SESAME SEED BREADSTICKS

Sesame Seed Breadsticks image

These crispy breadsticks will keep for weeks if refrigerated. Make them with all purpose or bread flour or a mix of whole wheat and white. A KitchenAid stand mixer does all the work, or you can knead the dough by hand. The dough needs to be a little sticky to hold the seeds. If not, rub a bit of olive oil on your hands when rolling. - Jenny Jones

Time 2h

Yield one dozen

Number Of Ingredients 7

1 1/2 cups all purpose flour (or 3/4 whole wheat + 3/4 cup all purpose flour)
1 teaspoon instant or rapid-rise yeast
3/4 teaspoon salt
3/4 teaspoon sugar
1 teaspoon olive oil
about 2/3 cup warm water (120 - 130°F)
1/3 cup sesame seeds

Steps:

  • Line a large baking sheet with parchment paper.
  • Spread sesame seeds on wax paper.
  • In a mixing bowl combine flour(s), yeast, salt & sugar.
  • Add oil & enough water to make a soft dough. Knead for one minute with a KitchenAid mixer or about 50 times by hand on a barely floured surface. DO NOT ADD TOO MUCH FLOUR WHEN KNEADING.
  • On an unfloured surface, roll into 12 8-inch sticks & coat each stick with sesame seeds. If seeds don't stick, rub a little oil on your hands when rolling.
  • Place on baking sheet & let rise in a warm place until double (45 min - 1 hour)
  • Preheat oven to 325° F and bake for 25 minutes.
  • Turn the breadsticks over and bake another 20-25 minutes.
  • Test the fattest breadstick and if it's still soft in the middle, turn oven off and prop open the door. Let the oven cool down for about 20 minutes. Return baking sheet to the oven with the door open a few inches for up to an hour until breadsticks are totally dry throughout.
  • Cool completely. Store in a sealed container.

SESAME BREADSTICKS

Sesame Breadsticks image

A basket of unusual breadsticks will vanish in no time. The fact that you scatter the strips of dough on baking sheets rather like pick-up sticks results in great texture: they're chewy where the strips overlap and crisp where they don't.

Categories     Holiday 2018     Christmas     Christmas Eve     New Year's Eve     Cocktail Party     Bread     Sesame     Hors D'Oeuvre     Bake     Entertaining     Party

Yield 8 servings

Number Of Ingredients 8

1/2 cup warm water (105-115°F)
1 tsp active dry yeast
1 tsp sugar
2 tsp olive oil
1 1/4 tsp salt
1 to 1 1/3 cups all-purpose flour
3 Tbsp white sesame seeds (not toasted)
3 Tbsp black sesame seeds (not toasted; see Cooks' Note, below)

Steps:

  • Stir together water, yeast, and sugar in a medium bowl, and let stand until foamy, about 5 minutes. (If mixture doesn't foam, start over with new yeast.) Add oil, salt, and 1 cup flour and stir until a dough forms (it should be soft but not sticky), adding more flour a little at a time, if necessary.
  • Turn out dough onto a lightly floured surface and knead until smooth and elastic, adding just enough flour to surface to keep dough from sticking, 8 to 10 minutes. Transfer dough to a lightly oiled bowl and turn to coat. Cover tightly with plastic wrap and let dough rise in a warm, draft-free place until doubled, about 1 hour.
  • Preheat oven to 400°F with racks in upper and lower thirds. Oil 2 large baking sheets.
  • Punch down dough, then roll out on a lightly floured surface with a lightly floured rolling pin into a 13-inch square. Lightly brush dough with water and sprinkle with sesame seeds, pressing to help them adhere. Cut dough into very thin strips (about 1/4-inch wide) with a pizza wheel or sharp knife.
  • Divide strips between baking sheets, scattering them loosely in a free-form pattern (strips may overlap). Bake, switching position of sheets halfway through, until crisp and golden-brown in spots, 10 to 15 minutes (if breadsticks begin to get too dark in spots, cover area with foil.) Transfer to racks to cool, about 10 minutes.
  • Do Ahead
  • Breadsticks can be made up to 1 week ahead and kept in an airtight container at room temperature. Reheat if desired before serving.

WHOLE-WHEAT BREADSTICKS WITH SESAME

Whole-Wheat Breadsticks With Sesame image

Sesame seeds are used in both the dough and the coating of these nutty-tasting breadsticks.

Provided by Martha Rose Shulman

Categories     appetizer

Time 2h30m

Yield Two dozen breadsticks

Number Of Ingredients 9

2 teaspoons active dry yeast
1 1/2 cup lukewarm water
1 teaspoon honey, agave nectar, malt extract or rice syrup
1/4 cup extra virgin olive oil
2 cups whole-wheat flour
About 1 1/3 cups unbleached all-purpose flour
1/2 cup sesame seeds
1 1/2 teaspoons salt
1 egg white, lightly beaten

Steps:

  • Dissolve the yeast in the water in a large bowl or in the bowl of a stand mixer. Stir in the honey, agave nectar, malt extract or rice syrup. Let stand for five minutes. Stir in the olive oil.
  • Combine the whole-wheat flour, 1 cup of the unbleached all-purpose flour, 1/4 cup of the sesame seeds and the salt. Add to the liquid mixture. If kneading by hand, stir until you can turn the dough out onto a lightly floured surface; knead for 10 minutes, adding flour as necessary to keep the dough from sticking to your hands and worktop. If using an electric mixer, mix at medium speed for 8 to 10 minutes. Add flour as necessary so that the dough comes away from the sides of the bowl. The dough should be elastic and just slightly sticky.
  • Lightly flour your work surface or brush with olive oil. Using your hands or a rolling pin, roll the dough into a 14-by-4-inch rectangle. Make sure there is enough flour or oil underneath the dough so that it doesn't stick to the work surface. Brush the top with oil. Cover with plastic wrap, then with a damp kitchen towel. Allow to rise for 1 to 1 1/2 hours until nearly doubled. (If you need the workspace, lightly oil the underside of a sheet pan and place the dough on top.)
  • Preheat the oven to 400 degrees with the racks positioned in the middle and upper thirds of the interior space. Brush sheet pans with olive oil. Cut the dough crosswise into four equal pieces. Brush each piece with beaten egg white, then roll each piece in 1 tablespoon of the remaining sesame seeds, until coated. Cut each piece crosswise into six equal pieces. Roll each between the board and your hands as if you were making a rope until it is as long as the baking sheet. For a tighter strip, twist the strands from one end to the other. Place 1 inch apart on the baking sheets until you've filled two baking sheets. Continue to shape the remaining breadsticks while the first batch is baking.
  • Place in the oven, and bake 15 minutes. Switch the pans top to bottom and front to back, and bake another 10 minutes until the breadsticks are nicely browned (they will be darker on the bottom). Remove from the heat, and cool on a rack. Shape and bake any remaining dough as instructed.

  • In a large bowl, combine the flour, salt, and instant yeast. Then add the olive oil and water. Stir to combine, then knead with your hands (or use a kitchen machine with a dough hook) until it's a smooth dough. If the dough is too sticky, add more flour; if it's too crumbly, add more water.
  • Cover the bowl with a clean kitchen towel and let it sit in a warm place until the dough doubles in size (for about 2 hours).
  • Roll out the dough on a lightly floured parchment paper, like you would with pizza, and brush the dough with olive oil. Sprinkle salt and sesame seeds on top.

  • Place 1/4 cup of the warm water in a small bowl and sprinkle over the yeast. Add a pinch of sugar and stir the yeast to dissolve it. Set the bowl aside to proof for 5 to 7 minutes.
  • Place the semolina and all-purpose flour in the bowl of an electric mixer along with the salt and 2 tablespoons of the sesame seeds, and stir to combine them.
  • Make a well in the center of the dry ingredients and pour in the yeast mixture, the remaining water, and the olive oil. Attach the dough hook and knead the ingredients together on medium speed for 2 minutes; the dough will start out rough and gradually become smooth.
  • Remove the dough from the bowl, and on a lightly floured board, knead the dough by hand until it is velvety smooth and elastic, about one minute or 30 strokes.
  • Cover the bowl with plastic wrap and set it in a warm, draft-free area to rise until tripled in bulk, about 2 1/2 hours. (If you want the dough to rise overnight in the refrigerator, place it in an airtight plastic container, also greased with olive oil, that will be large enough to accommodate the dough when it has doubled in volume.
  • Preheat the oven to 400°F. Prepare two baking sheets by adding about 1 1/2 or 2 tablespoons of additional olive oil; spread the oil out evenly on the sheets to coat.
  • Turn out the dough onto a lightly floured board and divide it into 6 even-sized pieces. Work with one piece of dough at a time, and cover the other pieces with a damp towel or plastic wrap to prevent them from drying out.
  • Cut each piece of dough into 4 or 5 portions, about the size of a walnut in its shell. If you have a scale, they should weigh 3/4 to 1 ounce. Form the breadsticks by rolling the pieces into a long strand with both hands, about 12 to 14 inches in length.
  • Place the breadstick on the oiled baking sheet and turn it, holding the ends, completely coating it with the oil. You should be able to fit 10 or 12 breadsticks on each tray; space them evenly apart by 1/2 an inch.
  • After forming all of the breadsticks, coat them with the sesame seeds, beginning with the first one you formed as it is the most relaxed and easy to work with.

Add the fennel seeds and sesame seeds and briefly work into the dough.
