SAFFRON SPAGHETTI COOKED RISOTTO-STYLE
Saffron Spaghetti cooked risotto-style is a a very simple and flavoursome dish. Pasta can be cooked directly in the pan with the sauce. This cooking method in Italy is called pasta risottata, that is pasta cooked risotto-style. It refers to the method of cooking risotto recipe. For this first course we used only onion, saffron and spaghetti, all slowly cooked in a pan, adding hot vegetable stock, thus obtaining a creamy saffron spaghetti cooked risotto-style.

Steps:
- In a large no-stick frying pan heat the butter with the onion.
- cook spaghetti in boiling water for 1/2 minute
- Drain and place them in the pan with the onion. Try to stir them to season as much as possible
- Add a ladle or two of stock and cook over high heat
- Add the saffron in a ladleful of stock and stir it
- Then add it to spaghetti and cook until absorbed.
- Add grated Parmigiano cheese and stir (8). Serve hot with the addition of ground black pepper

- Soak saffron threads in hot water for 30 minutes.
- Place flour on a marble or wooden work surface. Make a well in the center and crack in eggs; add salt and saffron water. Gently beat eggs, saffron, and water using a fork, incorporating the surrounding flour, until mixture is runny. Pull remaining flour into the center using a bench scraper, incorporating it until dough forms a ball. Add more water, 1 tablespoon at a time, if dough is too stiff.
- Knead dough with your hands by flattening the ball, stretching it, and folding the top towards the center. Turn 45 degrees and repeat until dough is soft and smooth, about 10 minutes.
- Shape dough into a ball. Place in a bowl and cover with plastic wrap. Refrigerate until firm, 30 minutes to 1 hour.
- Roll out the dough with a pasta machine or with a rolling pin and cut into lasagna sheets or tagliatelle.

PAPPARDELLE IN SAFFRON CREAM

- Bring a pot of salted water to a boil. Meanwhile, melt the butter in a medium skillet over medium heat. Add the shallot and saffron and cook, stirring occasionally, until the shallot is softened, about 2 minutes. Add the cream, 1/4 teaspoon salt, and pepper to taste; increase the heat to medium high and simmer until slightly thickened, about 2 minutes. Stir in the lemon juice and vanilla.
- Add the pasta to the boiling water and cook as the label directs. Remove 1/4 cup cooking water, then drain the pasta and transfer to the skillet with the sauce. Add the reserved cooking water, the parmesan and half of the chives and toss to coat. Serve topped with the lemon zest, remaining chives and more cheese.

SAFFRON SPAGHETTI ALLA CARBONARA

- Place the saffron in a small pot with 1 cup cold water. Bring to a boil, reduce to a simmer and let it steep while pasta water comes to a boil, about 6 to 8 minutes.
- Bring a large pot of water to a boil, salt the water and cook pasta to al dente. Heads up: reserve a half cup of starchy cooking water just before you drain spaghetti.
- While the water comes to a boil, heat olive oil, 3 turns of the pan, over medium heat. Add pancetta and cook until just about crisp, 4 to 5 minutes. Add in the garlic after 2 to 3 minutes and stir another 2 to 3 minutes until fragrant. Stir in wine and turmeric. Beat eggs with starchy cooking water. Drain pasta and add to the skillet. Pour saffron water over the pasta and toss to combine, season with pepper. Add in half the cheese and all of the parsley, pour in tempered eggs and turn off heat. Toss the spaghetti to coat evenly in golden sauce. Top with additional cheese and serve immediately.
SAFFRON ALFREDO
This is a base sauce for other recipes and can be modified to fit almost any white sauce recipe. It is a sauce you can freeze and use at a later time. It thickens into a paste as it cools; use only a tablespoon or two per meal that you are making. I use this sauce as a base for my shrimp diablo.

- Melt butter in a very large pot over medium heat. Add onions and garlic; cook and stir until softened and browned, about 20 minutes. Pour in white wine; simmer until reduced by half, 5 to 10 minutes.
- Stir heavy cream into the saucepan. Bring to a boil; reduce heat and simmer until reduced by half, about 20 minutes. Stir in saffron. Season sauce lightly with salt and pepper.

FETTUCCINE WITH SHIITAKES IN A SAFFRON CREAM SAUCE
This recipe has the most amazing saffron sauce! Although it calls for shiitake mushrooms, I've made this with Oyster mushrooms and it is equally good, but you need to add some color. Red or orange bell pepper, julienne usually does the trick. Portobellas are good too. I always reduce the amount of heavy cream in this (by half!). If you don't have fettuccine, this is really good with bowtie pasta. An oaky chardonnay goes well with this. From Food & Wine, Pasta.

- Bring a large pot of salted water to a boil.
- Meanwhile, bring the wine to a boil in a small saucepan and add the saffron. Remove from heat and let it infuse for 5 minutes.
- Add the pasta to the boiling water and cook for 12 minutes, or until the pasta is just done.
- While pasta is cooking, heat the oil and butter in a large frying pan over medium heat. Add the shallots, mushrooms, peppers (optional), salt and pepper. Cook until very lightly browned, about 5 minutes.
- Add the wine and saffron and boil for 2 mintues.
- Add the cream, bring to a boil, reduce heat and simmer until slightly thickened, about 2 minutes.
- If, like me, you reduced the volume of cream, the sauce may be runny. Make a slurry with a tablespoon of flour in two tablespoons water. Stir into the sauce and simmer until slightly thickened.
- Drain the pasta. Toss it with the sauce, parmesan and parsley. Serve immediately in large pasta bowls.

- Combine slightly beaten eggs, olive oil, water, and saffron in a bowl. Mix, and let sit for 5 minutes to allow saffron to steep.

Using the dough hook attachment, knead on medium speed until dough indents when touched.
- If the dough is too sticky, sprinkle with additional semolina flour until it comes together. If the dough is too dry, sprinkle water until you get the right consistency. You'll want to knead until the dough is elastic. Slice into the dough with a paring knife; if you see lots of air bubbles, keep kneading. The dough is ready when it forms a smooth elastic ball and has very few air bubbles when cut. Test by pressing your knuckle into the dough; if it starts to bounce back then it's ready.
