SPANISH PATATAS BRAVAS TRAYBAKE
This tasty traybake featuring British potatoes is great as a main meal or alongside other small plates

Steps:
- 1. Preheat the oven to 200°C/fan 180°C/gas 6
- 2. Put the potatoes in a large bowl with the 1 tbsp paprika and the garlic powder, drizzle over 2 tbsp of the olive oil and toss together
- 3. Tip onto a baking tray in
- 4. a single layer and bake for 30 mins. Put the pinch of paprika in a bowl and mix with 1 tbsp boiling water
- 5. Set aside to infuse
- 6. Turn the potatoes, then scatter over the onion and chorizo
- 7. Arrange the tomatoes on top and drizzle over the remaining oil
- 8. Bake for a further 20 mins, or until the onions are soft and the tomatoes are starting to burst
- 9. Meanwhile, in a bowl, mix the mayonnaise with the paprika infused water and crushed garlic until well combined
- 10. Season
- 11. Leave the traybake to rest for 5 mins, then drizzle over the mayo mixture and scatter over the parsley
- 12. Serve immediately, with the crusty bread, if you like

PATATAS BRAVAS RECIPE
Steps:
- Peel the potatoes, rinse thoroughly, and dry with a paper towel.
- Cut the potatoes into bite-size chunks.
- Heat the olive oil in a large skillet over medium heat.
- Add the potatoes and adjust the heat to the lowest setting, allowing them to pre-cook for a few minutes.
- Remove the potatoes and let them cool in the fridge for a few more minutes.
- Turn the heat up to high and add the potatoes back into the pan.
- Fry until crispy and golden.
- Transfer the potatoes to a plate lined with paper towels to cool, and sprinkle with salt to taste.
- To serve, drizzle the bravas sauce over the potatoes.
- Dig in-no forks necessary!
