2 eggs
1 cup mayonnaise
1 cup condensed cream of mushroom soup
2 (10 ounce) packages frozen chopped broccoli, thawed
1 cup shredded Cheddar cheese
1 onion, chopped
½ cup butter, cut into pieces
¾ cup crushed buttery round crackers (such as Ritz®)

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C).
  • Beat the eggs in a mixing bowl; whisk in the mayonnaise, cream of mushroom soup, broccoli, Cheddar cheese, onion, and butter. Spoon into a 2 quart casserole dish; sprinkle with the crushed crackers.
  • Bake in the preheated oven until hot and bubbly, 30 to 40 minutes.

This classic Ritz Broccoli Casserole is quick and easy to prep, but turns into a truly special side dish!

2 pounds frozen broccoli, thawed
1 (10-oz) can cream of mushroom soup
1/2 cup mayonnaise (OR 1/4 cup mayo and 1/4 cup sour cream)
1 cup shredded cheddar cheese
2 teaspoons lemon juice
1/2 teaspoon garlic powder, or more to taste
2 sleeves Ritz crackers, crushed (about 6 ounces; more or less to taste)

Steps:

  • Heat oven to 350°F. Lightly grease a shallow 7x11 inch casserole dish.
  • Place thawed broccoli in large colander and rinse under warm water to remove any lingering ice. Drain well and gently pat dry with paper towels.
  • Combine broccoli with remaining ingredients (EXCEPT for Ritz crackers) in a large bowl, making sure not to break up broccoli florets. Spread mixture in prepared casserole dish.
  • Sprinkle with cracker crumbs, then bake for 30-35 minutes or until casserole is hot and bubbly and topping is golden. Serve immediately.

  • Cook broccoli in salted water for 5 minutes then drain very well.
  • Combine soup, eggs, cheese and mayonnaise.
  • Mix well and then add broccoli.
  • Pour into baking dish.
  • Sprinkle top with cracker crumbs and dot with small chunks of butter.
  • Bake at 350 degrees for 30 to 35 minutes.

Buttery crackers, creamy, and cheesy...oh yeah, broccoli for the health benefits:) OK, so its not healthy but it's sooo good! Not my recipe but a coworker's. She's actually not allowed to bring anything but a doubled up version of this to any potlucks. Somehow I had managed to reach the age of 35 without ever having any type of broccoli casserole and now will only ever have this one. This is a very easy recipe to double or triple as well. This is best reheated back in the oven. I form HD foil into a pan shape for single servings and reheat at 350 for 10 min or so. The top gets crisp and buttery again.

2 (8 ounce) boxes frozen broccoli
8 ounces shredded sharp cheddar cheese
2/3 cup mayonnaise
1 egg, lightly beaten
1 small yellow onion, diced small
1 (10 3/4 ounce) can cream of celery soup
36 Ritz crackers (approx. 1 large sleeve)
1/2 cup butter
1/2 teaspoon pepper

Steps:

  • Cook broccoli according to directions and drain.
  • Mix cheese, mayo, egg, onion and soup until blended.
  • Place half of the soup mixture in the bottom of a 9x13 pan either buttered or sprayed with a nonstick cooking spray.
  • Layer cooked broccoli on top, then add remaining soup mixture on top of the broccoli layer.
  • Crush the crackers in a zip top bag, melt butter and toss them together to coat.
  • Sprinkle/spread cracker layer over the top.
  • Bake at 350 degrees for 30 minute.

1 head fresh broccoli
1 (10 3/4 ounce) can cream of mushroom soup
1 cup mayonnaise
1/2 medium onion, chopped
2 eggs
2 cups grated cheddar cheese
24 Ritz crackers (1 full tube, 24 is approx, I just guessed for the recipe)
3 tablespoons butter
salt, to taste
pepper, to taste
garlic salt, to taste

Steps:

  • Par boil the broccoli for approx 5-10 minutes, (Still"crispy", you dont want it mushy).
  • Cut broccoli into bite size pieces and put in 9x13 baking dish.
  • Mix mushroom soup, mayonaise, onion, eggs, cheese and seasonings together.
  • Pour over broccoli.
  • Top with crushed Ritz Crackers.
  • Dot with butter.
  • Bake at 350 degrees for 40 minutes uncovered.

2 (10 ounce) packages frozen broccoli florets
1/2 lb Velveeta cheese, cubed
1/2 cup margarine or 1/2 cup butter, divided
24 Ritz crackers

Steps:

  • Cook and drain the broccoli.
  • Place broccoli in a buttered, 2 quart casserole baking dish.
  • Over low - medium heat, melt 1/4 cup of margarine or butter and Velveeta, until smooth and pour on top of the broccoli.
  • Crush 1 tube of Ritz crackers and mix all ingredients together, in the casserole dish.
  • Melt rest of margarine or butter and pour over the top and bake in a pre-heated 350 degree oven for 10-15 minutes .
