1 package (12 ounces) fresh or frozen cranberries
1-3/4 cups sugar
1/2 cup water
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/8 teaspoon salt
1/8 teaspoon ground ginger
1/8 teaspoon ground cloves

Steps:

  • In a large saucepan, combine all ingredients. Bring to a boil. Reduce heat; simmer, uncovered, until the berries pop and mixture is thickened, about 30 minutes. Cool. Transfer to a serving bowl; cover and refrigerate until chilled.

1 1/2 cups sugar, or to taste
1 cup Tawny Port
1 teaspoon freshly grated lemon zest

Steps:

  • In a large saucepan combine the cranberries, the sugar, the Port, the zest, and the lemon juice, simmer the mixture, stirring occasionally, for 15 to 20 minutes, or until the berries have burst and the mixture has thickened, and let it cool. Spoon the mixture into a lightly oiled 1-quart decorative mold and chill it, covered, for at least 3 hours or overnight. Run a thin knife around the edge of the mold, dip the mold into warm water for 10 seconds, and invert it onto a serving plate.

1 (12 ounce) bag fresh cranberries
3/4 cup water
3/4 cup sugar

Steps:

  • Bring port and cinnamon stick to boil in a saucepan.
  • Reduce heat to medium, add dried cranberries and cook 3-5 minutes.
  • Add fresh berries, water, sugar.
  • Bring back to boil until sugar dissolves, then lower to simmer, cover and cook 15-20 minutes, stirring frequently.
  • Discard cinnamon stick and serve at room temperature.

  • In a small saucepan combine the sugar, water, port star anixe and cinnamon stick. Bring to a simmer over medium heat, stirring to dissolve sugar.
  • Add the cranberries and simmer, uncovered about 8-10 minutes.
  • Stir occasionally until most of the cranberries have burst.
  • Remove from heat, let cool slightly and stir in the lemon zest and juice and a pinch of salt.
  • Serve chilled or room temperature.
  • Remove the cinnamon stick and star anise just before serving.

  • In a large sauce pan combine the first five ingredients and bring to a boil. Reduce heat and simmer 5 to 8 minutes to infuse the flavours of the spices. Remove spices from the pan. Add cranberries, sugar and orange peel and simmer 8 - 10 minutes, or until the berries pop and sauce thickens. (It will thicken more when cold.) Pour sauce into a bowl and chill.
