SALMON EN PAPILLOTE

Kosher salt and freshly ground black pepper
1 tablespoon canola oil
1 bulb fennel, cut into 1/4-inch slices
2 small Yukon gold potatoes, peeled and sliced 1/8 inch thick
Four 5-ounce skinless salmon fillets
1/4 cup white wine
2 tablespoons butter, separated into 4 pats
1 tablespoon minced fresh tarragon
1/4 shallot, finely minced
1 cup pitted manzanilla olives, rinsed, drained and finely chopped
1 tablespoon capers in brine, rinsed, drained and finely chopped
1 anchovy, minced
1 clove garlic, minced
1/4 cup olive oil
2 teaspoons lemon juice
1 teaspoon honey
1 tablespoon minced fresh parsley

Steps:

  • For the salmon: Preheat the oven to 300 degrees F. Bring a pot of water to a boil and season with salt.
  • Put the canola oil in a pan set over medium-high heat. Season the fennel with salt and pepper. Once the oil is hot, add the fennel and cook on one side until golden brown, 2 to 3 minutes. Set aside.
  • Meanwhile, cook the potato slices in the boiling water for 3 minutes, then drain and set aside.
  • Cut 4 pieces of parchment paper into large heart shapes, then fold in half. Lift one side of each parchment heart, put some fennel in the center of the bottom half of each, then shingle the potatoes on top and follow with a piece of salmon. Top each salmon piece with a quarter of the white wine, butter, tarragon and shallots. Season with salt and pepper.
  • Begin to close the parchment pieces by crimping the edges in small folds, continuing to fold over part of the previous fold, until the packets are completely closed. Place the packets on a baking sheet and bake for 15 to 18 minutes, depending on your desired doneness.
  • For the tapenade: While the salmon is in the oven, combine the olives, capers, anchovy and garlic in a bowl. Add the olive oil, lemon juice and honey and mix until combined. Finish with the minced parsley.
  • Open the packets at the table and top each with a spoonful of the tapenade.

Poached Salmon with Basil Butter and Succotash image

A great way to use beans and corn from your own garden or the farmer's market, this is the perfect dish for a warm summer's evening. Gently poached salmon, its flakes swollen and pillowy, is paired with a lightly glazed combination of fresh shell beans and corn. The poaching liquid is perked up with lemon juice, reduced, enriched with butter, and spooned over the fish to unite the salmon and the vegetables. This dish is especially lovely with green and purple basil, another summer staple.

Number Of Ingredients 15

Kosher salt to taste
1 cup mixed shell beans, such as cranberry, fava, lima, flageolets, and/or butter beans
3 tablespoons unsalted butter, softened
1 small onion, finely diced
1 cup fresh corn kernels (from about 1 large ear of corn)
1 cup Chicken Stock, high-quality low-sodium store-bought chicken stock, or water
Black pepper from a mill
1 large shallot, finely diced
Four 6-ounce wild salmon fillets, skin and any pin bones removed
1/2 cup Fish Stock
1/2 cup dry white wine
1 teaspoon freshly squeezed lemon juice
1/3 cup heavy cream
1/2 cup (1 stick) cold unsalted butter, cut into 1/2-inch cubes
3 tablespoons fresh basil (preferably a mix of green and purple basil) cut into chiffonade

Steps:

  • Bring a large pot of salted water to a boil and fill a large bowl halfway with ice water. Add the beans to the boiling water and blanch for 2 to 3 minutes, then drain, transfer to the ice water to stop the cooking and set the color, drain again, and set aside.
  • Heat a wide, deep, heavy-bottomed sauté pan over medium heat. Add 2 tablespoons of the softened butter and, when it has melted but not browned, add the onion. Cook until soft and translucent but not browned, 8 to 10 minutes. Add the corn and blanched beans and stir to heat through. Pour in the stock and raise the heat to high. Continue to cook until the liquid has almost completely reduced but enough remains to lightly coat the vegetables, about 5 minutes total. Be careful not to overcook the sauce, as the vegetables may discolor. Season to taste with salt and pepper and set aside, covered, to keep warm.
  • Rub the remaining 1 tablespoon softened butter over the bottom of a deep, heavy-bottomed 10-or 12-inch sauté pan. Sprinkle the shallot over the bottom of the pan and set the salmon fillets on top without crowding them. Gently pour the stock and wine over and around the fish to come about two-thirds up their sides. Cover the pain tightly with a lid or aluminum foil, set over medium-high heat, and bring the liquid to a rolling boil, about 3 minutes. Reduce the heat to medium and cook the fish for another minute. Remove the cover and use a fish spatula or regular spatula to carefully remove the fillets from the sauté pan and transfer them to a large plate or platter. (They will be slightly undercooked, but will continue to cook via carryover heat.) Cover loosely with foil. (If you used foil to cover the pan, you can use that to tent the fish.)
  • Drain and discard all abut 1/3 cup of the poaching liquid from the pan. Add the lemon juice and a pinch of salt. Place over high heat, bring to a boil, and cook until reduced by half, about 3 minutes. Stir in the cream, bring back to a boil, and continue to boil for 1 minute. Reduce the heat to medium and whisk in the cold butter, a few pieces at a time, incorporating each addition entirely before adding more. Season to taste with salt and pepper and keep warm. Stir in the basil just before serving.
  • To serve, drain the succotash in a strainer and divide it evenly among 4 dinner plates. Place the salmon on top and generously spoon over the sauce. Serve immediately.

1/4 cup pistachios
10 -15 basil leaves
3 -4 cloves garlic
1/2 cup butter
1 teaspoon lime juice
1/2 cup white wine
4 (6 ounce) salmon fillets

Steps:

  • In food processor, combine butter, pistachios, garlic, basil and lime juice.
  • Season with salt and pepper.
  • Refrigerate.
  • Preheat oven to 400.
  • Place salmon in buttered baking dish and cover with wine.
  • Season with salt and pepper.
  • Bake till opaque--about 10 minutes Place 2-3 tablespoons of butter mixture on each piece of salmon.
  • Continue baking until done in center-about 5 more minutes or more (depending on thickness of your salmon).
  • Garnish with additional basil leaves.

2 bunches fresh basil leaves, divided
2 sticks unsalted butter, room temperature
Kosher salt and freshly ground black pepper
1 (4-pound) whole salmon, cleaned and scaled
2 lemons, cut into wedges
Extra-virgin olive oil
Sea salt

Steps:

  • Begin by preheating a large outdoor grill. Using a paper towel folded in 4, wipe down the grill with olive oil to clean it and also create a nonstick surface.
  • Prepare the compound butter by roughly chopping 1/2 the basil leaves and adding it along with the butter and salt and pepper, to taste, to a food processor. Pulse until fully combined and creamy.
  • Using a chef's knife, make slits in each side of the fish, place a few slices of lemon and basil in each of the slits. Stuff the remaining herbs and lemon inside of the fish and head. Paint the whole fish with the basil butter and refrigerate the remaining butter to serve with the finished fish. Carefully place the fish on the grill and grill for 10 to 12 minutes until it lifts off easily - use 2 large spatulas. Turn the fish over and grill for 10 minutes more.
  • Serve on a large platter family style and dot with the remaining basil butter. Sprinkle with sea salt and fresh basil leaves. Serve with lemon wedges.

10 large fresh basil leaves or 1/4 cup parsley and 2 teaspoons dried basil, crumbled
1 garlic clove
1/2 cup (1 stick) butter, room temperature
1 teaspoon lime juice
6 6-ounce 1 1/2-inch-thick salmon fillets
1/2 cup dry white wine
Additional fresh basil leaves (optional)

Steps:

  • Process pistachios, 10 basil leaves and garlic cloves in processor until finely chopped. Add 1/2 cup butter and 1 teaspoon lime juice and process until incorporated into mixture. Season to taste with salt and pepper. Transfer butter mixture to small bowl. Refrigerate until well chilled. (Pistachio butter can be prepared up to 4 days ahead.)
  • Preheat oven to 400°F. Butter 9x13-inch baking dish. Place salmon fillets in dish in single layer. Pour white wine over. Season salmon with salt and pepper. Bake salmon until almost opaque on top, about 10 minutes. Place 2 tablespoons pistachio butter atop each salmon piece. Continue baking until salmon fillets are just opaque in center, about 5 minutes. Coarse salt and freshly ground pepper
2 cups freshly squeezed orange juice
2 cups shelled salted pistachios
Zest of 1 orange, plus more for garnish
1/4 cup olive oil
Nonstick cooking spray

Steps:

  • Season the salmon with salt and pepper. Place in a large baking dish with 1 cup orange juice. Cover with plastic wrap, and marinate in refrigerator, for at least 1 and up to 2 hours.
  • Preheat oven to 425 degrees. Finely chop pistachios and zest in food processor. With the processor running, drizzle in oil and remaining 1 cup juice until a paste forms; set aside.
