Steps:
- Preheat the oven to 400˚. Brush a 24-cup mini-muffin pan (preferably nonstick) with olive oil.
- Mix the crab meat, crushed crackers, mayonnaise, egg white, chives, lemon zest and 3/4 teaspoon salt in a large bowl until combined. Fill the muffin cups with the crab mixture. Refrigerate 15 minutes.
- Bake the crab cakes until warmed through and browned around the edges, 10 to 12 minutes. Remove from the pan. Top with more chipotle mayonnaise and chopped chives.
SPICY CARIBBEAN CRAB CAKES RECIPE

- Warm the oil in large skillet over medium heat.Add the shallot,pepper,hot pepper,red onion,and ginger.Sweat for 5 min.Add the garlic and cook for 2 more min.Remove to a large bowl and allow to cool for 10 min. Add the remaining ingredients to the bowl,reserving the 1/2 cup of bread crumbs.Fold the crab cake mixture gently,trying not to break up the lumps of crab meat too much.After the mixture is thoroughly combined,refrigerate for one hour. Remove the crab cake mixture from the fridge.Spread the remaining 100 ml of bread crumbs on a cookie sheet.Form the crab mixture into balls slightly larger then golf balls,then flatten them out so that each cake resembles a small hockey puck.Dredge all sides in the bread crumbs.Can be reserve the crab cakes for cooking later,as they can be refrigerated for up to 24 hours. Ther are 2 options for cooking the cakes.You can bake them in a 425 F oven for 12-15 min.flipping them after 8 min.or you can pan-fry or deep-fry the cakes in some 360 F oil until golden brown and crunchy,about 3 min. Serve with Warm Mango Coulis and some sprigs of cilantro for garnish
CRAB CAKES WITH JALAPENO REMOULADE

The cakes should be loose, just barely holding together. Chilling them before they are cooked helps firm up them and hold together without too much binder (bread crumbs). - To Make Jalapeno Remoulade: (Note: Makes about 1 ¼ cups. For the best results, make this spicy condiment a few hours in advance and then cover and refrigerate, so the flavors have time to develop.).
- Whisk together all the ingredients in a mixing bowl; cover and refrigerate until needed.
- To Make Crab Cakes: Place the crab meat in a large mixing bowl and carefully pick through for shells; set aside.
- Melt the butter in a medium skillet over medium heat. Add the onion, poblano, garlic, salt, chile powder, black pepper, and cayenne and cook, stirring, until the vegetables are softened but not brown, 3 to 4 minutes. Transfer the vegetable mixture to a mixing bowl and set aside to cool for about 15 minutes.
- Add the crab, the egg, mayonnaise, mustard, hot sauce, scallion, parsley, lemon juice, and 1/4 cup of the bread crumbs to the vegetable mixture. Using your hands, gently combine the ingredients.
- Using a 1-cup measuring cup, form the mixture into cakes, packing gently; they should look like hockey pucks, about 2 inches thick with straight sides. Cover the cakes and chill for 20 to 30 minutes, or overnight.
- When you are ready to cook the crab cakes, place the remaining 1/2 cup bread crumbs in a pie tin. Dredge both sides of each cake in the crumbs, shaking off the excess. Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. When the oil is hot but not smoking, fry the crab cakes for 4 to 5 minutes on each side, until golden brown. Do not overcrowd the pan-fry in batches if necessary, adding more oil if needed. Serve immediately, with Jalapeño Remoulade.
SPICY CRAB CAKES
To obtain best results, use jumbo lump crabmeat. You can use regular, be sure it is fresh. The juices add flavor, so please do not drain. Cooking time reflects time to chill. From Legal Seafood.

- Preheat oven to 400 degrees F.
- In a large bowl mix together mayonnaise, both mustards, a generous dash of hot sauce, horseradish, and the egg.
- Gently stir in the saltines and crabmeat.
- You may form the crabcakes immediately, however allowing the mixture to sit in the refrigerator for 1 hour will make the shaping easier.
- Divide the mixture into 4-6 large crabcakes, and place on a lightly oiled or nonstick baking sheet. (Or make to your desired size - I use a 1/4 cup measure - and adjust your cooking time appropriately ).
- Bake for 15-20 minutes , or until a light golden brown.
- Serve immediately.
- Variation:.
- Baltimore Crab Cakes: Add a dash of Worcestershire sauce and Old Bay Seasoning to taste.

Who doesn't like crab cakes? I found this on another site and the photo looked so amazing I just had to save this recipe. Cooking time is approximately 10 minutes..........the extra 60 minutes is for the refrigeration time required (prior to frying).

Steps:
- Pick over the crabmeat to remove any shell or cartilage, trying not to break up the chunks too much.
- In a large bowl, combine all of the ingredients except for the butter and olive oil. Moisten hands with a little water and shape the mixture into eight fat ball-like cakes. (They will flatten slightly during cooking.) Place them on a baking sheet lined with wax paper. Cover with plastic wrap and refrigerate for at least 1 hour.
- While crab cakes are in the fridge, prepare sauce. Combine all ingredients, mix well and chill.
- In a large skillet, heat the butter and oil over medium-high heat. Carefully lay the crab cakes into the butter and oil and fry until crusty and browned, about 3 to 4 minutes on each side.
- Serve with sauce.
- Serve hot, with Key Lime Mustard Sauce.
