100 g lettuce of your choice
80 g brie
120 g raspberries
50 g pecan nuts
200 g cucumber
2 tbsp balsamic crème*
Pepper and salt

Steps:

  • Rinse the raspberries and dry them.
  • Cut the cucumber and the brie into slices.
  • Divide the lettuce over two plates.
  • Put the brie, raspberries, pecan nuts and cucumber on top.
  • Sprinkle with some pepper and salt and divide the balsamic crème over the salad.

4 c. loosely packed mixed greens
2 scallions (sliced)
1/2 c. fresh raspberries
2 oz. brie cheese (sliced)
1/3 c. candied pecans
handful of puff pastry croutons
1 c. pecans
2 Tbsp. honey
1 Tbsp. sugar
1/3 sheet puff pastry
1 egg (beaten)
1/3 c. olive oil
1/3 c. balsamic vinaigrette
2 Tbsp. honey
1/2 tsp. cinnamon
1/2 tsp. dried basil

Steps:

  • Prepare dressing by mixing all ingredients together in a jar and shaking to combine.
  • Prepare candied pecans by combining all ingredients in a small bowl, spreading on a baking sheet lined in parchment paper, and baking 10 minutes at 375 degrees. Pecans will harden while they are cooling. **You will have extra.
  • Prepare croutons by cutting puff pastry into 1 inch squares, brushing with beaten egg and baking on a baking sheet lined in parchment paper 8-10 minutes at 375 degrees.
  • Assemble salad, including pecans and croutons. Drizzle with vinaigrette to taste.

2 cups fresh raspberries
1/3 cup red wine vinegar
1/2 cup light brown sugar
Pinch red pepper flakes
1 small wheel brie cheese
Crackers, for serving

Steps:

  • Preheat grill to medium-high heat.
  • Add raspberries, red wine vinegar, brown sugar, and pinch of red pepper flakes to a medium saucepan and bring to a boil over medium heat. Simmer for 25 minutes until thick.
  • Put the wheel of brie in center of the cedar plank. Scoop the raspberry syrup on top. Place cedar plank with cheese away from the flames on the grill. Cover the lid and cook for 20 minutes until the brie is soft and oozy to the touch. Remove from the grill and serve directly from the plank with crackers alongside.

1/2 cup raspberry preserves
1/4 cup fresh or frozen unsweetened raspberries, thawed
1/2 teaspoon finely chopped fresh rosemary leaves
1 sheet frozen puff pastry (half of 17.3-ounce package), thawed
1 13.2-ounce Baby Brie cheese (about 6 to 7 inches in diameter)
1 large egg, beaten to blend (for glaze)
Crackers and baguette slices

Steps:

  • Preheat oven to 400°F. Stir preserves, berries and rosemary in small bowl to blend. Season berry mixture with pepper. Roll out pastry on lightly floured surface to 12-inch square.
