Seaweed, Avocado, and Hearts of Palm Noodle Salad image

Call this my Japanese-inspired take on cobb salad, except that it's all vegetarian. It's a perfect dish for summertime eating. I love sweet and crispy hearts of palm, which are native to Latin America. Try to buy them fresh, if possible, but canned works fine, too. The umeboshi-yuzu vinaigrette lends the vegetables an irresistible tangy and citrusy flavor. Ramen noodles served chilled are springy, chewy, and absolutely delicious.

Number Of Ingredients 21

1/4 cup Japanese soy sauce
1/4 cup yuzu juice (can substitute with lemon juice)
2 teaspoons lemon juice
2 umeboshi (pickled Japanese apricots), pitted and chopped
1/4 cup sake
1 tablespoon sesame oil
1/4 cup sugar
1/2 teaspoon grated ginger
1/4 teaspoon salt
Dash of hot chili oil
1 1/2 tablespoons dried wakame
1 cup hot water
1/2 English cucumber
4 (7-ounce) pieces frozen ramen noodles
2 cups diced romaine lettuce
12 cherry tomatoes, quartered
1 avocado, cored and sliced into 1/4-inch-thick pieces
1/2 cup thinly sliced carrots
2 pieces hearts of palm, sliced into 1/4-inch-thick pieces on an angle (about 16 pieces)
4 obha leaves, thinly sliced
2 teaspoons sesame seeds

Steps:

  • To make the vinaigrette, combine all the ingredients in a bowl and whisk until well combined. Set aside.
  • To make the salad, in a small bowl, cover the wakame with the hot water and let sit for 10 minutes. Drain well and set aside.
  • Prepare the English cucumber by peeling the skin to resemble stripes, then cut it in half lengthwise and scoop out the seeds. Slice the cucumber halves into 1/4-inch-thick pieces on an angle.
  • Place a large pot of water over high heat and bring to a boil. Add the noodles and cook, following package instructions. Rinse under cold running water until the noodles are chilled. Drain well and divide among 4 plates.
  • To assemble the salad, top each pile of noodles with the lettuce, cucumber, cherry tomatoes, avocado, carrots, hearts of palm, and wakame. Garnish with the obha leaves and sesame seeds, then drizzle the dressing over each plate.

3 Hass avocadoes, cut into 1-inch cubes
1 (14 ounce) can hearts of palm, rinsed well and sliced 1-inch thick
1 cup fresh corn, cut off cob, cooked and cooled (or roasted corn)
1 cup cherry tomatoes, halved
2 tablespoons diced red onions
3 tablespoons pumpkin seeds, toasted (pepitas)
2 radishes, sliced
2 tablespoons cilantro, chopped
2 teaspoons apple cider vinegar
1 tablespoon lime juice
1/3 teaspoon Mexican oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon sugar
1/4 cup olive oil

Steps:

  • Toss all all salad ingredients lightly.
  • Place all dressing ingredients in a small jar, cover and shake very well for about 30 seconds.
  • Pour dressing over salad.
  • Place garnishes over salad and serve.

1/4 cup fresh cilantro, rinsed and patted dry with a paper towel
1 teaspoon garlic, minced
1 lemon, zest of
1/2 lemon, juice of
1/2 teaspoon sugar
1/4 teaspoon salt
4 tablespoons olive oil
lettuce (green leafy, red, spinach, iceberg, romaine-your choice)
1 -2 avocado, diced
7 ounces canned hearts of palm, drained
1/2 small red onion, chopped

Steps:

  • Dressing:
  • Mix all the ingredients in a blender or food processor.
  • Salad:.
  • Arrange the lettuce on four small plates. Stir together the avocado, hearts of palm and onion in a small bowl. Stir in enough dressing to just wet the ingredients. Arrange in mounds atop the lettuce. Serve.

4 teaspoons Dijon mustard
1/2 cup onion, chopped
1/2 cup green bell pepper, chopped
1/3 cup yellow bell pepper, chopped

2 eggs, hard boiled, peeled and chopped
3 avocados, peeled, halved, pitted and sliced lengthwise
8 ounces small shrimp, cooked
1 (14 ounce) can hearts of palm, drained and cut into 1/2 inch rounds

Steps:

  • To make dressing in a jar or bowl, whisk together first 4 ingredients (oil - mustard) and then add the onion all the bell peppers, parsley and egg, stirring to blend. Season with salt and pepper.
  • In a large salad bowl or platter, combine the remainder of the ingredients (avocados - hearts of palm) and drizzle with dressing.

5 green onions, chopped

Salad
3 7 1/2-ounce cans hearts of palm, drained
3 large tomatoes
3 large avocados, peeled, pitted
Red leaf lettuce leaves
2 1/2 pounds cooked medium shrimp, peeled, deveined
24 cooked crab claws

Steps:

  • For dressing:
  • Combine sour cream, mayonnaise, fresh lime juice, green onions, jalapeños, chili powder and dry mustard in medium bowl. Season to taste with salt. (Can be prepared 2 days ahead. Cover and refrigerate.)
  • For salad:
  • Cut hearts of palm, tomatoes and avocados into 1-inch pieces. Combine in medium bowl. Mix vegetables with just enough dressing to coat lightly. Line large platter with lettuce leaves. Mound vegetables in center. Surround with shrimp and crab. Serve remaining dressing on side.

3 (14.25 ounce) cans hearts of palm, drained and sliced
2 (.7 ounce) packages dry Italian-style salad dressing mix
½ cup white wine or champagne vinegar
6 tablespoons water
1 cup olive oil
1 (8 ounce) jar green olives, sliced
1 (6 ounce) can sliced black olives
2 tablespoons bacon bits

Steps:

  • In a medium bowl, whisk together the dressing mix, vinegar, and water until well blended. Whisk in olive oil. Add hearts of palm to the bowl, and stir to coat. Cover and refrigerate for at least one hour or overnight.
  • Before serving, sprinkle the green and black olives, and bacon bits over the salad.
