Spinach with pine nuts & garlic image

1kg fresh spinach , or 500g frozen leaf spinach
3 tbsp olive oil
3 tbsp pine nut
2 garlic cloves , finely chopped or crushed

Steps:

  • Wash the spinach thoroughly and cram into a large pan. Pour over a little boiling water, cover tightly and cook for 2-3 mins, until the leaves have wilted.
  • Tip into a colander and drain well. Use the side of a small plate to press the spinach down to extract the last of the water. If using frozen, defrost in the microwave and drain.
  • Meanwhile heat the oil, add the pine nuts and fry until golden. Add the garlic and fry briefly, then stir in the spinach and stir until heated through. Season and serve in a warm side dish.

1/4 teaspoon freshly grated nutmeg
4 tablespoons pine nuts
Salt and freshly ground pepper to taste

Steps:

  • Pick over the spinach leaves and remove the large stems. Wash and drain well. Remove all the moisture by placing between paper towels and patting dry.
  • In a large skillet over high heat, heat 1 tablespoon of the olive oil and half the spinach, half the nutmeg and half the pine nuts. Add salt and pepper to taste. Cook and toss very quickly until the spinach is just wilted. Drain. Repeat the procedure with the remaining ingredients and serve hot.

This is a great fresh and healthy dish. It's the only way I'll eat cooked spinach! The pine nuts add a nice crunch and rounds out the texture of cooked spinach. Quick and easy side dish to almost anything.

1/3 cup pine nuts
2 tablespoons olive oil
2 -3 large garlic cloves, finely chopped
3 -4 cups fresh spinach, washed
1/2 fresh lemon, juice of, only
sea salt
pepper
1/4 cup parmesan cheese, grated

Steps:

  • toast pine nuts lightly in pan and set aside. Watch carefully these are easy to burn!
  • In large skillet warm olive oil then add garlic. Cook garlic just until it starts to pop then add spinach and lemon juice.
  • Keep tossing spinach and as it starts to wilt and add in pine nuts; add light sea salt and cracked pepper to taste.
  • You want to cook spinach until it's just completely wilted, but not until it's mush. Turn off heat, add grated cheese and toss lightly as it melts. Remove from pan to serving dish and top with a little more grated cheese and you're ready to go.

  • In a large skillet cook the pine nuts in the oil over moderate heat, stirring, for 2 minutes, or until they are golden, and transfer them with a slotted spoon to a small dish. In the skillet cook the onion, stirring occasionally, until it is golden, add the spinach, and cook the mixture, covered, stirring once every minute, for 3 minutes, or until the spinach is wilted and tender. Stir in the sour cream, the lemon juice, and salt and pepper to taste, remove the skillet from the heat, and sprinkle the mixture with pine nuts.

2 tablespoons extra virgin olive oil
1/4 cup pine nuts
1/2 small sweet onion, minced
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon chili powder
1 pinch cayenne
1 (10 ounce) package frozen spinach, whole leaves, thawed
salt

Steps:

  • Scoop yogurt into a paper towel lined strainer set over a bowl.
  • Let stand at room temp for 30 minutes.
  • Meanwhile, heat the olive oil in a small skillet. Add the pine nuts and minced onion and cook over high heat, stirring frequently until the onion is softened and lightly browned and the pine nuts are golden, 4 to 5 minutes.
  • Add the cumin, coriander, chile powder and cayenne, cook, stirring for 1 minute. Place in a bowl.
  • Using your hands or a potato ricer, squeeze the spinach until very dry. (I've never used that technique before, I place spinach in a clean dish towel and squeeze dry).
  • Add the spinach and the drained yogurt to the onion mixture, season with salt and stir well.
  • Dip can be refrigerated overnight.

  • Heat 1 tablespoon oil and 1 garlic clove in a 12-inch straight-sided skillet over medium-high heat, until garlic is golden, about 3 minutes. 1 teaspoon olive oil
2 large Granny Smith apples
2 pounds fresh loose spinach or 2 10-ounce packages fresh spinach
6 tablespoons raisins
4 tablespoons pine nuts
1/8 teaspoon salt
Freshly ground black pepper to taste

Steps:

  • Chop whole onion.
  • Heat nonstick pot large enough to hold all the ingredients, until it is medium hot. Add oil, and saute onion.
  • Meanwhile, wash, peel, core and seed apples, and cut into small cubes. Reduce heat and add to onion, and continue cooking.
  • Trim tough stems from spinach, and wash. Add spinach and raisins to pot; cover, and cook for a couple of minutes, until spinach has wilted. Stir occasionally.
  • Stir in pine nuts. Season with salt and pepper, and serve.
