BUTTERNUT SQUASH AND BEEF LASAGNA



Butternut Squash and Beef Lasagna image

This classic dish won't leave you with a carb overload. The butternut squash offers a unique substitution to your typical lasagna noodles!

2 butternut squash - peeled, seeded, and thinly sliced
2 tablespoons olive oil, or to taste
1 tablespoon Italian seasoning, divided, or to taste
salt and ground black pepper to taste
1 pound ground beef
2 cloves garlic, minced
1 (28 ounce) jar pasta sauce
2 tablespoons brown sugar
1 tablespoon chopped fresh basil
2 ½ teaspoons salt, divided
1 (16 ounce) container ricotta cheese
2 eggs, beaten
½ cup grated Parmesan cheese
2 tablespoons dried parsley
1 (8 ounce) ball fresh mozzarella cheese, shredded
2 tablespoons grated Parmesan cheese, or to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line 2 baking sheets with parchment paper.
  • Arrange butternut squash slices in a single layer on each baking sheet. Drizzle 1 tablespoon of olive oil over each layer; season each with 1 teaspoon Italian seasoning, salt, and pepper.
  • Bake in the preheated oven until squash is soft but still firm to the bite, about 15 minutes.
  • Heat a large skillet over medium heat; cook and stir beef and garlic until browned, about 5 minutes. Drain grease. Mix in remaining 1 teaspoon Italian seasoning, pasta sauce, brown sugar, basil, and 1 1/2 teaspoon salt. Simmer, stirring occasionally, until flavors combine, about 10 minutes.
  • Mix remaining 1 teaspoon salt, ricotta cheese, eggs, 1/2 cup Parmesan cheese, and parsley together in a bowl.
  • Layer 1/3 of the squash slices in the bottom of a 9x13-inch baking dish. Cover squash with 1/2 of the ricotta mixture, 1/2 of the mozzarella cheese and 1/3 of the beef mixture. Repeat layers, ending with remaining squash slices and sauce. Sprinkle 2 tablespoons Parmesan cheese on top.
  • Bake in the preheated oven until cheeses are melted and sauce is bubbly, about 30 minutes. Let stand for 10 minutes before serving.

4 yellow squashes
2 teaspoons kosher salt, divided
2 teaspoons pepper, divided
1 teaspoon garlic powder
1 teaspoon onion powder
2 teaspoons dried oregano, divided
1 teaspoon olive oil
½ white onion, diced
4 cloves garlic, minced
1 lb ground chicken
1 teaspoon dried thyme
28 oz crushed tomato, 1 can
1 cup ricotta cheese
1 cup grated parmesan cheese
2 large eggs
nonstick cooking spray
16 oz fresh mozzarella cheese, sliced

Steps:

  • Preheat the oven to 425˚F (220˚C).
  • Use a vegetable peeler to peel the yellow squash into ribbons. Add the squash to a large bowl.
  • Add 1 teaspoon salt, 1 teaspoon pepper, the garlic powder, onion powder, and 1 teaspoon oregano, and toss well until the squash is coated. Set aside.
  • Heat the olive oil in a large pan over medium-high heat. Add the onion and garlic and cook for 5 minutes, until fragrant.
  • Add the ground chicken, the remaining teaspoon salt, remaining teaspoon pepper, remaining teaspoon oregano, and the thyme, and cook until chicken is lightly golden brown.
  • Add the crushed tomatoes, stirring to break up, and cook for 15 minutes, or until the sauce has reduced. Remove from the heat and set aside.
  • In a medium bowl, combine the ricotta, Parmesan, and eggs and whisk until smooth.
  • Grease a 9x13-inch (22x33 cm) casserole dish with cooking spray.
  • Spread about ¼ of the ground chicken and tomato mixture in the bottom of the dish. Top with about ¼ of the squash noodles and ⅓ of the cheese mixture. Repeat with the remaining ingredients, finishing with a layer of noodles
  • Top with the fresh mozzarella cheese.
  • Bake for 30 minutes, or until the cheese is browned and melted.
  • Serve warm.

I love this soup because it is thick & creamy without using any cream. I had a huge Butternut squash, and some leeks left from the garden, and this is what developed.

1 large squash (8 cups)
1 cup chopped onion
3 leeks, chopped (white and light green parts only)
1 clove garlic
2 teaspoons minced fresh ginger
4 cups chicken stock
2 tablespoons butter or 2 tablespoons margarine
1 cup white wine (optional)
salt and pepper, to taste

Steps:

  • Cut squash into half lengthwise, clean out seeds and place skin up on a baking dish, bake at 400 for about 45 minute allow to cool, peel off skin and cut into large chunks.
  • In a large pot, saute the onions, ginger, leeks, and garlic in the butter until soft.
  • Add the chicken stock, and wine (if using,or increase chicken stock) and simmer about 20 minute.
  • Transfer to a large bowl or measuring cup.
  • Fill blender or food processer with 1/2 stock and 1/2 squash.
  • (This took me 3 batches) Puree.
  • Return to pot and add salt, pepper to taste.
  • Simmer about 20 minute Freezes well.

2 large zucchini (about 1 pound), shredded
3/4 cup chopped onion
2 garlic cloves, minced
1 can (14-1/2 ounces) stewed tomatoes
2 cups water
1 can (12 ounces) tomato paste
1 tablespoon minced fresh parsley
1-1/2 teaspoons salt
1 teaspoon sugar
1/2 teaspoon dried oregano
1/2 teaspoon pepper
9 lasagna noodles, cooked, rinsed and drained
1 carton (15 ounces) ricotta cheese
2 cups shredded part-skim mozzarella cheese
1 cup grated Parmesan cheese

Steps:

  • In a skillet, cook the beef, zucchini and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. , Place tomatoes in a food processor or blender; cover and process until smooth. Stir into beef mixture. Add the water, tomato paste, parsley and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes, stirring occasionally. , Spread 1 cup meat sauce in a greased 13x9-in. baking dish. Arrange three noodles over sauce. Spread with a third of the meat sauce; top with half of the ricotta cheese. Sprinkle with a third of the mozzarella and Parmesan cheeses. Repeat. Top with remaining noodles, meat sauce and cheeses. , Cover and bake at 350° for 45 minutes. Uncover; bake 15 minutes longer or until bubbly. Let stand for 15 minutes before cutting.

1 butternut squash, peeled and thinly sliced
ground nutmeg
2 tablespoons butter
1 leek, thinly sliced
2 ½ cups baby spinach leaves
½ cup whole milk
⅓ cup grated Parmesan cheese
2 tablespoons rice flour
1 tablespoon balsamic vinegar
1 teaspoon Worcestershire sauce
1 teaspoon onion powder
ground black pepper to taste
2 cups ricotta cheese
3 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk
1 teaspoon salt
⅛ teaspoon freshly grated nutmeg

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line 2 baking sheets with parchment paper.
  • Arrange butternut squash slices on the baking sheets. Sprinkle 1 pinch nutmeg on top.
  • Bake in the preheated oven until pliable but not mushy, about 5 minutes per side.
  • Melt 2 tablespoons butter in a large saucepan over medium heat. Add leek and spinach; cook and stir until wilted, about 5 minutes.
  • Stir 1/2 cup milk, Parmesan cheese, rice flour, balsamic vinegar, Worcestershire sauce, onion powder, and black pepper into the saucepan until combined and slightly thickened, about 5 minutes.
  • Arrange half of the butternut squash in the bottom of an 8-1/2x11-inch casserole dish. Layer leek mixture and ricotta cheese on top. Arrange remaining butternut squash on top.
  • Bake lasagna in the preheated oven until golden, about 40 minutes.
  • Melt 3 tablespoons butter in a large saucepan over medium heat. Stir in flour until a golden paste forms, 5 to 10 minutes. Increase heat to medium-high; slowly whisk in 2 cups milk until thickened and bubbling. Reduce heat to medium-low and simmer sauce until smooth, 10 to 20 minutes.
  • Season sauce with salt and 1/8 teaspoon nutmeg. Pour over lasagna.

10 ounces lasagna noodles (whole-wheat is best)
2 tablespoons unsalted butter
4 large leeks (about 6 cups) or 5 medium leeks, pale green and white parts only, thinly sliced and washed thoroughly (about 6 cups)
1/2 cup all-purpose flour
4 cups low-fat milk (or whole milk)
1 teaspoon dried thyme
1 teaspoon salt
3/4 teaspoon freshly grated nutmeg
1/2 teaspoon fresh ground pepper
2 (2 lb) butternut squash, peeled, halved, seeded and grated (using the large-hole side of a box grater)
6 ounces parmigiano-reggiano cheese, grated (using the large-hole side of a box grater)
4 ounces lowfat mozzarella cheese, shredded (optional)
1/4 cup toasted pine nuts

Steps:

  • Preheat oven to 350°F.
  • Coat a 9-by-13-inch baking dish with cooking spray.
  • Bring a large pot of water to a boil. Cook noodles until not quite al dente, about 2 minutes less than the package directions. Drain; return the noodles to the pot and cover with cool water.
  • Melt butter in a Dutch oven or large skillet over medium heat. Add leeks; cook, stirring often, until softened, about 6 minutes. Sprinkle flour over the leeks; stir well. Cook, stirring constantly, for 2 minutes. Whisk in milk in a slow stream and cook, whisking constantly, until thick and bubbling, 8 to 10 minutes. Whisk in thyme, salt, nutmeg and pepper.
