- Place Fries in a large bowl. Pour honey-spice mixture over the fries. Toss to coat.
- Place fries on greased baking sheet. Bake at 450 degrees. Turn after 15 minutes, cook for an additional 15 - 20 minutes or until the outside is golden brown and slightly crisp.
PARSNIP-PUMPKIN SEED FRIES

- Preheat oven to 425 degrees. Pulse pumpkin seeds in a food processor until finely ground. Toss parsnips with oil and ground seeds in a large bowl until evenly coated; season with 1 teaspoon salt and pepper to taste. Arrange in a single layer on 2 rimmed baking sheets. Bake, rotating sheets and tossing parsnips halfway through, until golden brown and crisp, 20 to 25 minutes. Serve immediately.

- Make the crust: Pulse the flour, granulated sugar, salt, cinnamon, ginger, cardamom, nutmeg and allspice in a food processor to combine. Add the butter; pulse several times until it looks like coarse meal. Add the vinegar and 1/4 cup ice water; pulse a few more times until the dough comes together and forms a ball. Turn the dough out onto a piece of plastic wrap; press into a disk and wrap. Refrigerate until firm, at least 1 hour or overnight.
- Roll out the dough into a 12-inch round on a lightly floured surface. Ease into a 9-inch pie plate, pressing the dough into the bottom and up the side. Fold the overhanging dough under itself and crimp with your fingers or a fork. Freeze until firm, about 1 hour.
- Put a baking sheet on the middle oven rack and preheat to 375 degrees F. Line the crust with foil, then fill with pie weights or dried beans. Transfer to the hot baking sheet and bake until lightly golden around the edge, about 20 minutes. Remove the foil and weights and continue baking until the crust is golden all over, about 10 more minutes. Transfer to a rack and let cool completely; leave the baking sheet in the oven.
- Meanwhile, make the filling: Whisk the pumpkin puree, eggs, heavy cream, granulated sugar, vanilla, cinnamon, ginger, cardamom, nutmeg, allspice and salt in a medium bowl until well combined. Pour into the cooled crust and return to the hot baking sheet in the oven. Bake until set around the edge but the center still jiggles slightly, 50 minutes to 1 hour. Transfer to the rack and let cool completely.
- Make the whipped cream: Beat the heavy cream, brown sugar, vanilla and cinnamon in a large bowl with a mixer on medium-high speed until soft peaks form, 2 to 3 minutes. Serve the pie with the whipped cream.

- Preheat the oven to 350. Divide the dough in half. Roll out each half into a 10 inch circle on a lightly floured piece of parchment paper. The crust should be ¼ inch thick, if the circles are slightly smaller than 10 inches that is fine as long as the thickness is right. Spread the pumpkin butter evenly over one pie crust, leaving a ¼ inch border around the edges. Top with the second crust. Using a pastry cutter (or sharp knife) cut the dough into ¾ inch strips. Cut the strips in half to make fry shapes. Transfer the fries to a parchment lined cookie sheet. Combine the egg and one tablespoon of water and beat with a fork to mix. - For the crust:
- In a food processor cream together cream cheese, butter and sugar. Add vanilla and heavy cream and whiz again. Add flour and pulse until a very sticky dough forms. Remove from the food processor, wrap in plastic wrap and refrigerate overnight.
- Pumpkin pie filling
- In a small bowl combine all ingredients. Refrigerate until ready to use.
- Assembly
- Preheat oven to 350 degrees F.
- Remove pie crust dough from refrigerator and cut into two equal halves. Using a rolling pin roll out each dough half very thin on a generously floured work surface. Try to keep them approximately the same size.
- With a pastry cutter/roller cut out two squares the same size from the pie crusts. Place both pieces on a parchment lined baking sheet.
- Spread pumpkin pie mixture on one square. Don't over fill but don't make it too thin. Use common sense! Carefully place the remaining square of pie crust dough on the pumpkin layer.
- Lightly brush milk on the surface of the pie dough and sprinkle generously with turbinado sugar.
- Using a crinkle cut pastry roller (I do realize this is probably not the proper name of this gadget!) and cut dough into fry-size pieces. About 1/2 inch by 2 1/2 inches.
- Spread out fries on parchment leaving some space between each fry. Roll remaining dough and repeat process until all crust is used.
- Bake 18-20 minutes. Cool completely on baking sheet.
- Make the whipped cream
- In the bowl of a stand mixer using whisk attachment add all ingredients and whisk on high speed until stiff peaks form.
- Dip cooled Pumpkin Pie Fries in whipped cream. Eat and enjoy!!

- Add 1/4 cup honey, eggs, orange rind,& seasonings, adjust seasoning to your liking, mix well Pour parsnip mixture into the baked pie shell.
