3/4 cup spreadable cream cheese
6 flour tortillas (8 inches), room temperature
3 cups shredded cooked turkey
6 lettuce leaves

Steps:

  • In a small bowl, combine the cranberries, sugar, onions, cilantro, lime juice, jalapeno and ginger. Cover and refrigerate for 1 hour. , Just before serving, spread 2 tablespoons of cream cheese over each tortilla. 1 (12 ounce) package fresh cranberries
2 small jalapeno peppers, stemmed and chopped
4 green onions, chopped
½ cup chopped fresh cilantro
¼ cup white sugar
1 tablespoon lime juice
8 ounces cream cheese, softened
8 ounces shredded sharp Cheddar cheese
4 (12 inch) spinach flour tortillas
32 thin slices turkey lunch meat

Steps:

  • Combine cranberries, jalapenos, green onions, and cilantro in the bowl of a food processor; blend until everything is finely chopped. Transfer mixture to a bowl. Stir in sugar and lime juice. Cover and refrigerate for 1 hour.
  • Mix cream cheese and Cheddar cheese together in a bowl until evenly combined. Spread mixture evenly on top of tortillas to cover. Spread 1/4 cup of cranberry mixture on one half of each tortilla. Layer 8 slices of turkey lunch meat over cranberry mixture.
  • Tightly roll up each tortilla, starting on the end with the meat and cranberry mixture. Use a serrated knife to cut into 1-inch pieces. Serve immediately or refrigerate until use.

1/2 cup Cranberry Apple Glaze, recipe follows
2 tablespoons Greek yogurt
2 scallions, white and green parts thinly sliced
1/2 jalapeno, seeded and minced
2 tablespoons whole-grain mustard
1 tablespoon honey
1 tablespoon Dijon mustard
4 focaccia rolls, split lengthwise
4 leaves green curly lettuce
4 ounces leftover turkey, sliced
1 cup leftover stuffing, optional
Pickle spears, for serving
2 cups apple cider
2 cups cranberries
1 cup cranberry juice
1/2 cup maple syrup
1/2 cup apple cider vinegar
Kosher salt and freshly ground pepper

Steps:

  • Combine the Cranberry Apple Glaze, yogurt, scallions and jalapenos in a small bowl. Whisk together the whole-grain mustard, honey and Dijon mustard in another bowl until smooth.
  • To assemble the sandwiches, spread the honey mustard on the bottom halves of the rolls, and spread a generous amount of the spicy cranberry cream on the top halves. Top each bottom half with 1 lettuce leaf, 1 ounce turkey and 1/4 cup stuffing, if using, and then place the spicy cranberry cream halves on top. Slice the sandwiches in half and serve with a pickle spear.
  • Combine the apple cider, cranberries, cranberry juice, maple syrup and apple cider vinegar in a small saucepan. Bring to a boil over medium-high heat, and then reduce to a simmer until the liquid has been reduced by 2 cups and the cranberries have burst, 18 to 20 minutes. Season with salt and pepper, and then transfer to a blender and puree until smooth.

4 (10 inch) flour tortillas

4 ounces thinly sliced Swiss cheese, chopped

Steps:

  • Combine cream cheese and cranberry sauce in a bowl. Spread 1/4 of the mixture across the surface of each tortilla, spreading all the way to the edges. Top each evenly with 1/4 of the sliced turkey, chopped Swiss cheese, and sliced apples.
  • Roll tortillas up tightly and wrap in plastic wrap. Refrigerate rolled tortillas for at least 1 hour. Slice each chilled tortilla roll into 8 pieces before serving.

1/2 cup currants or raisins
1/2 cup onion, diced
1/4 cup red wine vinegar
1 Tbsp jalapeno pepper, seeded and diced
1 tsp garlic, fresh or jarred, minced
3/4 tsp cumin, ground
1 lb turkey breast cutlets
1/2 cup spreadable goat cheese or cream cheese
4 flour tortillas, low fat, 10-inch
4 large lettuce leaves, romaine or leaf
1 Tbsp fresh cilantro, chopped
1 apple, thinly sliced

Steps:

  • To make spicy cranberry sauce, place first ten ingredients in medium saucepan. Boil 15 minutes, stirring occasionally, until cranberries burst and sauce is thickened; refrigerate. Sauté cutlets in lightly oiled skillet over medium heat, 5 minutes per side until turkey is no longer pink in center and reaches internal temperature of 170 degrees. Cool and cut into strips. Spread 2 Tbsp cheese over tortilla to 1/2 inch of edge. Layer lettuce, 1/2 cup turkey, 1/4 cup cranberry sauce, 1/2 teaspoon cilantro and several apple slices. Add salt and pepper to taste. Fold tortilla bottom and top over filling. Fold one side to center. Fold last side overlapping center and roll tight. *For dried cranberries, soak with currants in orange juice 8 hours.
