Steps:
- Preheat an oven to 325 degrees F (165 degrees C).
- Beat the eggs in a mixing bowl; whisk in the mayonnaise, cream of mushroom soup, broccoli, Cheddar cheese, onion, and butter. Spoon into a 2 quart casserole dish; sprinkle with the crushed crackers.
- Bake in the preheated oven until hot and bubbly, 30 to 40 minutes.

- Heat oven to 350°F. Lightly grease a shallow 7x11 inch casserole dish.
- Place thawed broccoli in large colander and rinse under warm water to remove any lingering ice. Drain well and gently pat dry with paper towels.
- Combine broccoli with remaining ingredients (EXCEPT for Ritz crackers) in a large bowl, making sure not to break up broccoli florets. Spread mixture in prepared casserole dish.
- Sprinkle with cracker crumbs, then bake for 30-35 minutes or until casserole is hot and bubbly and topping is golden. Serve immediately.

RITZY BROCCOLI CASSEROLE
Buttery crackers, creamy, and cheesy...oh yeah, broccoli for the health benefits:) OK, so its not healthy but it's sooo good! Not my recipe but a coworker's. She's actually not allowed to bring anything but a doubled up version of this to any potlucks. Somehow I had managed to reach the age of 35 without ever having any type of broccoli casserole and now will only ever have this one. This is a very easy recipe to double or triple as well. This is best reheated back in the oven. I form HD foil into a pan shape for single servings and reheat at 350 for 10 min or so. The top gets crisp and buttery again.

Steps:
- Cook broccoli according to directions and drain.
- Mix cheese, mayo, egg, onion and soup until blended.
- Place half of the soup mixture in the bottom of a 9x13 pan either buttered or sprayed with a nonstick cooking spray.
- Layer cooked broccoli on top, then add remaining soup mixture on top of the broccoli layer.
- Crush the crackers in a zip top bag, melt butter and toss them together to coat.
- Sprinkle/spread cracker layer over the top.
- Bake at 350 degrees for 30 minute.

- Par boil the broccoli for approx 5-10 minutes, (Still"crispy", you dont want it mushy).
- Cut broccoli into bite size pieces and put in 9x13 baking dish.
- Mix mushroom soup, mayonaise, onion, eggs, cheese and seasonings together.
- Pour over broccoli.
- Top with crushed Ritz Crackers.
- Dot with butter.
- Bake at 350 degrees for 40 minutes uncovered.

- Cook and drain the broccoli.
- Place broccoli in a buttered, 2 quart casserole baking dish.
- Over low - medium heat, melt 1/4 cup of margarine or butter and Velveeta, until smooth and pour on top of the broccoli.
- Crush 1 tube of Ritz crackers and mix all ingredients together, in the casserole dish.
- Melt rest of margarine or butter and pour over the top and bake in a pre-heated 350 degree oven for 10-15 minutes .

- Combine the sour cream, mayonnaise, cream of mushroom soup, garlic powder, salt, pepper, and one cup of the grated cheese in a large bowl. Add the broccoli and mix well.
