SMOKED SALMON AND ARTICHOKE IN ALFREDO SAUCE



Smoked Salmon and Artichoke in Alfredo Sauce image

I first tasted this delicious recipe while visiting a northern California coast micro brewery. This is my version. Serve over linguine and garnish with parsley and additional Parmesan cheese.

2 tablespoons butter
2 tablespoons extra-virgin olive oil
2 cups coarsely chopped onions
salt and ground black pepper to taste
4 cloves garlic, coarsely chopped
1 (14 ounce) can artichoke hearts, drained and quartered
1 cup white wine
1 cup chicken broth
2 tablespoons lemon juice
2 teaspoons lemon zest
¼ teaspoon red pepper flakes
¾ pound smoked salmon, cut into small pieces
1 cup heavy whipping cream
½ cup grated Parmesan cheese

Steps:

  • Heat butter and olive oil together in a large skillet over medium heat; cook and stir onion and salt until translucent, 5 to 10 minutes. Add garlic and cook until fragrant, about 1 minute. Reduce heat to medium-low; add artichoke hearts, wine, chicken broth, lemon juice, lemon zest and red pepper flakes; simmer until liquid is reduced and thickened into a sauce, about 10 minutes.
  • Mix salmon, cream, Parmesan cheese, salt, and pepper into sauce; simmer until thickened, about 5 minutes.

1/4 cup butter
2 garlic cloves minced
1 tablespoon flour
1/2 cup chicken broth
1 cup heavy cream or half and half
1/2 cup grated parmesan cheese
1/2 teaspoon garlic powder
1/4 teaspoon pepper
1/2 teaspoon salt
1 cup spinach chopped
1 cup artichokes (quartered)

Steps:

  • In a large skillet add olive oil and cook the chicken on medium high heat for 3-5 minutes on each side or until brown on each side and cooked until no longer pink in center. Remove chicken and set aside on a plate.

One-Pot Lemon Artichoke Pasta with Chicken features tender pasta layered with flavorful artichoke hearts, fresh spinach and grated Parmesan with the creamiest lemon sauce, made in less than 30 min!

1 tablespoon oil
2-4* small chicken breasts
seasoned salt and pepper
3 tablespoons butter
1 teaspoon minced garlic
1½ cups chicken broth
1½ cups milk
1 teaspoon onion flakes
1 teaspoon oregano
1/4 teaspoon salt
1/4 teaspoon pepper
8 ounces linguine (or pasta of choice)
14 ounce jar of marinated artichoke hearts, drained
1/2 cup chopped fresh spinach
1/4 cup grated Parmesan cheese
1 tablespoon lemon zest
juice from 1/2 a lemon
pinch of crushed red pepper

Steps:

  • Season chicken breasts with salt and pepper and pound to 1-inch thickness if they are thick.
  • Heat oil in a large skillet over medium-high heat. Add chicken and cook for 4 minutes on each side (or until internal temperature reaches 165° F). Transfer cooked chicken to a plate and loosely cover with foil.
  • Melt butter in the skillet over medium heat. Add garlic and saute 1 minute or until fragrant. Add chicken broth, milk, onion flakes, oregano, salt and pepper to the skillet.
  • Add pasta to the liquids in the skillet breaking noodles in half if needed. Bring to a boil, cover and reduce heat to a low simmer. Cook pasta, stirring occasionally for about 12 minutes. If the sauce is still thin, continue simmering a few minutes longer (sauce will thicken a little as it cools).
  • Remove skillet from heat and stir in artichoke hearts, spinach, cheese, lemon zest, lemon juice, and crushed red pepper. Stir until combined and serve with chicken breasts*.

6 ounces uncooked fettuccine
2 teaspoons all-purpose flour
1/3 cup dry white wine or broth
1/4 cup reduced-sodium chicken broth
3 teaspoons olive oil, divided
1 pound boneless skinless chicken breasts, cut into thin strips
1/2 cup fresh broccoli florets
1/2 cup sliced fresh mushrooms
1/2 cup cherry tomatoes, halved
2 garlic cloves, minced
1 can (14 ounces) water-packed artichoke hearts, drained and halved
1/2 teaspoon salt
1/2 teaspoon dried oregano
1 tablespoon minced fresh parsley
1 tablespoon shredded Parmesan cheese

Steps:

  • Cook fettuccine according to package directions; drain., Meanwhile, in a small bowl, mix flour, wine and broth until smooth. In a large skillet coated with cooking spray, heat 2 teaspoons oil over medium heat. Add chicken; cook and stir 2-4 minutes or until no longer pink. Remove from pan., In same skillet, heat remaining oil over medium-high heat. Add broccoli; cook and stir 2 minutes. Add mushrooms, tomatoes and garlic; cook and stir 2 minutes longer. Stir in artichoke hearts, salt, oregano and flour mixture. Bring to a boil; cook and stir until thickened, 1-2 minutes., Add fettuccine, chicken and parsley; heat through, tossing to combine. Sprinkle with cheese.

I think this is a nice light easy pasta dish (and a change from the creamy sauces). It's a good way of using leftover turkey or ham for a variation.

Number Of Ingredients 11

500 g dry pasta
1 leek, white part only
2 1/2 tablespoons oil
2 cloves garlic, crushed
600 g smoked chicken (I have used turkey or ham too)
150 ml chicken stock
4 whole artichokes, quartered (I use the ones canned in brine and rinse them)
2 ripe tomatoes
1/2 cup toasted pine nuts (, I cook them in a dry pan over a low heat shaking them until they're golden)
salt and pepper
1 dash Tabasco sauce

Steps:

  • Cook the pasta following the directions, drain and keep warm.
  • Wash the leek well and slice thinly.
  • Heat the oil in a large pan, add the leek and garlic and cook over a medium heat stirring occasionally for about 10 minutes.
  • Add the chicken, stock, artichokes and tomatoes and cook uncovered for about 5 minutes or until the chicken is heated through thoroughly.
  • Stir in the pine nuts and season to taste.
  • Toss through the pasta to combine and serve.
