1/4 pound (1 stick) unsalted butter
2 tablespoons good olive oil
2 tablespoons minced garlic (6 cloves)
2 teaspoons minced fresh rosemary leaves
1/4 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
2 large lemons
2 pounds (8- to 10-count) shrimp, peeled with the tails on
1 teaspoon coarse sea salt
4 slices country bread, toasted

Steps:

  • Preheat the oven to 400 degrees.
  • Melt the butter over low heat in a medium (10-inch) saute pan. Add the olive oil, garlic, rosemary, red pepper flakes, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper and cook over low heat for one minute. Off the heat, zest one of the lemons directly into the butter mixture.
  • Meanwhile, arrange the shrimp snugly in one layer in a large (12-inch) round ovenproof sauté pan (or 10 × 13-inch baking dish) with only the tails overlapping. Pour the butter mixture over the shrimp. Sprinkle with the sea salt and 1/2 teaspoon black pepper. Slice the ends off the zested lemon, cut five (1/4-inch-thick) slices, and tuck them among the shrimp. Roast for 12 to 15 minutes, just until the shrimp are firm, pink, and cooked through. Cut the remaining lemon in half and squeeze the juice onto the shrimp. Serve hot with the toasted bread for dipping into the garlic butter.

1/4 cup parmesan cheese (grated)

2 tablespoons sherry (dry)
Garnish: fresh parsley (chopped)
Garnish: parmesan cheese (grated, shredded, or shaved)

Steps:

  • Gather the ingredients.
  • Preheat the oven to 325 F.
  • Butter a shallow 2 1/2-quart baking dish.
  • Place shrimp in an even layer in the dish.
  • Combine the butter, bread crumbs, cheese, salt, lemon juice, and sherry.
  • Sprinkle crumb mixture evenly over shrimps.
  • Bake in the preheated oven for 20 to 25 minutes, or until shrimps are cooked.

They take a bit more work than your basic shrimp cocktail, but worth it for a special occasion. The shrimp can either be served as an appetizer or as a main dish.

1 pound jumbo shrimp, peeled and deveined, shrimp tails left on Note 1 ((about 16-20 size per pound/450grams))
8 tablespoons butter (1/4 pound) ((1` stick))
garnish: lemon wedges
1/2 cup plain Panko or bread crumbs ((I use plain panko to make the shrimp crunchier))
1 teaspoon dried oregano ((or 1 tablespoon fresh, chopped))
1/2 teaspoon dried thyme ((or 1/2 tablespoon fresh, chopped))
1 teaspoon dried basil ((or 1 tablespoon fresh, chopped))
1 tablespoons chopped fresh parsley ((or 1 teaspoon dried))
1/2 tablespoon minced garlic ((2 small cloves))
1 teaspoon lemon zest (optional)
kosher salt and black pepper, to taste

Steps:

  • HEAT OVEN TO 400F/204C. Line baking sheet with parchment paper. Melt butter for 30 seconds in a small bowl in the Microwave on High.
  • TOAST CRUMBS and SEASON: Spread Panko or bread crumbs evenly on a baking sheet and toast in the oven until golden brown, about 6-7 minutes. Watch them carefully and stir halfway through, making sure they don't burn. Remove from the oven and transfer to shallow dish to cool. Add garlic and seasonings to bread crumbs and stir to combine. Taste and adjust salt and pepper.
  • INCREASE OVEN TEMPERATURE TO 500F/260C. Line baking sheet with tin foil and spray with peanut oil or olive oil.
  • BUTTERFLY SHRIMP: Here's a video on how to peel, devein and butterfly shrimp. Using a sharp paring knife, make a deep slice (but not all the way through) along the top of each shrimp where the black vein was (the humped part). Turn the shrimp over and make 3 small shallow slits horizontally across the shrimp (1/2 inch/1.27 cm apart) to help prevent the shrimp from curling during cooking. Pat dry with a paper towel (don't skip this step!).
  • BREAD ONE SIDE OF SHRIMP: Dip each shrimp in melted butter and then dredge butterflied open side in bread crumbs, pressing so it sticks. Place shrimp, bread crumb side up, in foil-lined pan in a single layer. Repeat with all shrimp. Drizzle shrimp with a little more of melted butter. (hmm, I know what you're thinking...more butter?... go for it or skip it - up to you - I go for it). At this point, you can let the shrimp sit for an hour or so until you're ready to bake them.
  • BAKE AND SERVE: Bake in center of oven for 5 minutes (for jumbo shrimp) and 4 minutes (for large shrimp) until just cooked through. Don't over cook. Serve with a squeeze of fresh lemon juice, lemon wedges or cocktail sauce. Sprinkle on additional chopped parsley for color.

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch glass casserole dish with nonstick cooking spray.

2 tablespoons unsalted butter
2 cups panko breadcrumbs
2 tablespoons finely chopped chives
2 teaspoons finely chopped oregano
1/2 teaspoon lemon zest
2 tablespoons extra-virgin olive oil
2 pounds large shrimp (16-20 count), peeled and deveined
Kosher salt and freshly ground black pepper
12 cloves garlic, finely chopped
1 shallot, finely chopped
1 cup dry white wine
1/4 cup freshly squeezed lemon juice (from 1 to 1 1/2 lemons)
Pinch red pepper flakes
Pinch dried oregano
4 tablespoons (1/2 stick) unsalted butter, cut up
3/4 cup loosely packed fresh flat-leaf parsley, chopped
12 ounces capellini

Steps:

  • Bring a 6- to 8-quart soup pot of generously salted water to a boil.
  • For the topping: In a large stainless steel skillet, heat the butter over medium heat until melted and slightly browned but not burned. Add the breadcrumbs. Using a wooden spoon, stir the breadcrumbs to coat with the brown butter, and toast until golden brown, 2 to 3 minutes. Remove from the heat. Stir in the chives, oregano and lemon zest. Season to taste and set aside.
  • For the pasta: Meanwhile, heat the oil in a large saute pan over high heat until shimmering. Season the shrimp all over with salt and pepper. Add the shrimp to the pan in one layer and cook for 1 minute. Turn and cook 1 more minute. Using a slotted spoon, transfer the shrimp to a bowl.
  • Add the garlic and shallot to the pan and cook for 1 minute. Add the wine, lemon juice, pepper flakes and oregano and simmer for 3 minutes. Whisk in the butter piece by piece, thoroughly incorporating each piece before adding the next. Taste and season with additional salt and pepper as needed. Add the shrimp back to the pan and simmer until completely cooked through, about 2 minutes. Stir in the parsley. Remove the skillet from the heat.
  • Add the capellini to the boiling water and cook until just tender, about 4 minutes. Reserve 1 cup of the cooking water and transfer the capellini to a colander to drain. Toss the capellini with the shrimp and parsley, adding some of the pasta water if necessary to keep it moist. Transfer to a large serving bowl or into small bowls as individual servings.
  • Top with herb breadcrumbs.

2 cups fresh bread crumbs
16 extra large shrimp, peeled and deveined, tails left on
Freshly ground black pepper
Salt
2 tablespoons chopped fresh oregano leaves
1 tablespoon chopped fresh thyme leaves
2 tablespoons chopped fresh parsley leaves
2 tablespoons chopped fresh basil leaves
1 tablespoon chopped garlic
4 ounces butter, melted
4 cups arugula, cleaned
2 tablespoons extra-virgin olive oil
1/2 lemon, juiced
Lemon wedges, for garnish

Steps:

  • Preheat the oven to 400 degrees F.
  • Spread the bread crumbs evenly on a baking sheet and toast in the oven until golden brown, about 10 minutes. Watch them carefully as they burn very quickly. Remove from the oven and cool. Raise the oven to 500 degrees F.
  • Butterfly the shrimp by slicing from the tail to the front on the top of the shrimp, where the vein was. Slice as deep as possible without cutting all the way through. Turn the shrimp over and make 3 small shallow slits horizontally across the shrimp, being careful not to cut all the way through. These slits will prevent the shrimp from curling during cooking. Season with salt and pepper and set aside.
  • Mix together the oregano, thyme, parsley, basil and garlic. Add the garlic herb mixture to the bread crumbs and mix well. Season with salt and pepper.
  • Brush a large ovenproof skillet with some of the melted butter, coating the bottom well. Dip the shrimp in the butter, opened side down, and then dredge in the bread crumbs, pressing so they stick. Place the shrimp, bread crumb side up, in the skillet in 1 layer.
  • When all of the shrimp are in the pan, drizzle the top with a little more of the melted butter. Bake for about 5 minutes, or until the shrimp are just cooked through and the bread crumbs are golden brown.
  • Toss the arugula with the olive oil and lemon juice and season with salt and pepper. Divide the arugula among 4 plates. Place 4 shrimp around each pile of arugula. Drizzle with more butter, if desired, and serve with lemon wedges.

SIMPLE GARLIC & HERB BREAD CRUMBS

i didn't have any bread crumbs in the house the other night and i wanted to make my baked pork stew meat with garlic rice. so yup you guessed it i made my own. not real hard to do but it made my pork even tastier than when i use the store bought crumbs so here it is .

1 large loaf of bread any kind really. i used rye and white
2 Tbsp minced garlic
1 Tbsp of each of the following, black pepper, sea salt,garlic powder,onion powder,basil,oregano,cumin,sage and chicken seasonings
2/3 c melted butter, not margarine

Steps:

  • 1. heat oven to 450, prepare three to four cookie sheets with a light spray of non stick or use a thin smear of crisco. set aside.
  • 2. take each slice of bread and place on cookie sheets. when oven is preheated place sheets in oven but watch carefully as to not burn. you want to toast the breading but not burn it.
  • 3. once toasted on both sides to a golden brown remove from oven . reduce heat to 350
  • 4. melt butter either in microwave or on stove top. once completely melted stir in all the seasonings mentioned above. you can cut the salt out completely if you want to lower sodium.
  • 5. mix the seasoning and butter well. then lightly brush both sides of the bread with the seasonings. place back on cookie sheets and back into your lower heated oven. bake for another ten minutes on both sides. the bread will turn a dark brown but you don't want to burn the bread so be careful.
  • 6. shut your oven off and let cool with bread in the oven. open your oven door as to release the heat quicker. this will take about a half hour. let your toast cool but insure that your toast is dry on both sides of the bread. if not, turn your oven back on to 200 degrees. place toast back on sheets and back in the oven. this time let them sit in the cooler oven till the center of the bread is dry.i usually bring it to temp by preheating then shut the oven off. and with the door closed this time i let the oven cool again. once this is done and the bread is completely dry in the center i then place my bread in my food processor by breaking the bread into chunks and grinding it into coarse crumbs.
  • 7. the crumbs will stay fresh in a airtight container up to a week. do not place in the fridge as this will make the crumbs soggy and now be of any use.
  • 8. 18 slices of bread made enough seasoned crumbs to coat heavily four pounds of pork stew meat large chunks. with about 1/2 cup left over for something else.

It is best to use medium to large shrimp, that have been shelled and deveined. This dish never fails to please and has such great flavor for it's simplicity.

French bread, about 6 slices 2inch thick
1/4 teaspoon red pepper flakes
1/4 cup flat leaf parsley
5 leaves basil
2 large garlic cloves, finely chopped

1/4 cup olive oil
1 1/2 lbs large shrimp, peeled and deveined
lemon wedge

Steps:

  • Preheat the oven to 425°F
  • Lightly oil a large baking pan.
  • In a mini processor add garlic cloves to bottom. Pulse one or two times to chop garlic.
  • Add bread slices, red pepper flakes, parsley, and basil to processor with garlic in it. Process mixture for a few seconds. Should start to look like mealy bread crumbs.
  • Add olive oil to mixture in processor and pulse on and off, for about 30 seconds, until all is coated and crumbly.
  • Arrange the shrimp in the baking pan, in a single layer. Spoon a little of the crumb mixture onto each shrimp. Drizzle with a little more oil.
  • Place pan in oven and bake for 10 to 15 minutes, depending on the size of the shrimp. The shrimp should turn pink and crumb mixture should become lightly brown. Do not overcook shrimp.
  • Serve immediately with lemon wedges.

Grilled Shrimp Coated With Garlic and Herbs image

This is a variation of a common shrimp dish in coastal regions up and down Italy's Adriatic Sea coast. They just might be the perfect appetizer. Shrimp is coated with a mixture of only 4 ingredients then threaded on skewers. They are assembled well ahead and refrigerated until ready to quick grill. Most impressive is their taste, incredible. Although plain breadcrumbs seem to be favored in Italy with this dish, I prefer the added taste from seasoned bread crumbs. If using plain, lightly salt coating. Grilling skewers are best for maximizing flavors but coated shrimp can be oven broiled on a tray without skewers. Either way, try not to overcook. Bottom picture are the coated shrimp skewers. 1 1/2 lbs large shrimp (31-35 per pound)
1/3 rd cup olive oil
1 teaspoon finely chopped garlic
3/4 cup seasoned bread crumbs

Steps:

  • Remove shells from the shrimp including tails; devein, rinse and thoroughly dry.
  • Stir olive oil and garlic in oversized bowl large enough to hold all ingredients. Mix bread crumbs and parsley with the olive oil and garlic. Mixture should be moist.
  • Coat the shrimp by tossing. Thread the shrimp onto skewers. Try not to overcrowd. Line them side by side on a sheet of plastic wrap or wax paper. When finished, sprinkle leftover breadcrumb mixture over the skewers and lightly press onto the shrimp equally on both sides. Seal the skewers in plastic wrap and refrigerate at least a few hours or overnight.
  • Pre-heat the grill or broiler. Medium char the first side, about 2 to 3 minutes pending heat intensity. Flip over and cook until the shrimp is just cooked through, no longer translucent.
  • Carefully removing shrimp from the skewers. Serve with lemon wedges.
  • Notes: Although bamboo skewers are shown in the picture above, shrimp releases easier with metal skewers sprayed with non-stick.

1 (3 inch) baguette, cut into small pieces
6 tablespoons butter, cut into 5 pieces
2 tablespoons shallots, minced
table salt

2 tablespoons fresh parsley, minced
2 lbs large shrimp, peeled and deveined (25-36)
1/2 teaspoon sugar
4 teaspoons vegetable oil, divided
4 teaspoons garlic, minced
1/8 teaspoon red pepper flakes
1 tablespoon all-purpose flour
1/3 cup dry sherry or 1/3 cup white wine
2/3 cup clam juice, bottled
2 teaspoons fresh lemon juice

Steps:

  • Pulse bread in a food processor until coarsely chopped,some larger crumbs remaining; there should be about 1 cup of crumbs.
  • In a 12" skillet, melt 2 Tbs. butter over medium heat. Add crumbs, shallots,1/8 teaspoons salt and 1/8 teaspoons pepper.
  • Cook and stir until crumbs are golden brown, 5 to 10 minutes.
  • Stir in 1 Tbs. parsley and transfer crumbs to a plate to cool.
  • Wipe out the skillet with paper toweling.
  • Thoroughly dry shrimp n paper toweling. Sprinkle shrimp with sugar, 1/4 teaspoons salt and 1/4 teaspoons pepper.
  • Heat skillet over high heat and add 2 teaspoons oil and heat to shimmering.
  • Add HALF the shrimp in a single layer and cook until it's spotty brown and edges are pink (do not flip shrimp!).
  • Remove pan from heat and transfer shrimp to a large plate.
  • Wipe out skillet with paper toweling and repeat with remaining 2 teaspoons oil and shrimp, transferring it to the plate with the first batch of shrimp.
  • Wipe out skillet, return to medium heat and melt 1 Tbs. butter in the pan.
  • Add garlic and red pepper flakes, cooking and stirring for about a minute (don't let the garlic burn!).
  • Add the flour and cook about a minute then slowly add the clam juice and sherry (or wine), stirring constantly.
  • Bring to a simmer and reduce to about 3/4 cup, 3 - 4 minutes. then stir in remaining 3 Tbs. butter, 1 Tbs. at a time, to add shine to the sauce.
  • Stir in lemon juice and remaining 1 Tbs. parsley.
  • Reduce heat to medium-low and return shrimp to sauce and toss to coat.
  • Cook covered for 2 or 3 minutes until shrimp is pink and cooked through.
  • Transfer to serving dish and sprinkle with the toasted bread crumbs.
  • Garnish with lemon wedges, if desired.

In a 12- to 14-inch-wide gratin dish or ovenproof skillet, arrange the shrimp in a circle, starting at the outside and working your way in. If you’d like to make the presentation extra fancy, place the shrimp so that the tails overlap slightly and you end up with a pretty spiral (or just spread the shrimp in a single layer and call it a day). Pour any marinade that has collected in the bottom of the bowl over the shrimp.
  • In a medium microwave-safe bowl, melt the butter in the microwave. Add the garlic, shallot, parsley, oregano, red pepper flakes, egg yolk, remaining 1 1/2 tablespoons olive oil, 2 tablespoons lemon juice, 1/2 teaspoon salt, and 1/4 teaspoon of pepper and stir until combined. Add the panko and stir until evenly moistened.
  • Sprinkle the panko mixture evenly over the shrimp. Bake for 10 to 12 minutes, until hot and bubbly and the shrimp is just barely cooked through. If you like the top browned, position a rack in the upper third position and turn the oven the broil. Place the pan on the rack and let broil until the breadcrumbs are crisp and golden (DO NOT WALK AWAY). This will take less than 1 minute. Serve hot with lemon wedges.
