup heavy cream
1/2 teaspoon almond extract
1/2 teaspoon pure vanilla extract
1 1/2 pounds dark plums (about 6), pitted and cut into eighths
Whipped cream, for serving (optional)

Steps:

  • Preheat the oven to 375 degrees. In a medium bowl, whisk together 1 cup sugar, salt, and flour. Using a pastry blender, cut in the butter until the mixture resembles coarse meal. Set aside half the mixture. Add the cinnamon, baking powder, and 1 egg to the other half. Mix until well blended. Press into the bottom of a 9-inch shallow baking dish. Bake until firm and golden brown, about 15 minutes.
  • While the pastry is baking, whisk together 1/4 cup sugar, the remaining egg, the cream, and the almond and vanilla extracts in a small bowl; set aside.
  • Remove the pastry from the oven, and top with plum slices. Pour the cream mixture over the plums, and sprinkle with reserved butter-flour mixture. Sprinkle with the remaining 2 tablespoons sugar, and bake until topping is golden brown and the plums are tender, 20 to 30 minutes. Serve warm or at room temperature with whipped cream.

  • Mix flour, oats, 1/3 cup sugar and cinnamon in medium bowl. Add butter and rub with fingertips until mixture forms coarse meal. Press with fingertips until mixture begins to form moist clumps. (Crumb topping can be prepared 1 day ahead. Cover and refrigerate.)
  • Preheat oven to 350°F. Toss plums, remaining 1/2 cup sugar and brandy in medium bowl. Transfer to 9-inch deep-dish pie dish. Sprinkle crumb topping over. Bake until fruit bubbles and topping browns, about 1 hour. Cool slightly. Serve with ice cream.
