THREE CHEESE ITALIAN SAUSAGE ALFREDO BAKE
Three Cheese Italian Sausage Alfredo Bake - great make-ahead pasta dish. Penne pasta, alfredo sauce, sour cream, ricotta, garlic, Italian sausage, eggs, parmesan, and mozzarella cheese. SO good!! Steps:
- Preheat oven to 350ºF. Lightly spray a 9x13-inch pan with cooking spray.
- In a large skillet, cook sausage until no longer pink. Drain fat.
- Prepare pasta according to package directions; drain and return to pot. Add cooked sausage, Alfredo sauce, sour cream, ricotta, garlic, eggs, parmesan and parsley. Stir well.
- Pour pasta mixture into prepared pan and top with mozzarella cheese.
- Bake, uncovered, for 30 to 40 minutes, until bubbly.
SAUSAGE THREE CHEESE CASSEROLE
This is an easy hearty casserole that can feed a big family or a small one several times.

Steps:
- Heat oven to 375 degrees. In large skillet cook sausage. When about 2/3 of the way fully cooked add onion,green peppers and mushrooms. Cook until sausage is fully cooked. Drain off fat.
- While sausage is cooking unroll one can of crescent rolls into the bottom of a 9x13 in ungreased dish. I use a glass on for this recipe. Press out rolls to cover the bottom and about 1/2 inch up sides of dish.
- While sausage mixture is still hot place in a large mixing bowl and add cream cheese. Mix well until cream cheese is melted.Spread mixture over bottom layer of crescent rolls evenly. Sprinkle shredded cheese over top.
- Unroll second can of crescent rolls and place ontop of cheese layer. Smooth dough around to cover as well as you can. This probably wont cover completely but that is ok. I like the way the cheese shows through the seams of the rolls.Place in oven and cook 35 to 40 minutes or until top layer of crescent rolls are golden brown and beautiful.:) Remove from oven and allow to sit for five to ten minutes. Enjoy!
THREE-CHEESE KIELBASA BAKE
I always have some type of smoked sausage in my fridge, because it lets me get supper on the table in a hurry during the week. This recipe was in a Taste of Home booklet called "No Fuss Freezer Meals", and makes two very large casseroles. We always add way more garlic than the recipe calls for, and use a spicy chipotle sausage.

- Cook macaroni according to package directions. Meanwhile, in a large skillet, brown sausage in oil over medium heat; drain. Add the onions, zucchini, carrots and garlic; cook and stir for 5 minutes or until crisp-tender.
- Stir in spaghetti sauce and tomatoes. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes. Drain macaroni.
- In each of two greased 13 x 9 x 2 baking dishes, layer a fourth of the macaroni and meat sauce. Combine egg and ricotta cheese; spoon a fourth over sauce. Sprinkle with a fourth of the cheddar and mozzarella. Repeat layers. Top with green onions.
- Cool one casserole; cover and freeze for up to 2 months. Cover and bake the remaining casserole at 350 for 15 minutes. Uncover; bake 15 minutes longer or until the cheese is melted to your liking.
- To use frozen casserole, thaw in the refrigerator for 24 hours. Remove from the refrigerator 30 minutes before baking. Cover and bake at 350 for 35 to 40 minutes or until heated through.

This is no ordinary casserole! Mashed potatoes are seasoned with three cheeses and baked with a full pound of polska-kielbasa sausage.

Steps:
- Heat water, milk, 1/4 cup butter and salt to boiling in 2-quart saucepan; remove from heat. Stir in potatoes just until moistened. Let stand about 30 seconds or until liquid is absorbed. Whip with fork until as fluffy as you'd like. Stir in sour cream and Cheddar cheese.
- Heat oven to 350°F. Grease square pan, 9x9x2 inches. Spread half of the potato mixture in pan; arrange sausage on top. Spread with remaining potato mixture. Sprinkle with mozzarella cheese. Mix remaining ingredients; sprinkle over top.
- Bake uncovered 25 to 30 minutes or until light brown.
