Pretzel Bratwurst Bites image

Put bratwurst slices in the middle of pretzel bites to create a new and delicious snack made easy with pizza dough. Serve with mustard.

6 cups water
⅓ cup baking soda
1 (13.8 ounce) package refrigerated pizza dough
12 links smoked bratwurst
1 pinch kosher salt

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Lightly grease a baking sheet or line with foil.
  • Stir together water and baking soda in a large saucepan. Bring to a boil.
  • Meanwhile, turn dough out onto a lightly floured surface. Roll into a 10x12-inch rectangle. Cut dough into twelve 1-inch strips. Wrap each strip tightly around a bratwurst in a spiral, pinching edges to seal and leaving about 1/2 inch of bratwurst peeking out of each end.
  • Add 3 wrapped bratwurst at a time to the boiling water. Boil for about 30 seconds. Transfer bratwurst to the prepared baking sheet. Sprinkle with salt. Repeat with remaining wrapped bratwurst.
  • Bake bratwursts until golden brown, about 12 minutes. Cut each bratwurst crosswise into thirds. Serve with mustard.

Pretzel Wrapped Bratwurst Recipe - (4/5) image

7 cups flour
1 tsp salt
1 TBS yeast
1 1/2 cups warm milk
3 TBS melted butter
10 cheddar bratwurst (or regular - or 12 hotdogs)
2 quarts water
4 TBS baking soda
1 TBS salt

Steps:

  • 1. Combine the warm and yeast in a small bowl. Lightly stir and set aside for about 5-7 minutes. 2. Combine the flour and salt in stand mixer bowl 3. Add the warm butter to the yeast mixture. 4. In a stand mixer with a dough hook, combine the wet ingredients with the dry and mix on low until thoroughly combined and the dough starts to pull away from the sides of the bowl. Knead for another 2 minutes. 5. Remove the dough from the bowl, spray with cooking spray, return the dough to the bowl and cover. 6. Allow to rise until it is doubled in size. 7. Once risen, punch down the dough and knead for 1 minute. 8. Cut dough into 10 equal pieces (12 for hotdogs). 9. Roll into long ropes about 18 inches in length. 10. Wrap each bratwurst (or hotdog) from end to end with the dough. Press seams together. 11. Allow to rest for about 15 minutes, while the oven preheats to 400 degrees and you boil a large pot of water (with salt and baking soda). 12. Bring water to a roiling boil. 13. Place 2 buns into the pot and boil for 1 minute on each side. Remove from water and score the tops with a sharp knife. 14. Sprinkle lightly with salt. 15. When all buns have been boiled, bake them on a greased cookie sheet for 25-30 minutes until golden brown. 15. Enjoy with a side of ketchup or mustard.

Enjoy these tasty pretzels made using Pillsbury™ pizza crust. These bread options are filled with bratwurst and sauerkraut.

2 cooked bratwurst (from 14-oz package), finely chopped
1/2 cup sauerkraut, squeezed dry, chopped
1 can (13.8 oz) refrigerated Pillsbury™ Classic Crust Pizza Crust
1/4 cup baking soda
1 egg
1 tablespoon water
1/2 teaspoon caraway seed
Mustard, as desired

Steps:

  • Heat oven to 400°F. Line large cookie sheet with cooking parchment paper.
  • In small bowl, mix bratwurst and sauerkraut; set aside. Unroll dough onto lightly floured surface; roll into 14x12-inch rectangle. Using pizza cutter, cut dough lengthwise into 4 strips.
  • Spoon about 1/4 cup of the bratwurst mixture onto long edge of each dough strip. Stretch dough over bratwurst filling; brush edges with water, and pinch to seal. Pick up ends of filled dough and stretch to make 24-inch rope.
  • To make pretzel shape, form each rope into U shape. Twist ends twice. Press down where dough overlaps in an "X" to hold shape. Pick up ends and fold over so they rest over bottom of U shape.
  • In medium microwavable bowl, microwave 2 cups water uncovered on High about 2 minutes or until hot. Add baking soda; stir until dissolved. Dip each pretzel, 1 at a time, into water mixture. Immediately remove from water with large pancake turner; let stand about 5 minutes. In small bowl, beat egg and 1 tablespoon water with whisk; brush pretzels with egg mixture.
  • Place pretzels on cookie sheet; sprinkle with caraway seed. Bake 11 to 15 minutes or until tops of pretzels are dark golden brown. Serve with mustard.

4 bratwurst
3 (12 ounce) cans light beer
5 tablespoons brown sugar
1 teaspoon cayenne pepper
6 slices bacon, cut in half

Steps:

  • Poke bratwurst several times with a small fork, and place into a saucepan with the beer. Bring to a boil over high heat, then reduce heat to medium, and simmer for 15 minutes. Remove the bratwurst from the beer, and allow to cool to room temperature.
  • Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil, and place a wire rack on top.
  • Toss the brown sugar and cayenne pepper together in a large bowl and set aside. Cut each bratwurst into three pieces, wrap each piece with half strip of bacon, and secure with a toothpick. Toss the bratwurst with the cayenne mixture to coat, then place onto the prepared baking sheet.
  • Bake in preheated oven until the bacon is brown and crisp, 25 to 35 minutes.

4 fresh bratwursts (1 lb.)
1 (12 ounce) bottle beer
1/4 lb sauerkraut
4 large flour tortillas (10 inch)
1/4 cup honey dijon mustard
4 slices smoked swiss cheese

Steps:

  • Place bratwurst and beer in medium saucepan and bring to a boil.
  • Reduce heat to low; cover and simmer 10 minutes.
  • Remove from heat and let bratwurst cool in beer.
  • Place bratwurst in center of grill and grill 5- 6 minutes or until browned.
  • Split each in half lengthwise.
  • Place sauerkraut down the center of each tortilla.
  • Place 2 bratwurst halves on top of filling.
  • Spread 1 tbsp mustard on bratwurst and top with a slice of cheese.
  • Fold two sides of tortilla over cheese and remaining bottom and top halves of tortilla to close.
  • Place tortilla wraps flap side down on grill.
  • Grill 3- 4 minutes or until browned and heated through, turning once halfway through grilling time.

  • Microwave the milk and water for about 30 seconds until warm but not hot and add to the bowl of an electric mixer fitted with a dough hook. Add melted butter, yeast and brown sugar. Mix until combined and let stand for 10 minutes until it becomes foamy. Add salt.
  • On low speed, add 2 cups of the flour and mix for 1 minute. Add more flour as needed until the dough is no longer sticky. Transfer to an oil rubbed bowl and cover with plastic wrap. Let rise for 30 minutes.
  • Return dough to mixing bowl and knead on medium-low speed for 10 minutes until dough is shiny and elastic. Return to oiled bowl, cover with plastic and let rise in a warm place for 1 hour or until doubled.
  • Bring 4 cups of water to a simmer in a large pot. Add bratwurst, beer, butter, onion and pepper. Cover and cook for 25 minutes. Drain the bratwurst. Cook bratwurst over direct heat on grill, turning for 2-3 minutes until browned. Let cool.
