Asparagus with Dijon Vinaigrette image

A simple asparagus side dish that really celebrates Spring. Serve it cold or room temperature, leftovers are wonderful chopped and mixed into a salad.

1 tsp Dijon Mustard
1 1/2 tbsp red wine vinegar
1 tbsp extra virgin olive oil
2 tsp fresh chopped parsley
kosher salt and pepper to taste
1 pound thin asparagus (tough ends trimmed off)

Steps:

  • In a medium bowl, whisk mustard, vinegar and 1 tbsp oil. Add parsley and season with salt and pepper.
  • Steam or boil asparagus for 2-3 minutes until cooked and tender. Drain and run under cold water to stop the cooking.
  • Transfer asparagus to a serving dish and drizzle with the vinaigrette.
  • Can be served warm or chilled.

2 teaspoons Dijon mustard
2 tablespoons sherry wine or 2 tablespoons red wine vinegar
2 tablespoons extra-virgin olive oil, divided
coarse salt & freshly ground black pepper
1 lb thin asparagus, trimmed and cut into 2 1/2-inch lengths

Steps:

  • To make vinaigrette, whisk together mustard, vinegar, and 1 tablespoon oil in a medium bowl. Season with salt and pepper.
  • Heat remaining 1 tablespoon oil in a large skillet over medium heat. Add asparagus, and season with salt and pepper. Reduce heat to medium-low. Cook, stirring frequently, until asparagus are just tender, 10-12 minutes. (If the spears begin to brown, reduce heat to low.).
  • Transfer aspargus to serving dish. Drizzle with the vinaigrette, toss, and serve immediately.

Asparagus is one of the few vegetables that my kids love so we cook it all the time for dinner around here. This recipe adds just enough taste without making it heavy.

2 teaspoons Dijon Mustard
2 tablespoons red wine vinegar
1 tablespoon extra virgin olive oil
kosher salt and pepper to taste
1 pound asparagus ( ends trimmed off)

Steps:

  • In a medium bowl, whisk mustard, vinegar and 1 tbsp oil. Season with salt and pepper. Set aside.
  • In a large skillet, saute asparagus in a tiny bit of olive oil, salt, and pepper for 5-6 minutes or until tender. Transfer asparagus to a serving dish and drizzle with the vinaigrette. Can be served warm or chilled.

1 clove of garlic (minced)
Sea salt and freshly ground pepper (to taste)
Pinch of sugar
1/2 pound thin asparagus (trimmed and cut into 2 1/2-inch lengths)

Steps:

  • Whisk together mustard, vinegar, 1 tablespoon of olive oil, garlic, sea salt, freshly cracked pepper, and sugar, to taste, in a small bowl.
  • Heat a skillet that has been coated in cooking spray over medium heat. Add asparagus, and season with sea salt and freshly cracked pepper, to taste. Reduce heat to medium-low. Cook, stirring frequently, until asparagus are just tender, 5-6 minutes.
  • Drizzle the asparagus with the vinaigrette, toss, and serve immediately. Enjoy.

Asparagus is at its flavorful best for only a short time, usually between March and May, when you'll want to avail yourself of its abundance. There are, of course, a number of ways to prepare and serve asparagus, but this method, in which it is paired with a savory vinaigrette, is one of Martha's seasonal favorites.

Coarse salt
2 bunches asparagus (about 2 pounds), trimmed
1/2 teaspoon Dijon mustard
1 1/2 tablespoons champagne vinegar
Pinch of sugar
Freshly ground pepper
3 tablespoons extra-virgin olive oil
1 teaspoon lemon zest
1/2 teaspoon finely chopped fresh tarragon

Steps:

  • Prepare an ice-water bath; set aside. Bring a large pot of water to a boil. Add a generous amount of salt, and the asparagus. Return to a boil, and cook until asparagus are bright green and tender, about 3 minutes. Transfer to ice bath to cool. Drain well, pat dry, and transfer to a serving platter.
  • In a small bowl, whisk together mustard, vinegar, and sugar. Season with a pinch each of salt and pepper. Whisk in oil. Add lemon zest and tarragon; whisk to combine. Taste, and adjust for seasoning. Drizzle over asparagus. Serve immediately, or let stand at room temperature for up to 30 minutes before serving.
