BASIC GRANOLA RECIPE
This basic granola recipe is pretty perfect as is, but feel free to swap out ingredients to customize it to your taste (see Cook's Notes below for sample substitutions).

- Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper.
- In a large bowl, mix together the oats, light brown sugar, cinnamon and salt. Stir the honey, oil and vanilla extract into the dry ingredients. Use your hands if necessary to make sure it's well combined.
- Spread the mixture in an even layer on the prepared baking sheet. Bake for 20 minutes and then remove from the oven and stir; add the chopped almonds. Return to the oven and bake until everything is toasted and evenly browned, an additional 10 minutes.
- Allow the granola to cool on the baking sheet, then add the dried cranberries and toss to distribute. Store in an airtight container at room temperature for up to 2 weeks.

COSTCO CLONE GRANOLA
I tried Costco's granola the other day, and is it EVER good! Now, I'm not saying this recipe is an exact clone of Costco's, but it's the best I found. Add or subtract ingredients according to your taste - you can use less sugar if you like, increase the amount of wheat germ, add flax seeds, sesame seeds, pumpkin seeds, other dried fruit or nuts - it's perfect for experimenting. Steps:
- Preheat oven to 325°F.
- Mix granola ingredients in a large bowl.
- For coating, heat oil, honey, and maple syrup to a rolling boil. Turn off heat and add vanilla. Pour over granola mixture and blend well. Spread on a baking sheet.
- Bake for about 15-20 minutes, stirring the granola every 5 minutes while baking to ensure even browning. Watch it closely as it can burn fast. For softer granola do not bake as long.

- Preheat oven to 300°F. Line rimmed baking sheet with parchment. Mix first 7 ingredients in large bowl. Stir honey and oil in saucepan over medium-low heat until smooth. Pour honey mixture over oat mixture; toss. Spread on prepared sheet. Bake until golden, stirring every 10 minutes, about 40 minutes. Place sheet on rack. Stir granola; cool. Mix in fruit. DO AHEAD: Can be made 1 week ahead. Store airtight.

- Preheat oven to 300ºF. Line a baking sheet with parchment paper. Mix together all of the ingredients. You can use any kinds of seeds, nuts, and fruits you want, but in parentheses are the ingredients in the real Kimberley's granola which are what I used. I mix them right on the pan so I don't have to dirty a dish. Squeeze it with your fingers until clumpy and arrange in a rough circle in the middle of the pan. Bake for 35 minutes or until slightly browned. Once cool, break into pieces and store in an airtight container.

- Preheat oven to 250 degrees F (120 degrees C). Line a baking sheet with a silicone liner.
- Combine brown sugar, maple syrup, oil, and salt in a bowl. Add oats, almonds, pumpkin seeds, and coconut. Mix well, making sure all ingredients are coated evenly.
- Pour onto prepared baking sheet and distribute in an even layer.
- Bake in the preheated oven for 1 hour, stirring every 10 to 15 minutes lightly with the tines of a fork so mixture toasts evenly and granola is golden brown.
- Pour into a bowl and, while mixture is still hot, mix in currants. Cool. Store in an airtight container until ready to use.

GRANDMA'S HOMEMADE GRANOLA
My grandmother and I created this homemade granola recipe one day, and it is currently loved and requested by the rest of my family, including my other grandma who used to be anti-granola! My favorite ways to serve it are in coconut Greek yogurt or just in a bowl with milk. Simple and awesome.

- Preheat the oven to 325 degrees F (165 degrees C). Cover a baking sheet with aluminum foil and spray with nonstick cooking spray.
- Mix oats, pecans, almonds, and coconut flakes together in a large bowl. Set aside.
- Combine vegetable oil, brown sugar, honey, maple syrup, cinnamon, vanilla extract, and salt in a medium saucepan over medium heat. Stir gently until it begins to boil; remove from heat. Pour over oat mixture and fold together until dry ingredients are well coated. Spread granola onto the prepared baking sheet.
- Bake in the preheated oven for 20 minutes. Stir and continue to bake on the top rack until golden, about 5 minutes more.
- Remove from the oven and let cool, 20 to 30 minutes. Toss with cranberries. Store in an airtight container.
