CRANBERRY RICE PILAF
Steps:
- In a small saute pan over medium heat, add orzo and toss and cook for five minutes until it is nicely browned. Remove to a plate to cool.
- Use same pan over medium heat and add almonds and cook for three minutes tossing often until they are lightly browned. Remove to a plate to cool and pick out any that browned too much.
- In a 3-quart sauce pan that has a tight-fitting lid, add butter and oil over medium high heat.
- Once melted, add onions, celery and garlic and saute for four minutes.
- Lower heat to medium, add the raw white rice and stir into the onion celery mixture. Cook for two minutes stirring often then add the thyme, pepper, zest, cranberries and the browned orzo and stir and cook for one minute.
- Add the stock, orange juice and minced parsley stems and bring to a boil. Then reduce to low, cover and cook fifteen minutes. (I leave my pan half off the heat to make sure the rice does not stick if the liquid evaporates too quickly)
- After 15 minutes, remove cover, fluff with a fork and stir in the chopped parsley leaves and reserved almonds.
- Fluff again, taste for seasoning and serve.

Steps:
- In a small pot that has a lid melt butter over medium-high heat. Add onion to melted butter and sauté 1-2 minutes.
- Add rice, bay leaf, chicken bouillon base to the onions. Sauté 2-3 minutes spreading out the chicken base and slightly toasting the rice.
- Add water and cover. Bring to boil, then reduce heat to a simmer. Cook covered 10 minutes until rice is tender.
- Remove from heat, remove the bay leaf from the rice. Gently stir in the cranberries and parsley into the rice, serve immediately.

- Grease a 9-by-13-inch baking dish with nonstick cooking spray.
- In a large microwaveable bowl, microwave the butter and marshmallows for 2 minutes. Stir and microwave an additional minute. Stir in 4 cups of the cereal. Add 1 cup of the white chocolate chips, the cranberries and remaining 2 cups cereal. Transfer to the prepared baking dish.
- Spray your hands with nonstick cooking spray and use your fingers to spread the mixture evenly into the dish. Sprinkle with the remaining 1/2 cup white chocolate chips and use your fingers to push the chips into the cereal mixture. Garnish with the gold glitter sprinkles.

- Heat oven to 350°. Grease square baking dish, 8x8x2 inches. Place wild rice in wire strainer. Run cold water through rice, lifting rice with fingers to clean thoroughly.

RICE CREAM WITH CRANBERRIES

- Cover rice with an inch of water in a heavy saucepan. Bring to a boil, remove from heat, drain and return rice to the saucepan. Add two cups of the milk.
- Cook the rice and the milk over very low heat, stirring from time to time until the rice is tender and the mixture is thick. Add additional cup of milk or a little more if necessary and continue cooking until the mixture is thick. Cooking time should be about 40 minutes. Stir in one-half cup of the sugar and the vanilla. Cool then refrigerate the rice.
- Meanwhile, simmer the cranberries with one cup of water and the remaining three-quarters cup sugar for about 15 minutes, until the cranberries are very tender. Remove from heat, stir in the kirsch and refrigerate until ready to serve.
- Whip the cream until it holds a peak but is not excessively stiff. Stir the rice mixture and gently fold in the whipped cream. Transfer rice mixture to a serving dish or to individual goblets and serve with cranberry sauce. The sauce can be served on the side or spooned directly on top of the dessert.

- In small saucepan, sprinkle gelatin over juice; let stand 1 minute.
- Over low heat, stir about 2 minutes, until gelatin dissolves.
- In medium saucepan, over medium heat, bring rice, milk, sugar and cranberries to a boil; remove from heat.
- Stir gelatin mixture and vanilla into rice mixture; cool 10 minutes.
- Fold in thawed whipped topping.

- Bring water to a boil in a saucepan over high heat and add cranberries and sugar. Reduce heat and let simmer until berries pop open, about 15 minutes. - Bring cream and 1/2 cup sugar just to a boil in a 2- to 4-quart heavy saucepan, stirring until sugar is dissolved. Remove from heat and keep hot, covered.
- Beat together yolks, salt, and 3 tablespoons sugar in a large bowl with an electric mixer at high speed until tripled in volume and thick enough to form a ribbon that takes 2 seconds to dissolve into mixture when beater is lifted, 3 to 4 minutes in a stand mixer or 4 to 8 with a handheld.
- Reduce mixer speed to low and add hot cream mixture to yolks in a slow stream, then transfer custard back to saucepan. Cook over moderately low heat, stirring constantly with a wooden spoon, until custard is slightly thickened and registers 170°F on thermometer (do not let boil).
- Pour custard through a fine-mesh sieve into a large heatproof bowl, discarding solids. Let custard cool to room temperature, stirring occasionally.
- While custard cools, combine cranberries, remaining cup sugar, and cinnamon stick in a 2-quart heavy saucepan and bring to a boil over moderately high heat, stirring. Reduce heat to low and simmer, covered, stirring occasionally, until cranberries have burst, about 10 minutes. Remove and discard cinnamon stick, then carefully transfer cranberry mixture to a blender and purée until smooth (use caution when blending hot mixtures). Force through fine-mesh sieve into bowl of custard, pressing on solids with back of a spoon and then discarding them. Cool to room temperature, stirring occasionally, about 45 minutes.
- Freeze custard in ice cream maker. Transfer to an airtight container and put in freezer to harden, at least 4 hours.

- In a microwave-safe bowl, microwave orange juice for 30 seconds until warm.
- Add cranberries to juice and let it soak for 10 minutes.
- In a medium bowl, combine cream cheese, sugar, and vanilla extract. Mix until smooth.

- Butter a 13 x 9-inch baking pan.
- In a large skillet over medium heat stir sesame seeds, sunflower seeds, pecans and almonds until pale golden brown (about 2-3 minutes).
- Add in coconut and stir until the sesame seeds and coconut are golden (about 2 minutes).
- Stir in cereal and cranberries; remove from heat.
- Meanwhile in a 5-6-quart pan combine the peanut butter with butter and mini marshmallows; stir over low heat until the marshmallows melt and the mixture is smooth (about 5 minutes) then add in the cereal/cranberry mixture and mix quickly using a wooden spoon to coat evenly.
- Pour the mixture into prepared baking pan, using a spoon (the mixture will be hot!) press firmly to make an even layer.
- Cool at room temperature or refrigerate until the mixture is set.
- Cut into 24 bars.
- Store in an airtight container at room temperature for up to 4 days.
