1 3/4 sticks (14 tablespoons) unsalted butter
3/4 cup granulated sugar
1 cup brown sugar
2 eggs
1 1/2 teaspoons vanilla extract
1 cup almond butter
1 1/4 cup whole wheat pastry flour
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 cup ground almonds
1 1/2 cups old-fashioned oatmeal (not quick cook)
8 ounces semi-sweet or dark chocolate chunks or chips

Steps:

  • Line baking sheet with parchment paper or silicone baking mat. Preheat oven to 350 degrees F.
  • Combine flour, baking soda, baking powder, and salt. Set aside. Beat butter until creamy.
  • Add sugars beating until fluffy, approximately 3 minutes. Scrape the bowl as necessary.
  • Beat in almond butter until incorporated.
  • Beat in vanilla and then eggs, one at a time.
  • Gently stir in the dry ingredients (I switched to the paddle on my kitchen aid mixer).
  • Add ground almonds and oatmeal and stir until just incorporated. Stir in the chocolate chunks.
  • Roll cookies into 2 Tbs sized balls. Place on baking sheets and bake cookies for 10-12 minutes. Edges should be slightly browned and the cookies puffed.
  • Cool on sheets for 5 minutes before transferring to a cookie cooling rack.

1 Tbsp. ground flax seeds + 3 Tbsp. water**
¾ cup old fashioned oats
3/4 cup blanched almond flour
½ tsp. baking powder
¼ tsp. salt
¼ cup coconut palm sugar***
2 Tbsp. coconut oil, melted
½ tsp. vanilla extract
¼ cup dark chocolate chunks/chips/nibs

Steps:

  • Prepare your flax egg by combining ground flax seeds and water in a small bowl. Give it a gentle stir before setting aside for ~5 minutes to allow it to gel.
  • In a large mixing bowl, combine oats, almond flour, baking powder, salt, and sugar. Add flax egg**, melted coconut oil, vanilla extract, and mix until well combined and dough begins to thicken. Fold in chocolate chunks.
  • Cover bowl with plastic wrap and place in the fridge to chill for a minimum of 30 minutes.
  • When ready to bake, preheat oven to 350F and line a cookie sheet with parchment paper or a non-stick baking mat. Use a tablespoon to drop cookies onto baking sheet, pressing down to flatten them slightly.
  • Bake for 8-10 minutes, or until the edges begin to turn golden brown.
  • Remove from oven and allow to cool on sheet for ~5 minutes before transferring to a cooling rack to cool completely. Store in an airtight container for up to a week.

3 cups almond flour (finely ground)
2 1/2 cups rolled oats (gluten free)
3/4 cup dairy free butter at room temperature
2 eggs (large)
3/4 cup brown sugar, packed (or coconut sugar for refined sugar free)
1 tsp vanilla extract
1 tsp baking soda
1/8 tsp salt
1 cup dairy free chocolate chips (Lily's for refined sugar free)

Steps:

  • Place your room temperature butter and brown sugar into mixer (or a large bowl using handheld mixer) and cream together until light and fluffy. Add in the vanilla and eggs one at a time until incorporated. Add the almond flour, oats, baking soda and salt and mix until until a dough forms. Fold in chocolate chips. Line a baking sheet with wax paper or parchment paper. Use a 1 1/2 inch cookie scooper to scoop cookie dough and line the tray. Cover with plastic wrap and freeze for an hour (not necessary but will result in a more delicious cookie!). Remove as many cookie dough balls as you desire to bake. Keep the rest frozen for up to 2 months.
  • To bake, preheat oven to 350 F and prepare a baking sheet with parchment paper. Place frozen cookie dough balls about two inches apart and bake for 10 minutes, remove them from the oven and press them down slightly to flatten, continue to bake for 2 minutes and edges start to brown. Remove and let cool for 10 minutes before transferring to a cooling rack to continue cooling.

1 pound old-fashioned rolled oats (about 5 2/3 cups)
1 teaspoon baking powder
1 teaspoon ground cinnamon
Pinch kosher salt
10 ounces unsalted butter, at room temperature
6 ounces dark brown sugar, packed (about 3/4 cup)
3 1/2 ounces granulated sugar (about 1/2 cup)
1 teaspoon vanilla extract
1 large egg
4 ounces raisins, optional, soaked overnight in rum and drained, optional (about 2/3 cup)

Steps:

  • Preheat the oven to 375 degrees F. Spread the oats into a single layer on a baking sheet. Bake until lightly toasted, about 20 minutes. Cool the oats for 2 to 3 minutes on the sheet. Grind 8 ounces of the toasted oats in a food processor until they have the consistency of whole-wheat flour, about 3 minutes. Add the baking powder, cinnamon and salt to the food processor and pulse 2 to 3 times to combine. Set aside.
  • Line baking sheets with parchment paper. Combine the butter and sugars in the bowl of a stand mixer and mix on medium speed using the paddle attachment until light in color, about 3 minutes. Stop once to scrape down the sides of the bowl. Reduce the mixer speed to the lowest speed and add the vanilla extract and egg. Mix to combine. Slowly add the flour mixture until just combined. Stop once to scrape down the sides of the bowl. Add the remaining toasted oats and the raisins, if using, and mix to combine.
  • Scoop the dough with a 1 1/2-tablespoon disher onto the baking sheets, leaving 2 inches between each mound. Bake until the cookies begin to brown around the edges, 12 to 14 minutes, rotating the baking sheets halfway through. Cool on the sheets for 2 minutes, and then move to a cooling rack to cool completely.

Steps:

  • Preheat your oven to 350 degrees.

  • Add the oat and flour mixture to the butter mixture. Using a wooden spoon, stir all ingredients together until all the oat and flour is mixed into the butter mixture. *A wooden spoon is strong and easier to use when making cookie dough.
  • Using an ice cream scoop or a spoon, scoop out the cookie dough and drop the balls on the cookie sheet. Leave only a little space between the cookies. This dough will not melt and flatten like other cookie dough, so, if you scoop out the dough it will bake as balls. You can also press the balls flat for a traditional cookie shape or roll the dough out and cut out shapes with cookie cutters. It's all up to you.
  • Bake for 11-13 minutes, depending on your oven's temperature and how soft you want the inside. If you want a little softer inside, bake for 11 minutes. Either way, the outside is still crisp. Enjoy!
