RACH'S "PUT A RING ON IT" PASTA BAKE IS A SHOWSTOPPER

Steps:
- Combine breadcrumbs with grated cheese and parsley
- Heat a pot of water to boil for pasta rings
- Heat a Dutch oven over medium to medium-high heat
- Add EVOO, 3 turns of the pan, add carrots, celery, onions, garlic and partially cover the pot
- Sweat the vegetables 5 minutes, add beef and season with salt, pepper, fennel seed and red pepper flakes and brown lightly, crumble into fine pieces
- Add a glass of red wine and let it absorb fully
- Stir in passata and simmer at lowest heat 1 hour, then add peas and basil then simmer 10 minutes more
- Remove from heat to cool to room temperature
- Cook pasta 2 minutes less than package directions in salted water, drain and cool, then add to sauce
- Preheat oven to 400˚F
- Spray or brush a large bundt or springform pan liberally with EVOO or spray with non-aerosol OO spray, add breadcrumb mixture to coat liberally and gently press into place along sides and bottom, reserving extra crumb mixture
- Fill pan with half the pasta, then nest in diced ham and cheese, top with remaining pasta and top that with remaining breadcrumb mixture
- Bake pasta 25 to 30 minutes mid-oven to golden and hot through
- Let stand 10 minutes, then invert carefully on large cake stand or serving platter or cutting board

- Preheat oven to 350°. Cook pasta according to package directions. , In a large bowl, mix Italian cheese blend, 1 cup Parmesan cheese, sour cream and salad dressing. Drain pasta; add to cheese mixture. Fold in spinach. Transfer to a greased 13x9-in. baking dish., Tear French bread into pieces; place in a food processor. Cover and pulse until crumbs form. Toss bread crumbs with oil, lemon zest, parsley, garlic salt and remaining Parmesan cheese. Sprinkle over pasta mixture., Bake, covered, 25 minutes. Uncover; bake until golden brown and bubbly, 5-10 minutes.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Coat a 9x13 baking dish with cooking spray.
- Bring a large pot of lightly salted water to a boil. Cook bow-tie pasta at a boil, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
- Meanwhile, melt butter in a saucepan over medium heat. Add cream cheese and ranch dressing mix; whisk until smooth. Slowly whisk in milk. Stir in Monterey Jack cheese; cook until cheese has melted and sauce has thickened, 5 to 10 minutes. Crumble 6 slices bacon and stir into sauce.
- Combine cooked pasta and shredded chicken in a large bowl. Pour sauce on top and mix until well combined. Transfer to the prepared baking dish. Top with Cheddar Jack cheese and crumble remaining 2 slices of bacon on top.
- Bake in the preheated oven until cheese has melted, about 20 minutes.

Love their steaks, and I love their version of this classic side dish to a thick, juicy steak. Sometimes I cheat and use 2 10 ounce packages of frozen, chopped spinach which I thaw and drain.

Steps:
- Melt 4 tablespoons butter in heavy medium saucepan over medium heat.
- Add flour and stir until light golden, about 7 minutes.
- Stir in onion, bay leaf and clove.
- Gradually whisk in milk.
- Whisk until mixture boils and thickens, about 10 minutes.
- Reduce heat to low and simmer 5 minutes longer, whisking frequently (sauce will be very thick).
- Remove bay leaf and whole clove.
- Cook spinach in large pot of boiling water just until wilted and tender, about 2 minutes.
- Drain.
- Transfer spinach to bowl filled with ice water to cool.
- Drain well.
- Roll up spinach in kitchen towl and squeeze out as much liquid as possible.
- Transfer spinach to processor and finely chop.
- Add spinach to warm sauce, simmer over low heat until spinach is heated through, stirring often, about 5 minutes.
- Stir in remaining 2 tablespoons of butter.
- Season to taste with salt and pepper and serve.

- In a large skillet, cook beef and onion over medium heat until no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in spaghetti sauce, diced tomatoes, mushrooms and Italian seasoning.
