These bbq pulled pork stuffed poblanos work as a low carb appetizer, snack or even dinner. The poblanos have bit of heat, while the bbq pork has sweetness and spice and the cheddar cheese pulls it all together. Only 4.3g net carbs per stuffed pepper.

ROASTED POBLANOS STUFFED W/ PULLED PORK CHILI VERDE

Roasted Poblanos Stuffed w/ Pulled Pork Chili Verde image

Pulled pork chili verde stuffed into roasted poblano peppers and loaded with cheese - what's not to love!!!

Provided by Mellissa Sevigny

Categories     Entree

Number Of Ingredients 17

1 tsp avocado oil
3 lbs Pork shoulder or butt, trimmed of excess fat and cut into 2 inch chunks
1 medium onion, chopped
5 garlic cloves, chopped
1 16 oz jar of tomatillo salsa
3 Tbsp of canned chipotle peppers chopped
1 Tbsp ground cumin
1 tsp ground coriander
3 cups low sodium chicken broth
juice of one lime
salt & pepper to taste
6 poblano peppers
3 cups pork (or any) chili
1 1/2 cups shredded cheddar cheese
3 Tbsp chopped cilantro
2 Tbsp chopped red onion
1 Tbsp chopped jalapeno or habanero

Steps:

  • If you have a pressure cooker, see paragraph above. If not, continue with step 2.
  • Preheat oven to 300 degrees (F).
  • Heat oil in a dutch oven or heavy-bottomed oven proof pot (something that will fit into your oven) over high heat.
  • Season pork with salt and pepper and add to the pot turning until browned on all sides. You may have to do this in batches. Remove all the meat from the pan, pour off fat and discard.
  • Return pot to the burner (turn the heat down to medium) and add onions and garlic, cooking for several minutes until softened. Add the chipotles, salsa verde, cumin, and coriander to the pot, stirring until combined. Add the pork, any juices, and the chicken broth to the pot and bring to a boil.
  • Cover the pot and transfer to the oven to cook for 2 to 2 1/2 hours until the pork is tender enough to easily pull apart.
  • Remove pot from the oven, skim off any fat on the surface and pull pork out of pot and onto a baking sheet.
  • Using forks, shred the pork and set aside. Strain any nasty bits from the sauce and return the pot to stove (uncovered) over medium high heat.
  • Cook for about 10 minutes until the sauce reduces and thickens. Add the shredded pork and lime juice. Adjust seasoning with salt and pepper.
  • Wash the poblanos and place on a baking sheet. Broil in the oven, turning until all sides are blackened. Remove from the oven and let cool. (Set the oven to 350 F)
  • Gently remove the stem, seeds, and as much of the skin as you can from the peppers. Cut or tear down the center so the pepper will lay flat (sorry I didn't take any photos of the process!).
  • Place about 1/2 cup of chili in the center and sprinkle with cheddar cheese. Fold the pepper around the filling and use a skewer or several toothpicks pierced through the top to keep them closed. Place on a baking sheet and repeat with the rest of the peppers.
  • Sprinkle some more cheese over the peppers and bake in the oven for about 15-20 minutes or until all of the cheese has melted and they are heated through.
  • Remove and garnish with chopped onions, cilantro, and jalapenos or habaneros. Serve with your choice of sour cream, guacamole or avocado slices, and more salsa verde.

Yield Makes 8 (main course) servings

Number Of Ingredients 37

For pork
1 1/2 lb boneless pork shoulder, cut into 1 1/2-inch pieces
1 teaspoon salt
1 (1/2-inch-thick) crosswise slice white onion
2 garlic cloves, peeled
1 sprig fresh thyme
For filling
1 cup finely chopped white onion
1 tablespoon finely chopped garlic (about 3 large cloves)
2 tablespoons olive oil
2 tablespoons lard or vegetable oil
2 lb fresh tomatoes, cored and coarsely chopped, or 1 (28-oz) can whole tomatoes, coarsely chopped, with juice
1 sprig fresh thyme
2 Turkish bay leaves or 1 California
1 (4-inch) cinnamon stick (preferably Mexican)
1/4 teaspoon ground allspice
1/8 teaspoon ground cloves
1 pinch freshly grated nutmeg (optional)
1 tablespoon cider vinegar, or to taste
1 1/2 teaspoons sugar, or to taste
3/4 teaspoon salt, or to taste
1 small peach
1/3 cup dried apricots, coarsely chopped
1/4 cup raisins
1/4 cup pine nuts
1/3 cup diced (1/3 inch) peeled green apple
1/2 cup diced (1/3 inch) peeled very ripe (black) plantain or firm banana
For sauce
1 1/2 cups walnut halves (5 oz)
3/4 cup slivered almonds (2 1/2 oz) plus additional if necessary to thicken sauce
1 1/2 cups whole milk plus additional if necessary to thin sauce
6 oz queso fresco or very mild soft goat cheese, crumbled (1 1/2 cups)
1 tablespoon sugar, or to taste
1/4 teaspoon salt, or to taste
For chiles
8 large fresh poblano chiles (2 lb total), roasted and peeled
1/2 cup fresh pomegranate seeds (from 1 pomegranate)

Steps:

  • Cook pork:
  • Put pork in a 3-quart heavy saucepan with salt, onion slice, garlic, thyme, and enough cold water to cover by 1/2 inch and bring to a boil, skimming foam. Reduce heat and simmer, partially covered, until pork is very tender, 1 to 1 1/2 hours. Cool pork in liquid, uncovered, 15 minutes. Drain, then cut pork into 1/3-inch dice. Discard onion, garlic, and thyme.
  • Make filling:
  • Cook onion and garlic in oils in a 12-inch heavy skillet over moderately low heat, stirring, until softened, 5 to 8 minutes. Add tomatoes, thyme, bay leaves, cinnamon, allspice, cloves, nutmeg, 1 tablespoon vinegar, 1 1/2 teaspoons sugar, and 3/4 teaspoon salt and simmer, uncovered, stirring occasionally, until tomatoes have broken down and sauce is slightly thickened, 20 to 30 minutes.
  • While tomatoes simmer, cut an X in bottom of peach, then immerse in boiling water until skin begins to loosen, 10 to 30 seconds. Transfer peach to a bowl of cold water to stop cooking, then peel, pit, and dice (1/3 inch).
  • Discard bay leaves, thyme sprig, and cinnamon stick from tomato mixture, then add diced pork and remaining filling ingredients and simmer, uncovered, stirring occasionally, until fruit is softened but still intact, 8 to 10 minutes. Season with additional salt, sugar, and vinegar.
  • Make sauce:
  • Purée walnuts and almonds in a blender with milk, cheese, 1 tablespoon sugar, and 1/4 teaspoon salt until smooth and silky, about 2 minutes. (Sauce should thickly coat back of a large spoon. If sauce is too thin, add more almonds and puré. If too thick, add more milk.) Season with salt and sugar.
  • Stuff and bake chiles:
  • Put oven rack in middle position and preheat oven to 350°F.
  • Cut a lengthwise slit in each chile and carefully cut out seeds with kitchen shears, leaving stem intact. (For milder heat, carefully cut out ribs also.)
  • Divide pork filling among chiles, then close, overlapping sides of openings slightly. Transfer, seam sides up, to a 13- by 9-inch shallow baking dish, then cover with foil and bake until just heated through, 15 to 25 minutes.
  • Transfer chiles to plates, carefully turning them seam sides down. Pour about 1/3 cup walnut sauce over each chile, leaving some of chile visible, then sprinkle chiles with pomegranate seeds. Serve chiles warm or at room temperature.

CHILES EN NOGADA (MEXICAN STUFFED POBLANO PEPPERS IN WALNUT SAUCE)

Chiles en Nogada (Mexican Stuffed Poblano Peppers in Walnut Sauce) image

This traditional Mexican dish is from the area of Puebla. Poblano chiles are stuffed with a flavorful ground pork stuffing, then covered in a creamy walnut sauce and garnished with pomegranate seeds and parsley. The long list of ingredients is deceiving - this make ahead dish is quite easy once you have all your ingredients!

POBLANO-AND-CHEESE-STUFFED PORK CHOPS

Poblano-and-Cheese-Stuffed Pork Chops image

Oaxaca cheese is mild and creamy with a great stretch; we like to think of it as the perfect marriage of mozzarella and string cheese. It helps cut the heat from the poblano pepper in this dish, while also adding a creamy texture without completely oozing out of the pork chops.

Provided by Food Network Kitchen

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 12

4 small sweet potatoes (about 1 1/2 pounds)
1 large poblano chile pepper
4 ounces Oaxaca cheese, pulled into small pieces
1 scallion, thinly sliced
1 clove garlic, grated
1/2 teaspoon grated lime zest, plus lime wedges for serving
Kosher salt and freshly ground pepper
4 bone-in pork chops (8 to 10 ounces each; 3/4 to 1 inch thick)
1 1/2 teaspoons ground cumin
2 tablespoons extra-virgin olive oil
1/4 cup low-sodium chicken broth
2 tablespoons unsalted butter, cut into 4 pieces

Steps:

  • Preheat the oven to 450˚ F. Microwave the sweet potatoes 8 minutes. Transfer to a small rimmed baking sheet and bake in the oven until the insides are soft and creamy, 20 to 25 minutes.
  • Meanwhile, char the poblano directly on a stovetop burner over medium-high heat (or broil the poblano), turning, until blackened in spots, 6 to 8 minutes. Transfer to a cutting board, discard the stem and seeds and thinly slice. Combine in a bowl with the cheese, scallion, garlic, lime zest and a pinch each of salt and pepper.
  • With your knife parallel to the cutting board, cut a long slit into the meaty side of each pork chop going almost to the bone, 2 to 2 1/2 inches deep. Stuff the pork with the poblano mixture and season with salt, pepper and the cumin.
  • Heat the olive oil in a large ovenproof nonstick skillet over medium-high heat. Add the pork and cook, turning once, until well browned, 5 to 7 minutes. Carefully add the chicken broth and transfer the skillet to the oven. Cook until the pork is cooked through but still a little rosy near the bone, 8 to 10 minutes.
  • Divide the pork chops and sweet potatoes among plates. Cut a slit in the top of each sweet potato and squeeze the ends together to open. Top with the butter and season with salt and pepper. Top the pork with the pan juices and serve with lime wedges.

PORK CHOPS STUFFED WITH CHEDDAR CHEESE AND POBLANO PEPPERS

Pork Chops Stuffed With Cheddar Cheese and Poblano Peppers image

Brined and stuffed boneless chops. A cast-iron skillet recipe by "Cooking for Geeks: Real Science, Great Hacks, and Good Food", Jeff Potter.

Provided by gailanng

Categories     Pork

Time 1h40m

Yield 2-4 serving(s)

Number Of Ingredients 8

2 -4 boneless pork chops
1 poblano pepper, roasted then diced to equal 1/4 cup
1/4 cup cheddar cheese or 1/4 cup monterey jack cheese, cut into small cubes
1/2 teaspoon salt
1/2 teaspoon freshly grated black pepper
vegetable oil
4 cups water
2 tablespoons salt

Steps:

  • In a container, mix 2 tablespoons salt with 4 cups cold water. Stir to dissolve salt. (The brine and chops can be placed in a Ziploc bag, removing air to completely submerge chops.) Place pork chops in the brine and refrigerate for an hour. Then remove them from the brine and pat dry with paper towels. Lay out the chops on a clean plate to allow them to come to room temperature.
  • Using a small knife, make a small incision in the side of the chop, pushing the blade into the center of the chop and moving the blade side to side to create a pocket while keeping the "mouth" as small as possible.
  • Create a filling by combining the poblano, cheese, salt and pepper. Stuff about a tablespoon of filling into each pork chop. Rub the outside of the chops with oil and season with salt and pepper.
  • Heat a cast-iron skillet over medium heat to the point where a droplet of water skitters around the pan. Place chops in the pan, cook about 5 minutes per side. The internal temperature should register about 145 degrees. Remove chops from the pan and allow them to rest for 5 minutes. Good served with rosemary mashed potatoes.
