SKINNY CHINESE SPAGHETTI WITH MEAT SAUCE (DAN DAN NOODLES)
Here's a fabulous Chinese take on an Italian classic, spaghetti and meat sauce! You'll see this delicious dish on many menu's such as P. F. Chang's China Bistro. My skinny, super yummy meat sauce is a little different than a classic recipe and includes, a bit spicy Asian flavored peanut sauce, veggies, pineapple chunks and lean ground turkey breast. It's served over high fiber, whole grain spaghetti. Each skinny serving has 348 calories and 11 grams of fat. Next time you decide to have pasta night in your house, try this fantastic dish!

Steps:
- Cook spaghetti until al dente (tender cooked). Drain and set aside.
- Cut pineapple chunks in half and set aside. Save ⅓ cup plus 1 tablespoon pineapple juice from can for peanut sauce. Toss the rest of the juice.
- To make peanut sauce: In a small bowl, whisk together ⅓ cup plus 1 tablespoon pineapple juice, rice vinegar, peanut butter, soy sauce, water and red pepper flakes. Set aside.
- Coat a large nonstick pan with cooking spray. Add oil, red bell peppers, scallions, ginger, garlic and ground turkey. Cook over medium-high heat, for about 5-6 minutes to brown the turkey. Be sure to stir often, breaking up turkey into small pieces, while browning. Cook until turkey is browned.
- Stir in pineapple chunks and peanut sauce. Simmer, stirring often until sauce thickens, about 2 minutes. Taste the sauce, if you like it spicier, stir in a bit more red pepper flakes.
- Leftover sauce will keep in refrigerator for a few days. The sauce tends to thicken when refrigerated so add about 1 tablespoon of water before heating. This sauce freezes great too!

ZHA JIANG MIAN MEATLESS CHINESE SPAGHETTI

- Bring a large pot of salted water to a boil.
- Heat a large high-sided saute pan over high heat. Add the oil and swirl to coat the bottom of the pan. When the oil shimmers, add the garlic, ginger, beans and onion and saute, stirring, until the vegetables are soft, about 5 minutes. Add the hoisin sauce and cook, stirring, to remove any raw taste, about 2 minutes. Add the stock and wine and bring to a simmer. Add the beef substitute and reduce the heat to low. Simmer until the mixture has a sauce-like consistency, stirring occasionally, 30 to 45 minutes. Season with salt and pepper.
- Add the noodles to the boiling water and cook until al dente, about 5 minutes for fresh or 10 to 15 minutes for dried. Drain well and divide among serving bowls. Ladle on the sauce, then top with the cucumbers, carrots and sprouts and serve.
EASY SZECHUAN DAN DAN NOODLES
Steps:
- Gather the ingredients.
- In a small mixing bowl, add the sesame paste, sesame oil, and black rice vinegar. Whisk to combine.
- Continue whisking as you add the remaining sauce ingredients. Taste and add sugar if needed.
- Cook the dried noodles according to the package directions. Drain in a colander. (Do not rinse unless the package directions say to do so.)
- Place the noodles in a large (preferably warm) bowl. Whisk the sauce again and then stir it into the noodles.
- Dish the noodles into individual bowls and garnish with the chopped peanuts and spring onions.

DAN DAN NOODLES

Steps:
- To make the chili oil: In a small pot, add the Sichuan peppercorns, cinnamon stick, star anise, and oil. Over medium low heat, slowly heat to 325 degrees, and then turn off the heat. Wait 6 - 7 minutes, then remove the peppercorns, cinnamon stick, and star anise with a slotted spoon. Add the crushed red pepper flakes and allow them to steep in the hot oil. It should start smelling fragrant, almost like popcorn. Allow the oil to cool. This makes more chili oil than you'll need, but you'll be glad to have it on hand for use in other dishes. Store in a glass jar and keep refrigerated.
- To make the meat mixture: In a wok, heat a teaspoon of oil over medium heat, and brown the ground pork. Add the sweet bean sauce, shaoxing wine, dark soy sauce, and five spice powder. Cook until all the liquid is evaporated. Set aside. Heat the other 2 teaspoons of oil in the wok over medium heat, and sautee the sui mi ya cai (pickled vegetables) for a few minutes. Set aside.
- To make the sauce: Mix together all the sauce ingredients. Taste and adjust seasoning if you like. You can loosen it with more hot water, add more Sichuan peppercorn powder, etc.
- To prepare the noodles and veggies: Cook the noodles according to package directions and drain. Blanch the greens in the noodle water, and drain.
- Divide the sauce among six bowls (or four if you want larger servings), followed by the noodles and the leafy greens. Add the cooked pork and sui mi ya cai over the top. Sprinkle with chopped peanuts (optional) and scallions.
- Mix everything together and enjoy!

- Cook pasta according to package directions. In a small bowl, whisk cornstarch and 1 tablespoon soy sauce until smooth; stir in 1 tablespoon sesame oil. Transfer to a large resealable plastic bag. Add chicken; seal bag and turn to coat. Let stand for 10 minutes.
