Today I have a quick and easy healthy rhubarb crumble recipe for you. You'll only need a few ingredients and you can freeze it for later.

2 cups Rhubarb
2 cup Strawberries
1 cup Blueberries
1/2 cup Sugar
2 Tbsp Lemon Juice
Cornstarch
Graham Crackers

Steps:

  • I placed 2 cups chopped rhubarb, 1 cup strawberries, 1 cup blueberries, 1/2 cup sugar, and 2 tablespoons lemon juice in a saucepan.
  • I cooked on medium heat and waited for the fruit to break down.
  • I decided to thicken it a little by making a mixture of 1 tablespoon cornstarch, and a little bit of water. I slowly stirred this into the rhubarb mixture. Once I got the consistency I desired, I removed the compote from the burner.
  • I placed graham crackers on the bottom of a square baking dish and poured the compote mixture on the top. I placed it in the refrigerator to set and cool.
  • You could alternatively place the compote on the bottom and sprinkled the crushed graham cracker on top.

Easy Rhubarb Crumble image

Nothing to say really but tried and tested this recipe and loved it so sharing! I love rhubarb, and this comes out great every time - a simple pudding that tasted really good! Try it!

Number Of Ingredients 6

500 g rhubarb, cut in 3cm pieces
60 ml water
100 g caster sugar
200 g plain flour
100 g butter, cubed
125 g demerara sugar

Steps:

  • Preheat oven to 180 degrees centigrade - gas 4.
  • Put the rhubarb in a 1.2 litre ovenproof dish. Sprinkle over the water and caster sugar.
  • Sift the flour into a bowl, add butter and rub with fingers until the mixture resembles breadcrumbs - or wizz in a blender! Then stir in the demerara sugar.
  • Spread the crumble mixture over the rhubarb BUT don't pat down too much!
  • Cook for 35-40 minutes until the top is golden brown and the rhubarb is bubbling at the edges.
  • Serve with ice cream / cream / custard -- or whatever you like!
