CARROT-TAHINI SOUP WITH CORIANDER, TURMERIC AND LEMON

Carrot-Tahini Soup With Coriander, Turmeric and Lemon image

Here's a simple carrot soup with loads of garlic and lemon for punch, with some tahini puréed in at the end. It is tangy, nutty, very creamy and intensely flavored, like liquid hummus with a gentle sweetness.

Time 1h10m

Yield 4 to 6 servings

Number Of Ingredients 16

2 tablespoons extra virgin olive oil, more for pita chips
1 fat leek (or 2 slim ones), white part only, thinly sliced
6 garlic cloves, minced
1 teaspoon kosher salt, more to taste
1/2 teaspoon ground black pepper
1/2 teaspoon ground coriander
1/4 teaspoon turmeric powder
Pinch of cayenne
1 1/2 pounds carrots, peeled and sliced 1/2-inch thick
1 quart vegetable broth
2 sprigs fresh thyme (optional)
2 pita breads, each cut into 16 wedges
1/3 cup tahini
Fresh lemon juice, to taste
Grated lemon zest, for garnish
1/3 cup chopped fresh cilantro or mint

Steps:

  • In a soup pot over medium heat, pour in oil, then add leek and sauté until translucent, about 4 minutes. Add garlic, salt, pepper, coriander, turmeric and cayenne, and cook until garlic is fragrant, about 1 minute.
  • Add carrots and stir to coat them with leek mixture. Cook, stirring, for 3 minutes, then add broth, thyme, if using, and 2 cups water. Bring to a simmer, partly cover and cook until carrots are very tender, about 25 minutes.
  • Meanwhile, heat oven to 400 degrees. Brush pita wedges with a little olive oil and sprinkle with salt. Spread them on a baking sheet and bake until brown and crisp, about 10 to 12 minutes. Let cool.
  • When carrots are tender, turn off heat and let soup cool for 10 minutes. Remove thyme branches and stir in tahini. Using either an immersion blender, standard blender or food processor, purée soup until smooth. Return to pot and reheat if necessary. Taste and add lemon juice and more salt if desired.
  • Serve soup garnished with the lemon zest, cilantro and pita wedges.

SPINACH & CILANTRO SOUP WITH LEMON & TAHINI

Spinach & Cilantro Soup with Lemon & Tahini image

Provided by Adapted very slightly from The New York Times

Time 20m

Number Of Ingredients 13

1/4 cup well-stirred tahini
1/4 cup freshly squeezed lemon juice
1 large garlic clove, finely grated
3/4 teaspoon sea salt
1/2 teaspoon ground cumin
1/2 teaspoon red pepper flakes
2 tablespoons water (plus more if needed, for consistency)
7 cups broth or stock
12 ounces baby spinach (12 packed cups)
4 cups roughly chopped cilantro (from two large bunches)
1/4 cup well-stirred tahini
2 tablespoons freshly squeezed lemon juice
Salt to taste

Steps:

  • Whisk together tahini, lemon juice, garlic, salt, cumin and red-pepper flakes with two tablespoons water in a small bowl. Add more water as needed until you get a drizzly consistency. Set aside.
  • Trim the very ends of the cilantro stems, then roughly chop both bunches. No need to pluck the leaves! Cilantro stems have great flavor. Add stock or broth to a heavy pot and bring to a boil. Stir in spinach, cilantro, tahini and return to a boil. Add a pinch of salt here too, unless your broth was already pretty salty, like mine. Turn off heat and stir in lemon juice.
  • . Use an immersion blender or regular blender to puree soup. Taste and adjust seasoning with salt and more lemon, if desired.
  • . Serve immediately and drizzle with tahini sauce. Cover and refrigerate remaining soup and sauce for up to 1 week, or freeze soup for up to 1 month.

SPINACH-AND-CILANTRO SOUP WITH TAHINI AND LEMON

Spinach-and-Cilantro Soup With Tahini and Lemon image

The simplicity of this soup's technique belies its depth of flavor, which is both vivid and complex. The soup is made bright with lemon and fresh with cilantro, but the secret ingredient is tahini, which is layered into the soup to thicken it, and then drizzled generously on top in the form of a gently spiced sauce. The result is a soup that's both vegetal and creamy, tangy and rich. You'll find it so tasty that you'll forget you're drinking your vegetables.

Time 20m

Yield 2 quarts

Number Of Ingredients 12

1/4 cup well-stirred tahini
1/4 cup freshly squeezed lemon juice
1 large clove garlic, finely grated or pounded to a smooth paste
3/4 teaspoon fine sea salt
1/2 teaspoon ground cumin
1/2 teaspoon red-pepper flakes
7 cups chicken stock, preferably homemade
12 ounces baby spinach (about 12 packed cups)
4 cups roughly chopped cilantro (from 2 large bunches)
1/4 cup well-stirred tahini
2 teaspoons fine sea salt
2 tablespoons freshly squeezed lemon juice, plus more as needed

Steps:

  • First, make the sauce: Combine tahini, lemon juice, garlic, salt, cumin and red-pepper flakes with 2 tablespoons water in a medium bowl. Whisk until smooth, adding more water as needed to achieve a drizzle-able consistency, and set aside.
  • Next, make the soup: Add stock to a Dutch oven or heavy pot, and bring to a boil over high heat. Stir in spinach, cilantro, tahini and salt, and return to a boil. Turn off heat, and stir in lemon juice.
  • Use an immersion blender to purée soup. Taste, and adjust seasoning with more salt and lemon, if desired.

LEMONY SPINACH SOUP WITH FARRO

Lemony Spinach Soup With Farro image

Hearty enough to serve for dinner, but full of a salad's worth of vibrant dark-leafed greens, this soup is both satisfyingly and extremely verdant. Puréeing a little potato into the broth adds creaminess and body, while chile and lemon juice make it bright and spicy. If you don't have farro, you can leave it out, or substitute 2 cups of cooked rice (either brown or white). Farro adds a nice chewy texture and some heft to the bowl, but isn't strictly necessary.

Time 1h10m

Yield 6 servings

Number Of Ingredients 19

4 tablespoons unsalted butter or olive oil
2 leeks, white and light green parts, chopped
2 celery stalks, diced
3 garlic cloves, finely chopped
3 rosemary or thyme branches
2 bay leaves
1 pound potatoes, peeled and cut into 1-inch pieces (2 to 3 medium potatoes)
1 quart chicken or vegetable stock
1 1/2 teaspoons fine sea salt, plus more as needed
1/2 teaspoon black pepper
1 cup farro
1 pound baby spinach (about 20 cups)
1 cup cilantro leaves and tender stems (or use dill)
1 cup parsley leaves and tender stems
Juice of 1/2 lemon, plus more for serving
Extra-virgin olive oil
Flaky sea salt
Aleppo, Urfa, Turkish or other red-pepper flakes
Grated Parmesan or pecorino (optional)

Steps:

  • Melt the butter or heat the olive oil in the bottom of a large, heavy-bottomed pot over medium-high heat. Stir in the leeks and celery. Cook, stirring occasionally, until vegetables are tender, about 10 minutes. Stir in the garlic, rosemary and bay leaves; cook 1 minute more. Stir in the potatoes, stock, 2 cups water, 1 1/2 teaspoon salt and 1/2 teaspoon pepper. Bring to a boil; reduce heat to medium and simmer, partly covered, until vegetables are tender, 30 to 40 minutes.
  • Meanwhile, bring a medium pot of salted water to a boil. Add farro and cook according to the timing on the package until just tender, about 20 to 30 minutes. Drain.
  • Discard rosemary branches and bay leaves from the soup pot. Add spinach, cilantro and parsley, and simmer uncovered until very soft, 5 to 8 minutes. Using an immersion blender, purée soup until smooth. (Alternatively, you can purée the soup in batches in a blender or food processor.) If the soup is too thick, add a little water. If it's too thin, let it simmer uncovered for another few minutes to thicken. Stir in lemon juice and more salt to taste. Stir in farro.
  • To serve, ladle the soup into bowls and top with a drizzle of olive oil, a few drops of lemon juice, flaky salt, red-pepper flakes and a little grated cheese, if desired.
