SCALLION AND PARMESAN MASHED SWEET POTATOES
These mashed sweet potatoes with Parmesan and scallion are the perfect blend of sweet, salty and savory.

Steps:
- Put the potatoes in a large pot and cover with cold water; salt the water liberally. Bring to a boil and cook until tender, 8 to 10 minutes. Drain well and return to the same pot set over low heat. Mash until smooth with a potato masher. Add the butter, Parmesan and salt and pepper to taste. Mash until the butter has melted. Stir in the scallions. Serve sprinkled with Parmesan and scallions.

This recipe is a hand-me-down from my mother. My dad used to plant a lot of sweet potatoes, so Mother became quite creative in preparing them. - In a bowl, combine the eggs, sugar, milk and butter. Combine the flour, salt, cinnamon, nutmeg and allspice; stir into the egg mixture with sweet potatoes. , Transfer to a greased 8-in. square baking dish. Bake, uncovered, at 350° for 40-45 minutes or until a knife inserted in the center comes out clean.

- Peel sweet potatoes and quarter length-wise. In a food processor shred sweet potatoes.
- In a 12-inch non-stick skillet heat oil over moderately high heat until hot but not smoking and sauté sweet potatoes with cumin and salt and pepper to taste, stirring, until just tender, about 3 minutes. Stir in scallion and lemon juice.
SCALLION SWEET POTATOES

- Combine 1 1/2 pounds chopped peeled sweet potatoes, 1 bunch scallions (cut into 2-inch pieces), 6 crushed garlic cloves and 1 tablespoon fresh thyme in a bowl. Drizzle with 1/4 cup olive oil, season with salt and pepper and toss. Place on a sheet of foil and fold up. Grill over low heat until the potatoes are tender, 20 to 25 minutes.
CUMIN ROASTED SWEET POTATOES
Just four ingredients, plus a dash of salt and pepper, are all you need to pull together this smoky side dish with concentrated, roasted flavors.

SCALLOPED SWEET POTATOES RECIPE BY TASTY

- Preheat the oven to 350°F (180°C).
- Using a mandolin, slice the sweet potato. Arrange a layer of sweet potatoes in the bottom of a baking dish.
- Heat the olive oil in a medium pan over medium heat. Add the onion and sauté for 3-4 minutes, until softened. Add the garlic and sauté for 1-2 minutes, until fragrant.
- Add the flour and cook until the vegetables are well coated. Pour in the stock and whisk to incorporate. Pour in the milk and season with the salt, pepper, and half of the thyme. Simmer for 1-2 minutes, until thickened slightly. Remove the pan from the heat.
- Pour half of the cream sauce over the layer of sweet potatoes in the baking dish. Top with 1 cup cheddar cheese and the Parmesan. Add another layer of potatoes, then top with the remaining cream sauce and cheddar cheese.
- Cover the baking dish with aluminum foil and bake for 20 minutes.
- Carefully remove and allow to cool for 5-10 minutes.
- Serve the scalloped sweet potatoes warm, garnished with the remaining thyme.

- Heat grill to medium. Peel sweet potatoes, and cut lengthwise into 1/2-inch-thick slices. Toss potatoes in a large bowl with oil, thyme, and cayenne pepper; season with salt and black pepper.
- Grill potatoes, turning frequently, until tender when pierced with the tip of a paring knife, 20 to 30 minutes.

- Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with foil and spray with cooking spray.
- Brush cut sides of sweet potatoes with olive oil. Lay cut side-down onto the baking sheet. Brush skins with olive oil.
- Roast in the preheated oven until cooked through, about 35 minutes.
- Meanwhile, prepare miso-scallion butter. Warm coconut oil in a small saucepan over medium heat. Add onion and ginger and cook for 3 to 4 minutes. Remove from heat and add miso, pressing miso against the saucepan with the back of a spoon to soften. Add soy sauce, brown sugar, and scallion.
- Heat over low, stirring constantly, until sugar is completely melted and mixture is warmed through, about 3 minutes. Do not boil.
- Remove sweet potatoes from the oven and flip over. Cut a slit into the sweet potato flesh and spoon miso butter over the top.

SHREDDED SWEET POTATO PUDDING
When I first saw this recipe demonstrated on a cooking program on Food Network, I had to copy it down to try for Thanksgiving. I have since made this several times for holiday meals and received many compliments. I have to warn you - this is no diet dish. This is very rich and very,very sweet. Even though this is sweet enough to be a dessert, this is meant to be a side dish to compliment a saltier main dish - such as a baked ham. I imagine you could try using shredded carrots as well, but I have yet to do so. (Adapted from "Calling all Cooks" where this was called Mama Lane's Sweet Potato Pudding and was shared guest Jim Brown.) Servings are all relative to how big a portion your guests scoop up - some years I have had less yield. I have successfully doubled this recipe when needed.

- If you haven't already done so, peel sweet potatoes, cut into large chunks and run through the shredder of your food processor.
- Combine the sugar, egg, butter, milk, and vanilla with a whisk.

- Preheat oven to 450°F with rack in upper third.
- Prick potatoes all over with a fork and put on a foil-lined large baking sheet.
- Bake until very soft when squeezed, 45 minutes to 1 hour.
- While potatoes bake, stir together butter, miso, and scallion until combined.
- Slit hot potatoes lengthwise and, using oven mitts, push in sides to puff up potato.
- Serve with some scallion butter in center of each and with additional scallion butter on the side.
- Scallion butter can be made 4 days ahead and chilled, covered.
- Bring to warm room temperature and stir before using.
- Sweet potatoes can be roasted (but not cut) 4 hours ahead and kept at room temperature, covered with foil.
- Reheat potatoes on a baking sheet on middle rack of a 350°F oven until heated through, about 20 minutes.
