Ensalada De Nopales Y Camarones - Cactus and Shrimp Salad image

Cactus is a common and tasty food item in Mexico and parts of SW USA. Cactus, or NOPALES as they are known in Texas and Mexico, can be found fresh and needle free in the produce section. You can even find jars of Nopales or Nopalitos (little (pieces of) Nopales) in the ethnic aisle of your grocery store. If you choose to use those please drain them and rinse them well. Green Beans or chayote can be substituted if cactus is not available. The nutritional info here is not correct as the olive oil is used for coating the items you are grilling and in the dressing. Not all of it is consumed. This recipe is from La Comida Del Barrio (meaning Foods from the neighborhood) Latin American Cooking in the U.S., by Aaron Sanchez (Clarkson Potter, 2003) This dish would be wonderful with any Mexican cerveza (beer) or with a crisp and fruity Sauvignon Blanc.

3 tomatoes
1/2 medium red onion, diced
1 jalapeno, diced
1/4 cup cilantro, chopped
1 garlic clove, minced
1/2 cup extra virgin olive oil, divided
4 nopales (cactus paddles- about 1 to 1 1/2 cups when made into strips)
salt & freshly ground black pepper, to taste
1/2 lb medium shrimp, peeled and deveined
1/4 cup cider vinegar
splash tequila, I use Herradura reposado (optional)
lettuce leaves or corn tortilla, for serving

Steps:

  • Seed and dice tomatoes. Chop onion and cilantro. Finely dice the jalapeno and mix all together in a large bowl. Set aside.
  • In a separate medium sized bowl, combine the garlic and half of the extra virgin olive oil. Brush the nopales with the garlic oil to coat using a basting brush, season both sides with salt and pepper to taste. Reserve the leftover garlic oil.
  • Place the cactus on a preheated a grill or grill pan over a medium-high flame and cook until limp, about 4 minutes on each side. Remove and allow to cool, then cut the pads into ¼-inch thick strips. Add to the tomato mixture.
  • Brush the shrimp with the reserved garlic oil and season with salt and pepper. Grill for 3 minutes on each side, until firm and pink and add to the tomato-nopales mixture.
  • Add the vinegar, tequila and remaining olive oil and toss to coat. Season with salt and pepper to taste. Serve in a lettuce leaf or corn tortilla.

5 -6 prickly pears, dethorned if necessary,peeled,yielding 1 1/4 cup of puree (tunas, the fruit of the cactus)
1 (8 ounce) box tempura mix (some will be left over)
1 tablespoon achiote paste
1/2 lb large shrimp or 1/2 lb medium shrimp, peeled and deveined
1/4 cup cornstarch
peanut oil, for frying
1/4 cup white wine
1/2 bunch cilantro, stems removed
1 shallot, minced
1 lime
1/4 cup heavy cream
1/4 lb unsalted butter, at room temperature

Steps:

  • Pulse tunas (cactus fruit) briefly in a food processor or blender; strain.
  • Set aside 1 cup puréed tunas, and reserve remaining 1/4 cup for Cactus-Lime-Butter Sauce.
  • Combine 1 cup tempura mix and the achiote paste in a blender or food processor, and pulse until smooth.
  • Place mixture in a medium-size bowl, add 1 cup puréed tunas, and mix well.
  • Chill.
  • Dust shrimp with cornstarch.
  • Dip each shrimp individually into tempura-tuna batter, and fry in hot oil (375°) until golden brown, frying only 3-4 at a time.
  • Drain well.
  • For the Cactus-Lime-Butter Sauce: Combine wine, cilantro, and shallot in a heavy 2 quart saucepan.
  • Cook over medium heat until wine is almost gone.
  • While the wine is reducing, zest the lime; set zest aside.
  • Juice the lime; set juice aside.
  • When the wine has reduced to almost nothing, add lime zest, lime juice, and heavy cream, stirring constantly with a whisk.
  • Lower heat, and simmer for 3-5 minutes.
  • Remove from heat for about 5 minutes.
  • While the pot is still hot, slowly begin whisking in the butter, a tablespoon at a time, until smooth.
  • Strain through a fine sieve.
  • Keep sauce warm-if it becomes too cold or too hot, the sauce will separate, and you'll have to begin the process again.
  • Fold in the remaining 1/4 cup cactus fruit purée.
  • Yield: Enough sauce for Cactus Shrimp.

SHRIMP-STUFFED NOPALES

Nopales are cactus paddles. They may be hard to come by if you don't live in a border state or have access to a Mexican market. If you're lucky, you'll find prickly pear cactus paddles, which are packed with soluble fiber, vitamins, and minerals and reduce the glycemic effect of a meal. The stuffing is the star of this recipe, so if nopales are nowhere in sight, you can use corn tortillas for equally delicious (although not as pretty) results. At my house, we grill plain nopales until they are tender and a little charred and serve them with some lime wedges.

Number Of Ingredients 9

2 tablespoons olive oil
1 cup chopped red bell pepper
1 cup chopped onion
1 cup chopped seeded tomato
1 pound raw shrimp, peeled, deveined, and chopped
Salt and freshly ground black pepper
4 cleaned prickly pear cactus paddles (1 1/4 pounds)
Lime wedges, for serving
Bottled hot sauce (such as Huichol), for serving

Steps:

  • Heat the olive oil in a medium-size heavy saucepan over medium-high heat. Add the bell pepper, onion, and tomato and sauté for 8 minutes, or until the pepper is nearly tender. Add the shrimp and sauté for 2 minutes, or until just cooked through. Season the stuffing to taste with salt and pepper, and set it aside.
  • Heat a grill pan over medium-high heat. Using a small sharp knife, carefully cut a slit along one long side of each nopal without cutting all the way through, to make something resembling a pita pocket. Grill the nopales for 4 minutes per side, or until they are tender and grill marks appear.
  • Stuff the nopales with the shrimp mixture, dividing it equally, and serve with lime wedges and hot sauce.

1 pound cactus paddles or fresh green beans
1 cup thinly sliced onion
2 cloves minced garlic
2 medium tomatoes, diced small
3 radishes, julienned
1/4 cup chopped cilantro
3 tablespoons extra virgin olive oil
1 tablespoon white vinegar
1 tablespoon lime juice
2 teaspoons leaf oregano
1 teaspoon salt
Freshly ground black pepper to taste
1/4 cup crumbled queso fresco or feta cheese
2 pounds small cooked, peeled and deveined shrimp

Steps:

  • Pare the spines from the cactus; trim the base and around the edge. Dice into 3/4 x 1/4-inch pieces. Blanch in boiling water for 5 to 7 minutes or until tender. Drain and rinse thoroughly. Combine with the remaining ingredients in a large bowl. Chill in the refrigerator for 3 hours or until cold. Serve cold with baked corn tortillas.
