Poblano Cheese Dip

1 poblano pepper
2 jalapeño peppers
2 garlic cloves
8 oz Philadelphia Cream Cheese
⅓ cup Mexican crema or sour cream
½ cilantro bunch
¼ cup fresh lime juice (approximately 2 - 3 limes)
½ tsp sea salt or kosher salt

Steps:

  • Clean and rinse your peppers and cilantro before incorporating them into the recipe.
  • Remove the stems from the peppers. Discard the stems.
  • To reduce the heat in this recipe, halve the peppers and remove the seeds. If you like spicy quesos like me, simply skip this step.
  • Roughly chop ½ of a cilantro bunch, including its stems.
  • Halve limes and juice into a ¼ measuring cup.
  • Using a blender, food processor, or hand blender, add all the ingedients and blend until smooth.
  • Taste the crema and determine whether or not it needs additional salt. If you would like additional salt in this recipe, add it gradually and in small increments to not over salt the dip. If you have over salted the dip, add more lime juice to neutralize the salt.
  • Pour the poblano cheese dip into a beautiful serving bowl and enjoy with chips or veggies. Happy dipping!

3 poblano peppers
extra-virgin olive oil
1 tablespoon unsalted butter
1 tablespoon all-purpose flour
2 tablespoons minced onion
milk
1 ½ cups shredded Monterey Jack cheese
2 ounces cream cheese, softened
½ teaspoon kosher salt
¼ teaspoon smoked paprika
2 grinds fresh cracked black pepper
1 pinch red pepper flakes
1 pinch cayenne pepper
1 (16 ounce) package corn chips (such as Tostitos® Cantina)

Steps:

  • Preheat an outdoor grill for high heat (400 degrees F -200 degrees C) and lightly oil the grate.
  • Lightly spray or brush poblano peppers with olive oil. Cook peppers on the preheated grill, turning every couple minutes, until charred and softened, 5 to 8 minutes.
  • Remove peppers from the grill and place in a large resealable plastic bag to steam, about 15 minutes. Peel off the charred skins. Discard seeds and chop peppers.
  • Melt butter in a saucepan over medium-high heat. Add flour and cook, stirring, about 1 minute. Add onion and cook for 1 minute more. Whisk in milk slowly and cook, stirring constantly, until slightly thickened, 3 to 5 minutes. Reduce heat to low and add Monterey Jack cheese, cream cheese, salt, paprika, pepper, red pepper flakes, and cayenne; whisk until the cheeses have melted and are blended in, about 5 minutes. Stir in chopped poblano peppers.

4 whole poblano peppers
12 ounces cream cheese
1 lb Velveeta cheese
1 bunch green onion
1 bunch cilantro
3 cups fresh tomatoes
2 whole serrano peppers
1 teaspoon lime juice

Steps:

  • Roast, peel and dice Poblano peppers.
  • In a stock pot, combine cream cheese and velvetta on a low heat.
  • Stir occasionally until completely melted and smooth.
  • Chop green onions and tomatoes.
  • Small dice Serrano peppers, remove seeds.
  • Thoroughly clean and chop cilantro (removing sprigs from the main stem).
  • Combine all veggies together and add lime juice.
  • When cheese is melted and smooth, stir in all veggies.
  • Simmer until hot throughout.

Nonstick cooking spray, for spraying the baking dish
1 tablespoon unsalted butter
1 cup chopped onion
3 poblano peppers, charred, peeled, deveined, seeded and cut into strips (see Cook's Note)
One 14-ounce can artichoke hearts, drained
4 ounces cream cheese
1/2 cup shredded mozzarella
1/2 cup sour cream
2 tablespoons mayonnaise
Salt and freshly ground black pepper
Chicharrones (pork cracklings) or pita chips, for serving

Steps:

  • Preheat the oven to 350 degrees F. Spray an 8-by-8-inch glass baking dish with cooking spray.
  • In a heavy saucepan, melt the butter. Add the onion and cook until translucent, about 4 minutes. Add the poblano rajas (strips) and saute for about 2 minutes. Let cool.
  • Put the artichoke hearts, cream cheese, mozzarella, sour cream and mayonnaise in a food processor and process until smooth. Add the onion-poblano mixture and pulse a couple times until combined, making sure to leave the mixture a little chunky. Season with salt and pepper.
  • Transfer the mixture to the prepared baking dish and bake until golden brown and melted, about 15 minutes.
  • Serve with chicharrones or pita chips.

3 cups diced white onion (from 1 large onion)
3 fresh poblano chiles, seeds and ribs removed, diced (3 cups)
1 tablespoon coriander seeds, toasted and coarsely ground
Coarse salt
1/4 cup fresh lime juice (from 2 to 3 limes)
4 ounces cream cheese, room temperature
1/2 cup sour cream
Cayenne pepper, for sprinkling
Cut-up cucumbers, jicama, and radishes, or chips, for serving

Steps:

  • Heat oil in a large skillet over medium heat. Add onion, chiles, coriander, and 1 teaspoon salt. Saute, stirring occasionally, until onion and chiles are tender and caramelized, 25 to 30 minutes. Let cool completely.
  • Stir together lime juice, cream cheese, and sour cream in a large bowl, using a rubber spatula, until smooth. Stir in onion mixture. Season with salt if necessary. Refrigerate at least 1 hour and up to 1 day. Sprinkle with cayenne. Serve with cut-up vegetables or chips.

These are a delicious side dish (but a rich one), if you don't mind a mildly chiloso (hot) pepper - less than jalapenos. The mellow cheese is the perfect accompaniment! Double or triple the recipe, as you please. These are not volcanic, but not for people who can't eat nachos with at least some jalapenos on them. Use Mexican cheeses if they are available in your area.

4 fresh poblano chile peppers
2 cups oil for frying, or as needed
8 ounces queso asadero
½ cup all-purpose flour for coating

Steps:

  • Rinse the poblano peppers, and remove the stem and core. Remove any remaining seeds. Heat a heavy skillet over high heat. Place peppers in the skillet, and cook until blistered and blackened. Turn frequently to blacken all of the skin. You want to make sure that no part of the pepper remains crispy. Place the peppers into a paper bag, fold the top closed, and let the peppers steam for a few minutes to loosen the skin.
  • Heat about 1/2 inch of oil in a large heavy skillet over medium-high heat.
  • Rinse the peppers under cold running water to remove as much of the black skin as possible. Don't get prissy about it; you can eat the skins, even if they're black - most people like some of the black skin. Next, WASH your hands well with soap and water, or you'll be sorry later when you touch your eyes or mouth.
  • Insert a nice thick piece of cheese into each pepper, and secure the opening with a toothpick. Coat the peppers in flour. Gently place the peppers into the hot oil, and reduce the heat to medium. Fry for 3 to 5 minutes per side. Don't try to turn them over until the bottom has a firm crust on it. Try to avoid letting the cheese run out. When both sides are slightly browned and the coating is firm, remove from the pan, and drain on paper towels.
