Sesame Noodles With Mushrooms image

8 ounces thin noodles
1/4 cup soy sauce
1/4 vegetable oil
3 tablespoons pure sesame oil
2 tablespoons sugar
2 tablespoons rice wine vinegar
1/2 teaspoon hot chile oil
4 cloves garlic, minced
4 tablespoons salted butter
8 ounces cremini mushrooms, thinly sliced
4 ounces shiitake mushrooms, thinly sliced
4 green onions, thinly sliced

Steps:

  • Bring a large pot of water to a boil. Cook the noodles according to the package instructions in the boiling water. Drain and set aside.
  • Mix together the soy sauce, vegetable oil, sesame oil, sugar, vinegar, chile oil and garlic in a small pitcher. Set aside.
  • Add the butter to a large skillet over medium-high heat. When the butter has melted, add the mushrooms and cook until thoroughly browned, 5 to 7 minutes. Pour in the sauce and stir to combine. Remove the skillet from the heat. Add the noodles and toss to combine. Sprinkle over the green onions and give one final toss. Serve.

This sesame garlic grilled mushrooms recipe is a flavor packed side dish that pairs perfectly with so many grilled dishes! It's super easy to prep and it only takes a few minutes on the grill to cook.

2 - 8 oz. packages baby bella mushrooms, stems removed
1/4 cup soy sauce, or tamari if gluten free
1/4 cup honey, or maple syrup if vegan
3 Tablespoons olive oil
3 Tablespoons lemon juice
1/2 teaspoon ginger powder
1/2 teaspoon black pepper
3 cloves garlic, minced
1 teaspoon sesame seeds, for garnish

Steps:

  • Prepare the mushrooms. Wash thoroughly, then chop into halves or quarters. If your baby bellas are on the large side, I recommend chopping into quarters.
  • In a large ziplock bag, combine soy sauce, honey, olive oil, lemon juice, ginger powder, pepper, and garlic. Shake the bag up to combine well, then add the chopped mushrooms. Gently rotate the bag to coat the mushrooms, then press out as much air as possible.
  • Refrigerate for 30 minutes prior to skewering.
  • Preheat grill to medium-high.
  • Skewer the mushrooms, then place the skewers directly onto the grill grates. Cook 8 minutes, rotating once at the halfway point. Remove from the grill and enjoy!

1 pound Mushrooms (wiped clean, stems trimmed)
1 tablespoon Extra Virgin Olive Oil (or any cooking oil)
2 cloves Garlic (minced)
2 tablespoons Fresh Chives (chopped (or 1 teaspoon dried))
1/8 teaspoon Sea Salt
1/8 teaspoon Black Pepper
1/8 teaspoon Garlic Powder

Steps:

  • Preheat oven to 400°F.
  • Place MUSHROOMS in a mixing bowl with OLIVE OIL, GARLIC, CHIVES, SALT, and PEPPER. Toss gently to coat.
  • Scatter mushrooms on a baking sheet and dust with GARLIC POWDER.
  • Bake 10-12 minutes until browned and juicy. Serve warm.
  • Once cooled, refrigerate roasted mushrooms in an airtight container up to 2 days. Reheat or enjoy chilled.

Yield serves 4

Number Of Ingredients 7

1/4 cup sesame oil
2 garlic cloves, halved
1-inch piece ginger, whacked open with the flat side of a knife
2 pounds assorted mushrooms, your choice
1/4 cup low-sodium soy sauce
1 tablespoon brown sugar
Pinch of red pepper flakes

Steps:

  • Place a skillet over medium heat and add the sesame oil, garlic, and ginger. Add the mushrooms and cook and stir for 8 to 10 minutes, or until the mushrooms begin to caramelize. Add the soy sauce and then sprinkle with the sugar. Continue to cook for 3 to 5 minutes to dissolve the sugar. Add the red pepper flakes and serve.
