Steps:
- Soak the bread crumbs in the milk while you prepare the other ingredients.
- Put the beef and pork into a large bowl. Add the onion, butter, eggs, and parsley and season well with salt and pepper. Put the soaked bread crumbs into the bowl and mix it all together well with your (clean) hands. Form the mixture into meatballs about the size of ping pong balls.
- Heat about 1/4-inch of oil in a skillet over medium heat. Fry the meatballs until they are browned on all sides and cooked through, about 15 minutes.
SIMPLE CAKE POPS
Everyone loves cake pops! They are simple to make, and you can create anything for any occasion. They are also nice small bites of dessert instead of large slices of cake or pie. Can be made up in partial batches and the remaining ingredients stored for a few weeks.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Beat cake mix, water, eggs, and oil in a bowl using an electric mixer on low speed for 30 seconds. Increase speed to medium and beat for 2 minutes more. Pour batter into the prepared baking dish.
- Bake in the preheated oven until a toothpick inserted in the center comes out clean, 28 to 33 minutes. Cool completely, at least 1 hour.
- Crumble cake into a large bowl. Stir frosting into cake crumbles until mixture is sticky but not too smooth. Chill in refrigerator, at least 30 minutes.
- Roll cake mixture into 1 1/2-inch balls and arrange on a baking sheet. Place 1 lollipop stick into each ball.
- Melt about 1/4 cup chocolate candy melts in a microwave-safe bowl in the microwave, about 20 seconds. Dip each cake pop in the melted chocolate. Repeat melting chocolate and dipping remaining cake pops. Decorate pops with decorating icing.

GARLIC MEATBALL PO'BOYS

- In a large mixing bowl, combine the ground meats, chopped yellow onion, chopped garlic, green onions, egg, bread crumbs, Worcestershire, 1 teaspoon of the salt, and 1/2 teaspoon of the cayenne. Mix well with your hands and form into 16 meatballs. Insert a garlic clove in the center of each meatball and pinch the meat around it. Combine the flour and Creole seasoning in a shallow plate. Roll the meatballs evenly in the flour mixture, tapping off any excess. Reserve any remaining flour. In a large skillet, heat the oil over medium heat. Add the meatballs and brown evenly, using a spoon to turn them. Remove the meatballs from the pan and set aside. With a wooden spoon, scrape the bottom of the pan to loosen any brown bits. Stir in the reserved seasoned flour. Stir constantly for 3 to 4 minutes to make a dark brown roux. Add the sliced onions and season with the remaining 1/2 teaspoon salt and 1/4 teaspoon cayenne. Cook, stirring constantly, until the onions are slightly soft, about 2 minutes. Slowly pour in the beer and water and mix well. Bring to a boil and return the meatballs to the skillet. Reduce the heat to medium-low and simmer, uncovered, for about 1 hour, until the gravy is thick, turning and basting the meatballs with the pan gravy about every 15 minutes. Remove from the heat and skim off any fat that has risen to the surface. Add the parsley. Cut the loaf of bread lengthwise in half. Spread one half with the mustard and the other half with the mayonnaise. Arrange the provolone on the bottom half of the bread, overlapping the slices, then arrange the meatballs on top of the cheese. Spoon the gravy over the meatballs. Top with the remaining bread half, cut into 6 equal portions, and serve immediately.
- Combine all ingredients thoroughly.

- Preheat oven to 375 degrees F (190 degrees C). Mix the onions and celery together in the bottom of a large roasting pan.
- In a large bowl, thoroughly mix together the veal and pork with your hands; lightly mix in cream of mushroom soup, cracker crumbs, bread crumbs, evaporated milk, eggs, salt, marjoram, onion flakes, and pepper until well combined. Form the mixture into meat balls, dipping your hands in water between making the balls. Place the meat balls gently into the roasting pan on top of the onions and celery; cover the pan with foil.
- Bake in the preheated oven for 1 hour and remove foil. Carefully separate the meat balls where they have stuck together and return the pan to the oven until the meat balls are browned, turning every 15 minutes, 30 to 45 additional minutes.

MARVELOUS MEATBALL SUBS

- Preheat oven to 450 degrees F.
- Place ground sirloin in a large mixing bowl and punch a well into the center of meat. Fill well with the egg, bread crumbs, onion, garlic, red pepper flakes, Worcestershire, parsley, cheese, and a little salt and pepper. Stir up meatball ingredients until well combined, don't overmix. Divide mix into 4 equal parts, roll each part into 4 balls and space equally onto a nonstick baking sheet. Put meatballs in oven and roast about 12 minutes. Break a meatball open and make sure meat is cooked through before removing from the oven.
- Heat a medium saucepan over medium heat. Add oil and garlic. When garlic starts sizzling, add herbs and crushed pepper. Allow oil to infuse for half a minute, then stir in the tomatoes and season sauce with salt and pepper. Bring sauce to a simmer, reduce heat, and simmer until meatballs are removed from oven.
- Combine meatballs and sauce and pile into sub rolls, 4 meatballs per sub. Top with shredded cheese and place under subs under broiler to melt cheese. Top with shredded basil or arugula. Enjoy!

PERFECT MEATBALLS
A traditional Italian meatball, slow cooked in a basic Pomodoro Sauce (see "Perfect Pomodoro Sauce"). The idea is to make these as moist and as un-meatloaf tasting as possible. - Grate the onion, set aside (will include a lot of juice, or water).
- Mince the garlic very finely, put the salt and olive oil onto it, and with the back end of a chef's knife, work the garlic into a paste.
- ** Alternative, or if you don't know how to do this, just mince the garlic and onions as finely as you can.
- In a large bowl, add the meat, onion, garlic, egg, bread crumbs, parm cheese, basil, pesto, 3 tbsp olive oil, garlic powder, salt and pepper.
- Mix by hand just to combine - do not work it too much.
- Form into balls between the size of a golf ball and a large egg, not working the meat too much. Make as much as you can, about 11-12 and put on a plate.
- Heat the 4 tbsp olive oil on high heat in a saute pan.
- Brown the meatballs on all sides, about 2-3 minutes per side.
- Place the already prepared pomodoro sauce in a crock pot, or a large pot on the stove, and carefully add the meatballs.
- Cook for at least 3 hours on low (I cook mine for around 6 hours in a crock pot), stirring occasionally.
PO-PO'S MEATBALLS
Steps:
- Combine first 8 ingredients (except additional 1 tbsp soy sauce) in mixing bowl and mix well with hands. Add vegetable oil to frying pan, about 1 inch deep. Heat until almost smoking. (Note: consider cooking meatballs directly in Dutch oven instead of using a separate frying pan.) Form meatballs, about the size of a golf ball. (Note: use a small bowl of water to keep hands moist. Reserve water to add to pot later.) Place in hot oil. Cook until golden brown on both sides. (Note: meatballs do not need to be cooked all the way through. Meatballs can be medium rare, with some soft give when you squeeze them.) If using frying pan, pour off oil, reserving brown bits. If using Dutch oven, pour off oil and keep browned bits in the pot. Rinse and squeeze out preserved vegetable. Chop roughly. Place preserved vegetable in the bottom of Dutch oven. Add browned bits from frying pan, if using. Place meatballs on top. Add ginger and sugar to pot. Pour reserved water over meatballs, plus an additional 1/2 cup or so. (Note: recipe can be prepared a couple of hours ahead until this point.) Add 1 tbsp soy sauce. Heat water to boil and simmer for 30 minutes to 1 hour. Taste for sugar and add more if necessary. Additional Notes: If halving the recipe, still use 1 egg. If omitting bread crumbs, use less water. When mixing, meatball mixture should approximate the texture of the meatballs - add more water if needed to make it moist.
