- Whisk the lime juice, sugar, chile paste, and fish sauce in a bowl until the sugar dissolves. Add the peanuts and cilantro and stir until evenly dressed with the sauce.
- When ready to serve, arrange the lettuce leaves on a large platter. Put about 14 cup of pineapple in each leaf and season with salt to taste. Top the pineapple with the nut mixture. Serve, letting your guests wrap (or fold) each lettuce leaf to enclose the filling.

- For the chicken and marinade: Mix the hoisin sauce, soy sauce, grated ginger, Sriracha, rice wine vinegar and grated garlic in a large bowl or resealable plastic bag. Add the chicken strips and marinate, refrigerated, for 2 hours.
- Heat a grill pan over high heat.
- Remove the chicken strips from the marinade and grill until cooked through, about 2 minutes per side. Transfer to a serving platter and sprinkle with the peanuts and cilantro.
- For the lettuce and fillings: Set out the lettuce, bean sprouts, cabbage, carrots, cucumbers and rice noodles on the serving platter.
- To assemble, use the butter lettuce leaves to contain the chicken and fillings. Add some chili and hoisin sauce, then roll them up and eat!

- In a blender, combine the first 10 ingredients. While processing, gradually add oil in a steady stream; stir in cilantro. - Sprinkle chicken with pepper. In a large skillet or wok, stir-fry chicken in 1 tablespoon oil until no longer pink. Remove and set aside., Stir-fry onion and peppers in remaining oil for 5 minutes. Add the water chestnuts, mushrooms and garlic; stir-fry 2-3 minutes longer or until vegetables are crisp-tender. Add stir-fry sauce and soy sauce. THAI LETTUCE WRAPS
This is one of Rachael Ray's recipes that I got off of the food network website. They're really incredible! Talk about flavor! It's from her 30 minute meals show. However, this took me about 35 minutes to make (with the sesame noodles that she made with them on the same show) probably because I can't chop as fast! They go perfectly with her recipe for 'Cold and Spicy Sesame Noodles'(which can be made un-spicy very easily), which I will also be posting.

- Heat a large skillet over high until hot.
- Add the vegetable oil, then the chicken.
- Cook for two minutes stirring constantly.
- Toss in the ginger, garlic, bell pepper, cabbage/carrot mix and green onions.
- Stir-fry another two minutes.
- Add the plum sauce and toos for one minute, then add the basil.
- Drizzle in fish sauce and turn to coat evenly.
- Pour into a bowl.
- Place small heaps of chicken mixture onto a 1 or 2 leaf thick piece of lettuce.
- Sprinkle cucumber over it and fold to eat like a taco.

- Make the spicy mayo by mixing the sriracha, mayo and Asian red chili paste together; refrigerate to chill.
- Empty drained tuna into a large bowl. Break up tuna into large chunks.
- Add 2/3 of the green onions to the tuna; reserve the rest for garnish.
- Add the jalapeno, red bell pepper, red onion, shredded carrot, Thai basil and cilantro to the tuna and gently mix together, being careful not to break the tuna apart too much.

- Spray large, heavy skillet with nonstick cooking spray. In skillet set over medium-high heat, brown ground beef; drain if necessary.
- Add garlic, sherry, soy sauce, sesame oil, chili paste, five-spice powder, white part of green onions, water chestnuts and minced chile. Turn down heat and simmer about 10 minutes.
- Add cornstarch-water mixture to beef mixture and stir until it thickens slightly. Add green part of green onions and cook just until heated through (onion tops will lose their bright green color if cooked too long).
- Separate lettuce leaves, wash and pat dry. Arrange lettuce cups on platter and serve alongside beef mixture.

- To a pot, add all of the "curry rice" ingredients plus 1 cup water over high heat. Once it comes to a boil, cover with a lid and immediately reduce the heat to simmer. Cook for 15-20 minutes or until the water has evaporated. Once it's done, return the lid for 5 minutes and then fluff with a fork.
- While the rice is cooking, add the onions, carrots, just the 1/2 teaspoon salt and only 1/2 cup water to a large saucepan over medium heat. It's important your carrots are diced into 1/4 inch size pieces so they fully cook and are not crunchy in the end by being too large. Stir the veggies well and as soon as it comes to a simmer, cover with a lid and cook for 10 minutes. It's important to cover, as it ensures the carrots soften. Stir a couple of times during the 10 minutes to prevent sticking on the bottom. Add just a tiny bit of water if needed, but mine was perfect. All the water should be gone and your carrots tender at 10 minutes.
- Remove from the heat and add the curry powder, red curry paste, lime juice, remaining 1/4 teaspoon salt, remaining 1/2 cup water, beans, sugar and cilantro. Stir really well and turn the heat back on to low. Cook for just a couple of minutes until heated through and the water soaks up the flavors and cooks down. Taste and add any more salt if needed. It should have a spicy kick and not need any more salt. If you used the full tablespoon of lime juice, it will taste a bit strong, but will mellow out after adding the rice, which I found it to be perfect then.
- Add the cooked rice to the veggies and stir well. Add to large pieces of lettuce and serve immediately!

- Place the ground meat of choice into a bowl. Squeeze juice from 1/2 of a lime on to the ground meat. Mix well and let it marinade for just a couple of minutes until you are ready to cook it.
- Heat up a pan on high until it is very hot. Add two tablespoons of water and then immediately add your marinated turkey/beef or pork and stir. The meat might stick to the pan at first, but then the juice will come out and the meat will loosen from the bottom. Keep stirring until the meat is well done.
- Put the meat in a large mixing bowl that will hold all the ingredients. Add fish sauce, shallot, green onion, the rest of the lime juice, hot peppers or red chili pepper flakes and almost all of toasted rice/sesame seeds into the bowl. Save some toasted rice/sesame seeds to sprinkle on top for garnish. Mix well and taste. It should be a little bit hot. If you want it hotter, add more chile flakes. You should be able to taste tartness from the lime juice and the fish sauce. If you need to add more fish sauce or lime juice, don't be afraid. Taste test to make sure your larb is balanced the way you like it.
- Put the mixed ingredients in a serving bowl, garnish with spearmint or basil and sprinkle the rest of toasted rice on top. Serve with Napa cabbage for scooping the mixture into. Serve with lime wedges and thai peppers.
