1 1/2 cups frozen bell pepper and onion stir-fry
1 teaspoon cumin

Steps:

  • Cook couscous as directed on package.
  • Meanwhile, spray large nonstick skillet with nonstick cooking spray. Heat over medium-high heat until hot. Add chicken; cook 3 minutes, stirring occasionally.
  • Stir in all remaining ingredients except couscous. Reduce heat to medium-low; cover and simmer 8 to 10 minutes or until chicken is no longer pink, stirring occasionally.
  • Fluff couscous with fork; spoon onto serving platter. Top with chicken mixture.

3 tbsp olive oil
1 chopped onion
2 large sliced skinless boneless chicken breast fillets
85g blanched almonds
1 tbsp hot curry paste
100g halved ready-to-eat apricots
120g pack fresh coriander

Steps:

  • Prepare couscous with chicken stock, according to the packet instructions. Heat olive oil in a pan and cook the onion for 2-3 mins until softened.
  • Toss in chicken breast fillets and stir fry for 5-6 mins until tender. Add the blanched almonds and, when golden, stir in the hot curry paste and cook for 1 min more.
  • Add the couscous along with the apricots and the coriander. Toss until hot then serve with plain yogurt if you like.

This one-pan meal, which is inspired by the tagines of North Africa, is prepared in a deep skillet or Dutch oven instead of the traditional clay pot. Briefly marinate bone-in chicken thighs in lime juice, garlic, cumin and olive oil, then brown and set aside. (If you're short on time, skip the marinade; simply add the ground cumin when you're toasting the other spices in the chicken fat.) Stir in harissa, cinnamon and turmeric, toast until fragrant, then add quick-cooking pearl couscous and the chicken, so everything finishes cooking together. Steps:

  • In a large bowl, combine the chicken thighs, lime juice, olive oil, garlic and cumin. Season well with salt and pepper and stir together until the chicken is well coated in the marinade; set aside at room temperature for 25 to 30 minutes.
  • In a deep, 12-inch skillet or Dutch oven with a lid, heat the grapeseed or canola oil over medium-high. When it shimmers, lift the chicken out of the marinade, allowing any excess liquid to drip back into the bowl, then add the chicken to the skillet, skin-side down. Working in batches, if necessary, to avoid crowding the pan, cook until the chicken is well browned on both sides, about 6 minutes per side. Remove and set aside on a plate.
  • Reduce heat to medium, add the leek and cook, stirring occasionally, until soft and translucent, 3 to 4 minutes, scraping up any brown bits that have formed on the bottom of the pan. Stir in the harissa paste, turmeric and cinnamon, and cook until lightly toasted, 1 to 2 minutes. Season well with salt.
  • Add the couscous to the pan and stir until well coated in the spiced leek oil. Add the stock and bring to a boil. Turn heat to low and add the chicken back to the pan, skin-side up, along with any accumulated juices. Cover and simmer until the couscous is al dente and the chicken is cooked through, 10 to 15 minutes. If you're lucky, some of the couscous may slightly stick to the bottom of the pan, creating well-seasoned crispy bites.
  • Remove from the heat and remove the lid. Scatter with the herbs, if using, and the lime zest, then serve from the pan.

I was trying to come up with something new to do with chicken breast that had both sweet, spicy and salty flavors. The ingredients are a bit different, but my entire family loved the results. This recipe was very quick to make. Adjust the spicy sauce and maple syrup to your tastes.

1 lb chicken breast, cut into 1-inch cubes
1 -2 tablespoon olive oil
1 tablespoon butter
1/4 cup maple syrup
1 -2 tablespoon hot chili sauce (Such as Sriracha)
1 cup orange juice
1 cup couscous
1/4 cup walnuts, chopped
1/2 cup apple, like gala, cut into small cubes
salt & pepper

Steps:

  • Heat olive oil and butter in large skilet pver medium-hot heat.
  • Add chicken and cook until pieces start to brown slightly.
  • Add maple syrup and siracha, stir to mix well.
  • As chicken is cooking heat orange juice in the microwave in a 2 cup glass measuring dish until just boiling, remove from microwave. Add cous cous and cover lightly with plastic wrap. Wait 5 minutes for cous cous to sit.
  • Add orange juice/cous cous mixture to the chicken dish. If cous cous seems dry, add a bit more orange juice to the skillet.
  • Once chicken is cooked to the proper temperature, remove the pan from heat and add the chopped walnuts, apples and salt and pepper to taste.

This week, they went all out by coating cutlets in spiced panko, roasting them to crispy-juicy perfection, then drizzling 'em with a spicy maple syrup sauce. (Psst-said sauce would also be unbelievable on pancakes.) On the side, there's roasted green beans and maple mashed sweet potatoes, perfect for catching any runaway sauce). 10 ounce Chicken Cutlets
½ cup Panko Breadcrumbs
1 tablespoon Fry Seasoning
2 tablespoon Sour Cream
6 ounce Green Beans
2 tablespoon Maple Syrup
1 teaspoon Chili Flakes
4 teaspoon Olive Oil
2 tablespoon Butter
Kosher Salt
Pepper
1 teaspoon Vegetable Oil

Steps:

  • • Adjust rack to middle position (top and middle positions for 4 servings) and preheat oven to 425 degrees. Wash and dry all produce. • Peel and dice sweet potatoes into ½-inch pieces. • Reserve 1 tsp maple syrup for sweet potatoes (2 tsp for 4); pour remaining into a small bowl. Stir in a pinch of salt and chili flakes to taste. Set aside.
  • • Place sweet potatoes in a medium pot with enough salted water to cover by 2 inches. Bring to a boil and cook until tender when pierced with a fork, 15-20 minutes. • Drain and return sweet potatoes to pot. Mash off heat with reserved maple syrup, half the sour cream (you'll use the rest later), 1 TBSP butter (2 TBSP for 4 servings), salt, and pepper. Cover to keep warm.
  • • While sweet potatoes cook, place 1 TBSP butter (2 TBSP for 4 servings) in a second small microwave-safe bowl. Microwave until melted, 30 seconds. • Stir in panko, Fry Seasoning, 1 TBSP olive oil (2 TBSP for 4), and a big pinch of salt.
  • • Pat chicken* dry with paper towels; season all over with salt and pepper. • Lightly oil a baking sheet and place chicken on one side. (For 4 servings, spread chicken out across entire sheet.) Evenly spread remaining sour cream onto tops of chicken; mound with panko mixture, pressing to adhere (no need to coat the undersides). • Roast chicken on middle rack for 8 minutes (you'll add more to the sheet then).
  • • While chicken roasts, toss green beans in a medium bowl with a drizzle of olive oil, salt, and pepper. • Once chicken has roasted 8 minutes, remove sheet from oven and carefully add green beans to empty side. (For 4 servings, leave chicken roasting and add green beans to a second sheet; roast on top rack.) • Continue roasting until chicken is cooked through and green beans are tender, 12-15 minutes more.
  • • Divide sweet potatoes, chicken, and green beans between plates. Drizzle chicken with spicy maple syrup and sprinkle with more chili flakes if desired. Serve.

6 tablespoons olive oil
6 cups chopped onions
1 1/2 tablespoons (packed) golden brown sugar
2 teaspoons ground cinnamon
1 small onion, quartered
1/4 cup fresh lemon juice
1 teaspoon ground cumin
3/4 teaspoon ground ginger
1/2 teaspoon Hungarian sweet paprika
4 skinless boneless chicken breast halves
1 1/2 cups canned diced tomatoes, undrained
1/2 cup low-salt chicken broth
1/4 cup chopped fresh cilantro
1 10-ounce package couscous, freshly cooked

Steps:

  • Heat 4 tablespoons oil in heavy large skillet over medium-high heat. Add chopped onions and stir to coat. Season with salt. Sauté 20 minutes, stirring occasionally. Reduce heat to medium and cook until onions are very soft, stirring frequently, about 10 minutes. Stir in sugar and cinnamon; sauté until onions are brown, about 5 minutes. (Cinnamon onions can be made 1 day ahead. Cover and refrigerate.)
  • Coarsely puree quartered onion, lemon juice, cumin, ginger, and paprika in blender. Pour into heavy-duty resealable plastic bag. Add chicken; seal bag and turn to coat. Refrigerate chicken for at least 30 minutes and up to 1 hour.
  • Heat 2 tablespoons oil in another large skillet over medium heat. Add chicken with marinade; cook until chicken is brown, about 3 minutes per side. Transfer to plate. Add tomatoes with juices and broth to skillet; boil until sauce thickens, about 6 minutes. Return chicken to skillet; spoon sauce over. Reduce heat, cover, and simmer until chicken is cooked through, about 15 minutes. Transfer chicken to plate and tent with foil. Boil sauce until slightly thickened, about 3 minutes. Stir in cilantro.   • Rewarm cinnamon onions. Mound couscous on 4 plates. Top with chicken, sauce, and onions and serve.

1 garlic clove, finely chopped

225 g couscous
1 lemon, juice and zest of

  • Heat 1 tbsp of the oil in large pan. add the cumin,garlic,coriander and paprika and fry over a gentle heat for 1 min,stirring.
  • Add the stock and saffron and bring to the boil. Add the spring onion and then pour in the couscous in a steady stream and give it a quick stir.
  • Cover the pan with a tight fitting lid, remove from the heat and set aside for 5 minutes, to allow the grains to swell and absorb the stock.
  • If you are serving this warm, stir in the rest of the oil and the remaining ingredients now. Otherwise allow the couscous to cool and chill in the fridge for 1 hour before adding the other ingredients for a yummy cold couscous salad.

2 1/2 cups chicken stock
1/2 cup mango chutney
Salt and black pepper
2 tablespoons EVOO (extra-virgin olive oil), twice around the pan
1/2 tablespoon ground coriander, 1/2 palmful
1 teaspoons ground cumin, 1/3 palmful
1/2 teaspoon red pepper flakes (eyeball it in your palm)
4 boneless, skinless chicken breasts, cut into large bite-size pieces
1 large onion, thinly sliced
1 red bell pepper, cored, seeded, and thinly sliced
3 garlic cloves, finely chopped
3-inch piece fresh ginger, peeled and grated
Zest and juice of 1 lemon
1 1/2 cups plain couscous
1/2 cup plain yogurt
10 fresh mint leaves, from several sprigs
1/4 cup fresh cilantro leaves, a generous handful
3 scallions, trimmed, coarsely chopped
Juice of 1 lime

Steps:

  • In a sauce pot over medium-low heat, combine 2 cups of the chicken stock with the mango chutney and a little salt and pepper, bring it up to a bubble, and then turn down the heat to low to just keep warm.
  • Heat a large skillet with high sides or a soup pot over medium-high heat with the EVOO. Once the oil is hot, add the coriander, cumin, and red pepper flakes to the oil and "toast" the spices, stirring constantly for about 15 seconds. Add the chicken and toss it in the spices until well coated. Spread the chicken out in an even layer and season it with salt and pepper. Cook the chicken pieces for 2 minutes on each side to brown, then add the onions, red bell pepper, garlic, and three fourths of the grated ginger. Cook for about 3 minutes, stirring frequently. Add the remaining 1/2 cup of chicken stock and continue to cook until almost all of the liquids have evaporated, about 2 to 3 minutes.
  • Scoot the chicken and veggies to the sides of the skillet, creating a crater in the center of the pan. Add the chicken stock-chutney mixture and the lemon zest and juice, bring up to a bubble, and then add the couscous to the crater. Give the skillet a shake to get the couscous to settle into the liquids but still try to keep it in the crater. Use the back of a spoon to spread it out into the liquids if the shaking doesn't do the trick. Cover it with a tight-fitting lid or with a piece of aluminum foil (if you are using foil, really wrap the top of the pan; you need to hold in the steam) and then turn off the heat and let it sit for about 5 minutes to cook the couscous.
  • While the couscous is cooking with the chicken and the veggies, make the minty cilantro sauce. In a blender combine the yogurt, mint, cilantro, scallions, lime juice, the remaining grated ginger, and a small splash of water. Turn the blender on and puree until the mixture is smooth. If it doesn't get going right away, add another splash of water to get it moving. Season the sauce with a little salt and pepper.
  • To serve, with a fork mix the couscous with the chicken and veggies, serve up a couple of heaping spoonfuls in shallow bowls, and give each serving a generous drizzle of the minty cilantro sauce.
