2 refrigerated pie crusts (or make your own)
1/2 cup Raspberry Jam
1 egg yolk
1 teaspoon milk (or water)
White Icing and Sprinkles (for topping)

Steps:

  • Preheat oven to 350.
  • Cut pie dough into 6 evenly sized rectangles. Repeat with the second pie crust.
  • Lay parchment paper out onto a baking sheet and carefully place 6 of the rectangles 2″ inches apart.
  • With a fork gently poke 3-4 sets of small holes into rectangle pieces.
  • Spread 1 tablespoon of raspberry jam onto each rectangle.
  • Place a second rectangle over top each Raspberry filled rectangle.
  • Using a fork lightly press the edges of the rectangles together to make pretty crimped edges.
  • Using that same fork poke 3-4 sets of holes on the top rectangle pieces.
  • In a small bowl whisk the yolk of one egg and milk together. Lightly brush each pop tart with mixture.
  • Place in the oven and bake for 15 minutes or until golden brown.
  • Remove from oven and immediately drizzle icing and top with sprinkles.
  • Let cool and serve!

3 ½ cups all purpose flour
4 tablespoons sugar
1 tablespoon salt
12 oz cold cubed butter
1 cup cold water (adjust for humidity)
your favorite homemade jam
2 to 3 tablespoons unsalted butter (melted)
2 oz cream cheese
½ cup heavy cream
¼ teaspoon vanilla
3 cups powdered sugar
sprinkles

Steps:

  • Mix flour, sugar, salt, and butter either in an electric mixer with the paddle attachment or by hand, until the butter is broken into small pieces and incorporated into the flour. Add water ½ cup at a time and mix slowly (or by hand) until incorporated (may not need full cup, dough should be sticky but still able to form into ball).
  • Cover with plastic wrap or in a plastic bag and refrigerate for at least ONE hour, or overnight for best results.
  • On a lightly floured work surface, roll to a usual pie crust thickness and cut into desired size pieces, one for bottom and one for the top of the pop tart.
  • Fill with 1 to 2 tablespoons of your favorite homemade jam (the more tart the better to balance the cream cheese glaze). Cover with top side of pie dough and, use your fingers to press together to seal. Using a sharp knife, slice a few slits in the center top and then brush on melted butter. Bake at 350 degrees for about 20 minutes, rotating the pan once halfway through baking time.
  • Heat the cream cheese and heavy cream in a saucepan on medium high until fully melted together, whisking to help it incorporate. Remove from heat and mix in the vanilla and powdered sugar until smooth. Re-heat before using if you need to. Dip the top of the cooled pop tart into the glaze, top with sprinkles and enjoy!

1 box puff pastry, pie dough makes them more pop tart like, but we like the puff pastry better
strawberry jam
raspberry jam
blueberry jam
1 egg
milk, some
2 cups powdered sugar
¼ cup low fat milk
½ teaspoon vanilla extract
food coloring, of choice

Steps:

  • Cut puff pastry along fold lines and then in half, making 6 rectangular pieces.
  • Coat edges of one section of pastry with egg wash (egg and milk whisked).
  • Place desired amount of filling (we used equal parts of each jam) in the center and spread, leaving room on the edges.
  • Then place a second piece of puff pastry on top, Push the edges of the two pastry pieces together with your fingers and then press with a fork to seal.
  • Bake on wax paper at 190°C (375°F) for 20-30 minutes or until golden brown and puffy.
  • For icing, mix all ingredients together. Add additional milk or sugar to achieve desired consistency. Apply to slightly cooked pastries.
  • Enjoy!
