PUMPKIN PIE WITH GRAHAM CRUST AND CANDIED PEPITAS

Pumpkin Pie with Graham Crust and Candied Pepitas image

For this take on traditional pumpkin pie, we spiced up the filling with a pinch of cayenne pepper. Candied pepitas -- pumpkin seeds removed from their hulls -- garnish each slice. Ground pepitas add a nutty flavor to the same crust used for our Yogurt-Plum Pie.

Provided by Martha Stewart

Categories     Pie & Tarts Recipes

Number Of Ingredients 11

1 small sugar pumpkin, halved, or 1 1/2 cups canned solid-pack pumpkin
Graham Crust
3 large eggs, lightly beaten
3/4 cup packed light-brown sugar
1 tablespoon cornstarch
1/2 teaspoon salt
1/4 teaspoon ground allspice
Pinch of cayenne pepper
Pinch of ground clove
1 1/2 cups evaporated milk
Candied Pepitas

Steps:

  • Preheat oven to 425 degrees. If using fresh pumpkin, roast pumpkin, cut side down, on a rimmed baking sheet until soft, 50 to 60 minutes. Let cool completely. Discard seeds. Scoop out flesh, and transfer to a food processor; process until smooth. Set aside 1 1/2 cups puree (freeze any remaining puree in an airtight container up to 1 month.)
  • Preheat oven to 350 degrees. Press crust mixture into bottom and up sides of a 10-inch metal pie plate. Freeze 15 minutes. Bake crust until dry and golden brown, about 20 minutes. Transfer to a wire rack; let cool completely. Reduce oven temperature to 325 degrees.
  • Whisk pumpkin and eggs in a bowl. Stir together brown sugar, cornstarch, salt, and spices in another bowl. Whisk into pumpkin mixture. Whisk in evaporated milk. Tap firmly on counter to release air bubbles. Let stand 20 minutes.
  • Place cooled crust on a rimmed baking sheet. Pour in filling. Tap to release air bubbles. Bake until set, 45 to 55 minutes. Transfer to a wire rack; let cool completely. Sprinkle with pepitas. Serve at room temperature or chilled.

Try Bobby Flay's recipe for pumpkin pie, complete with graham cracker crust, from Food Network.

Provided by Bobby Flay

Categories     dessert

Time 2h30m

Yield 1 (9-inch) pie, plus leftover filling

Number Of Ingredients 21

1 1/2 cups finely ground graham cracker crumbs
6 tablespoons butter, melted and slightly warm
1/4 cup granulated sugar
1/4 teaspoon ground cinnamon
2 whole eggs
2 egg yolks
1/4 dark brown sugar
1/4 cup granulated sugar
3 tablespoons melted unsalted butter
1 1/2 cups pumpkin puree
1 1/2 cups heavy cream
1 1/4 teaspoons ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon fine salt
1/2 vanilla bean, split, seeds scraped and reserved
Bourbon-Maple Whipped Cream
1 1/4 cups very cold heavy cream
2 tablespoons Grade B maple syrup
1 to 2 tablespoons bourbon (to your taste)

Steps:

  • For the crust:
  • Preheat the oven to 350 degrees F.
  • Add all the ingredients for the crust to a food processor and pulse until combined; it should feel like wet sand, and just come together.
  • Spread the mixture evenly into a 9-inch pie pan, using your finger tips or the flat bottom of a glass. Firmly press the mixture over the bottom and sides of the pan.
  • Put the pan on the middle rack of the oven and bake until the crust is light brown and firm to the touch, about 10 to 15 minutes. Remove from the oven and let cool.
  • For the filling:
  • Preheat the oven to 275 degrees F.
  • Whisk together the eggs, yolks and sugars in a large bowl. Add the butter, pumpkin, cream, spices, salt and vanilla seeds and whisk to combine. Strain the mixture into a bowl.
  • Pour the strained mixture into the baked pie crust and bake until almost set, about 1 1/2 hours. Remove and let come to room temperature. Refrigerate until chilled, if preferred.
  • Cook's Note: The filling makes more than what is needed to fill the pie shell. You are able to freeze the excess. We made a double batch and it filled 3 pie shells very comfortably.
  • For the whipped cream:
  • Combine the cream, vanilla seeds, syrup and bourbon in a large chilled bowl and whip until soft peaks form.
  • Garnish each piece of pie with a dollop of the whipped cream before serving.

FRESH PUMPKIN PIE WITH SALTY ROASTED PEPITAS

Fresh Pumpkin Pie with Salty Roasted Pepitas image

I love pumpkin pie so much that I've requested it as my birthday "cake" every year since I was about thirteen. I happen to have been born in October, so that helps my choice make some sense. I am also fortunate enough to be married to Dave, whom I refer to as a pie guru. The point is, I've eaten a lot of pumpkin pie, so I know what I'm talking about when I say that this is the best pumpkin pie ever. If someone feels otherwise, I am ready for a throwdown, because I can guarantee that their version does not have a grainy cornmeal crust and salty, crunchy pumpkin seeds on top. And without those elements, there's just no match.

Yield Makes one 9-inch pie

Number Of Ingredients 21

Crust
1 1/4 cups all-purpose flour
1/4 cup cornmeal
1 tablespoon sugar
1/2 teaspoon table salt
8 tablespoons (1 stick) cold unsalted butter, cut into pieces
3 tablespoons ice water
1 large egg yolk
Pepitas
1/2 cup raw pumpkin seeds
1/2 teaspoon table salt
1/4 teaspoon canola oil
Filling
1 1/2 cups half-and-half
2 large eggs
1 15-ounce can pumpkin puree
3/4 cup packed light brown sugar
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon table salt
Pinch of ground cloves

Steps:

  • 1. To make the crust, combine the flour, cornmeal, sugar and salt in the bowl of a food processor and pulse to combine. Add the butter and pulse 4 or 5 times, until the mixture resembles coarse crumbs.
  • 2. In a small bowl, mix together the ice water and egg yolk. Add the egg mixture to the food processor, and pulse until the crumbs begin to climb the side of the bowl and hold their shape when pressed together. Turn the dough out onto a lightly floured work surface. Using your hands-and a little muscle-form the dough into a 5-inch-diameter disk. Wrap it in plastic wrap and refrigerate it for at least 1 hour before rolling.
  • 3. Unwrap the dough, and using a rolling pin, roll it out on a lightly floured work surface to form an 11-inch circle. Working quickly and carefully, line a 9-inch pie dish with the dough. With your fingertips, make sure that the edge of the pie is smooth and even. Refrigerate it for 20 minutes.
  • 4. Preheat the oven to 350°F.
  • 5. Remove the pie dish from the refrigerator. Line the crust with tin foil, making sure to cover the sides, and fill it with dried beans or pie weights. Bake for 15 minutes. Rotate the dish and bake for another 15 minutes, or until the sides are somewhat firm and hold their shape. Remove the foil and bake for 6 minutes, until the bottom of the crust looks dry and the shell is a very pale golden color. Remove the dish from the oven and let the crust cool. Leave the oven on.
  • 6. To make the pepitas, stir together the pumpkin seeds, salt, and oil in a small bowl. Scatter the seeds onto a small baking sheet and toast in the oven for 12 to 15 minutes, until the seeds are slightly toasted. Remove the baking sheet from the oven and let the pepitas cool.
  • 7. To make the filling, mix together the half-and-half and eggs in a medium bowl. Add the pumpkin puree and mix well. Then add the brown sugar, cinnamon, ginger, salt, and cloves, and mix well. The filling will be very runny. Pour the filling into the pie shell. Sprinkle the pepitas on the filling.
  • 8. Bake for 25 minutes. Rotate the dish and bake for 20 more minutes, or until the center of the pie jiggles just a bit when you touch the oven rack. Transfer the dish to a wire rack and let the pie cool completely.

PUMPKIN BARS WITH GRAHAM CRACKER CRUST

Pumpkin Bars with Graham Cracker Crust image

This pumpkin bars recipe was given to me by a very dear friend. A graham cracker crust topped with a cream cheese mixture, topped with a pumpkin mixture.

Provided by SHARYL4

Categories     Desserts     Cakes     Pumpkin Cake Recipes     Pumpkin Bar Recipes

Time 3h

Yield 24

Number Of Ingredients 14

¾ cup graham cracker crumbs
⅓ cup white sugar
½ cup unsalted butter, melted
1 (8 ounce) package cream cheese, softened
¾ cup white sugar
2 large eggs
1 (15 ounce) can pumpkin puree
¾ cup white sugar, divided
½ cup milk
3 large eggs, separated, divided
2 teaspoons ground cinnamon
½ teaspoon salt
¼ cup cold water
1 (.25 ounce) envelope unflavored gelatin

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix cracker crumbs and sugar for crust together in a bowl. Stir in melted butter until combined. Pat into the bottom of a 9x13-inch baking dish.
  • Combine cream cheese, sugar, and eggs for cream cheese layer in a large bowl; beat with an electric mixer until light and fluffy. Pour over crust.
  • Bake in the preheated oven until filling is set and no longer jiggles, about 20 minutes. Remove from the oven and let cool, about 30 minutes.
  • While the crust and cream cheese layer are cooling, combine pumpkin puree, 1/2 cup sugar, milk, egg yolks, cinnamon, and salt for pumpkin layer in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until thick, about 5 minutes. Remove from the heat.
  • Pour water into a small saucepan over low heat. Sprinkle gelatin over top and stir until just dissolved. Stir into the pumpkin mixture and set aside to cool.
  • Beat egg whites in a glass, metal, or ceramic bowl until foamy. Gradually add remaining 1/4 cup sugar, continuing to beat until stiff and glassy. Fold into the pumpkin mixture. Pour over the cooled cream cheese layer and chill in the refrigerator until firm, about 2 hours. Cut into 24 bars.
