Time 8h55m

Yield 2

Number Of Ingredients 8

8 cloves garlic, minced
1 tablespoon olive oil
1 pinch salt and ground black pepper
2 (12 ounce) New York strip steaks
12 cloves garlic, peeled
1 cup olive oil for frying
1 pinch salt and ground black pepper to taste
1 ½ tablespoons balsamic vinegar

Steps:

  • Whisk minced garlic, olive oil, salt, and black pepper in a bowl, then pour into a resealable plastic bag. Add the steaks, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 8 hours or overnight.
  • Combine 12 garlic cloves and 1 cup olive oil in a small saucepan over low heat. Cook, stirring occasionally, until garlic is golden and tender, about 30 minutes. Set aside.
  • Preheat an outdoor grill for high heat, and lightly oil the grate. Remove steaks from bag, wiping off excess marinade with paper towels. Generously season steaks with salt and black pepper.
  • Cook the steaks on the prepared grill until they start to firm and are reddish-pink and juicy in the center, about 5 minutes per side. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C). Remove steaks to a plate and let rest for 5 minutes.
  • Drizzle balsamic vinegar over steaks, then spoon a few cloves of oil-roasted garlic on top.

ROASTED GARLIC STUFFED STEAK WITH GARLIC MASHERS AND BALSAMIC CREAM SAUCE

Roasted Garlic Stuffed Steak with Garlic Mashers and Balsamic Cream Sauce image

I moved from the Midwest to California just as I started to get interested in the culinary arts. Ironically, I moved to Gilroy California: home of the Garlic Festival! Ever since, I have been incorporating garlic into nearly every dish! The following recipe I created one year when we had a bunch of hungry pilots who flew in just for the Garlic Festival. I thought I would make it an especially memorable culinary experience for them!

Provided by Food Network

Categories     main-dish

Number Of Ingredients 8

4 thick-cut NY steaks
3 bulbs, yes bulbs not cloves of GARLIC! (an extra bulb for the mashers)
1/4 cup olive oil
1 teaspoon sea salt
3 cups fresh spinach
1/4 cup sun-dried tomatoes in oil, diced
1 pound fresh brie cheese
1/4 cup fresh rosemary, minced

Steps:

  • Marinate the steaks overnight in olive oil, sea salt and fresh cracked pepper. You can utilize any fresh herbs you have in your garden or local market such as rosemary. Take the steaks out and let them rest about an hour before you start to work with them. In the meantime, fire up the oven to 350 degrees F. Take your garlic bulbs and slice them in half diagonally. Season with olive oil and sea salt. Roast on a pan in the oven for about 15 minutes or until the garlic is nice and golden brown and your house smells heavenly. Take out and set aside.
  • Heat your saute pan with some olive oil and throw in about 6 cloves of fresh chopped garlic when hot. Add spinach and saute until spinach is just wilted. Season with salt and pepper. Chop up the sun-dried tomatoes and toss with the spinach. When the spinach has cooled, throw in the brie and the roasted garlic. You can easily pull the roasted garlic from the 'husk' by using a toothpick to pull it out. Mix together very well!
  • Season with salt and pepper. You can also throw in a teaspoon or so of fresh rosemary at this point. Set aside. Take your steaks and cut a slit into the side of them, just as you would with stuffing pork chops. Carefully stuff the steaks with your roasted garlic stuffing. Throw those guys on the BBQ for about 3-4 minutes per side pending your guests preference. I serve these steaks over garlic mashers which I usually just throw in an extra bulb of garlic to roast when making the stuffing and mash it all up with some fresh potatoes, butter and cream. A little parsley to garnish.
  • For the sauce, take 4 tablespoons of butter and melt in a saucepan over low heat. Add about 6 cloves of fresh chopped garlic, 1/4 cup of cream and 4 tablespoons of good quality balsamic vinegar. Throw in a sprig of fresh rosemary and reduce the sauce by about 1/3. Take out the rosemary. To plate, place lean against a heap of the garlic mashers and drizzle the sauce around the plate and over the potatoes. Garnish with fresh rosemary. It is excellent to have a nice fresh loaf of bread to serve with this. I also BBQ up some fresh local corn on the grill to accompany this meal. It is a fairly easy and gourmet meal to prepare. You can even make the stuffing the night before. Enjoy! And long live garlic!!!

SARASOTA'S TENDER GARLIC CUBE STEAKS

Sarasota's Tender Garlic Cube Steaks image

Classic remake. These are tender, savory and very easy to make. Serve the classics with this, mashed or baked spuds, carrots or baby peas, but I love to serve grilled portabello mushrooms as well. Cube steaks at times get a "bad rap," because they are cooked quick and then they are tough. Well they are not meant to be cooked quick, they need a little simmer time to get that fork tender savory flavor. Also, I can't say that these are low fat, but they are definitely a lighter version. There is NO soup or no packaged sauces in this recipe.

Provided by SarasotaCook

Categories     Meat

Time 50m

Yield 4 1/4 lb steaks, 4 serving(s)

Number Of Ingredients 14

4 cube steaks, approximately 1 lb
2 large onions, cut in half and thin sliced
1 cup saltine crackers, crushed fine (1 cup after being crushed)
1/2 teaspoon garlic powder
1 teaspoon minced garlic
1 1/4 cups beef broth (I like low salt)
2 extra large eggs, you will need about 1/2 cup (2-3 eggs, beaten well)
2 1/4 teaspoons cornstarch
2 tablespoons fresh parsley, chopped
1/2 teaspoon dried thyme
1 pinch red pepper flakes
2 tablespoons olive oil, you may need a bit more (to saute the beef)
salt
pepper

Steps:

  • Crackers -- The first step is to crush the saltines. About 20-25 crackers will give you about 1 cup, but crush them fine. A fine crushed cracker will stay on the beef better than those not crushed well. I just use a baggie (ziploc) and my meat mallet or rolling pin. Use anything you have.
  • Steak -- Bring the steak to room temp and season well with salt and pepper and make sure to rub in the seasoning.
  • Breading Station -- Dip #1 - Wet -- In a small bowl or pie plate, beat the eggs well. Dip #2 - Dry -- In a small bowl or pie plate again, add the cracker crumbs, thyme, garlic, and red pepper flakes.
  • Dip each cube steak into the egg mixture, then into the cracker crumbs coating well. Make sure to press the crackers crumbs into the steaks.
  • Pan Fry -- In a large saute pan, heat up the olive oil to medium high heat and add the steaks. Make sure you use a large enough pan so they are not crowded. Brown well on the first side until golden brown. Then flip, you may need to add a bit more oil if the pan is too dry - not much, just a touch. Add in the sliced onion and garlic and brown the second side until golden brown as well. Then reduce the heat to low. Add 1/4 cup of the beef broth and cover. Cook 30-40 minutes until tender. Stir once or twice during cooking.
  • Sauce -- Once the steaks are done, remove and cover with foil. Make sure to leave the onions in the pan. Mix the cornstarch with the remaining beef broth and pour into the pan along with the garlic and onions. Bring to a boil until thickened and then reduce the heat and just simmer 2-3 minutes. Add in the parsley and taste for any additional seasoning, salt and pepper.
  • Serve -- Pour the onion gravy over the individual steaks. ENJOY! Serve this with some mashed potatoes or parsnips, peas, carrots and I love a couple of grilled portabellos. Just a great classic dish.

GRILLED HANGER STEAKS WITH ROASTED GARLIC ROMESCO SAUCE

Grilled Hanger Steaks with Roasted Garlic Romesco Sauce image

Provided by Geoffrey Zakarian

Categories     main-dish

Time 1h45m

Yield 4 to 6 servings

Number Of Ingredients 19

1 head garlic
Kosher salt and freshly ground black pepper
2 ounces extra-virgin olive oil, plus extra for drizzling
1 cup day-old country bread, crusts removed and pulsed in a food processor
1 cup canned roasted red bell pepper, drained (about 2 peppers)
1/4 cup toasted almonds
3 tablespoons sherry vinegar
1 tablespoon fresh dill
1 tablespoon fresh parsley
2 to 3 fresh basil leaves
2 anchovy fillets
1 canned whole San Marzano tomato
1 teaspoon ancho chile powder
1 teaspoon garlic powder
1 teaspoon freshly ground black pepper
1 teaspoon seafood seasoning, such as Old Bay
2 hanger steaks, at room temperature
1 teaspoon kosher salt, plus more as needed
Lime wedges, for serving

Steps:

  • For the romesco sauce: Preheat the oven to 450 degrees F.
  • Cut off the top of the garlic just to expose the tips of the cloves. Sprinkle with salt and pepper and drizzle with olive oil. Wrap tightly in foil and roast until the cloves are golden brown and tender, about 45 minutes. Open the foil and allow the garlic to cool until cool enough to handle, then scoop the cloves out using a fork or knife or squeeze the whole head with your hand, turning it upside down to release the cloves into a small bowl.
  • Puree the bread, roasted peppers, almonds, vinegar, dill, parsley, basil, anchovies, tomato and roasted garlic pulp in a blender on high speed, just blending enough so that there is still some texture to the sauce. Set aside until ready to use.
  • For the hanger steaks: Preheat a grill on high heat.
  • Combine the chile powder, garlic powder, pepper and seafood seasoning in a small bowl. Sprinkle the steaks on all sides with salt, then rub with the spice mixture. Grill the hanger steak on all sides, rotating so the char is even, about 10 minutes for an internal temperature of 125 degrees F or medium-rare. Allow the steaks to rest for 10 minutes.
  • Carve the steaks by cutting large pieces against the grain. Serve with a squeeze of lime and the romesco sauce.

SARASOTA'S 7 SPICY, SWEET & TANGY GRILLING/BAKING SAUCES

Sarasota's 7 Spicy, Sweet & Tangy Grilling/Baking Sauces image

These are not exact recipes, but ideas and methods. I love sauces I can brush on when grilling, baking, pan searing, broiling etc. It is a basic method of approximately ... 1/2 each of two main sauces; 1 teaspoon of 2 or 3 different spices and usually 1 other seasoning or spice to compliment, salt and pepper. It varies per sauce, but they are so easy and usually are ingredients we have on hand. It is the easiest method and such a wonderful sauce and flavor to so many dishes. Just mix in a small measuring cup and brush on. These sauces are great on seafood such as shrimp, white fish or salmon; pork chops, loins and roasts; steak, kabobs, skirt, fillets, flank; and any kind of chicken. So below some of my favorite combinations. Now there are hundreds of variations and sometimes I will add a little vinegar, more herbs etc, but this is the basic method and my favorites which I enjoy. Again, feel free to add more spices, herbs or vinegar for a kick. These are meant to be an easy, quick sauce so don't worry if you have all the ingredients - use what you have. Have fun and experiment. Again, turn ordinary chicken breasts into chipolte and raspberry glazed grilled chicken over wild rice instead of a plain Italian marinated chicken breast. It is easy, not expensive and quick. No cooking, just mix and brush on. Have fun!!

1/2 teaspoon cumin
1 tablespoon Bourbon
salt (for all sauces)
pepper (for all sauces)

  • Well -- Directions are simple. For each sauce, simply mix all the ingredients in a small measuring cup and then brush on the meats or seafood or poultry as they grill, roast, broil, bake or pan sear. Nothing more. A simple idea to make your dish a bit unique.
  • And remember, don't be afraid to add some extra flavors, or chopped nuts, or more spice, or more seasoning. But remember these are meant to be quick easy sauces for a quick dinner.
